Ragi Roti | Kezhvaragu Adai | Finger millet Roti

Kezhvaragu Adai, a healthy tiffin item made from the finger millet flour and some indian spices which can be served as breakfast or as evening snacks.  I have a vague memory of my mom making this  ragi roti as evening snacks when i was in school.  But in those days, I was not fond of anything that's healthy, so obviously I made a fuss to eat one or two bites of this Adai! 

Years rolled by! Get interested in knowing about the nutritious value of various millets and then a health conscious mind always screams about the benefits of including  finger millets in regular diet. You know once the mind is convinced then automatically the taste buds changes and started to like the foods that were hated like anything before.

Guess what, now  the finger millet is an integral part of my cooking and I absolutely love it in any form like kali, porridge( koozh), puttu, dosai, idli and so on. If interested in knowing all the varieties, check out my collection here

Ragi Roti/Adai

ragi roti, ragi adai, finger millet roti, finger millet adai, kezhvaragu adai, Kezhvaragu Adai, a healthy tiffin item made from the finger millet flour and some indian spices which can be served as breakfast or as evening snacks.
Ingredients
Ragi Flour/Finger millet flour - 1 cup
Onion - 1 (medium size)
Grated Carrot - 1/2(optional)
Green chili -1 
Curry leaves - few
Coriander leaves - few
Salt to taste

Procedure
Chop onion & chili into small pieces. Finely chop coriander too and keep every thing  ready. Take the flour in the bowl.
Add the chopped onions,chili ,curry leaves & coriander leaves into flour along with salt.Mix it well. Then add enough water and make a dough(just like chapathi dough). It should not be too dry or wet.
Take small portion of dough(depends on the size you want) and make a round ball. Grease the plastic sheet (you can use banana leave too) with oil, place the dough & flatten it with your fingers. For quick video, check out here 
In the mean time , heat the tava . Grease your hand with oil & invert the flatten roti into hand and then place it on greased tava. 
Drizzle oil & cook on both sides in medium flame. Once done, remove it on place & serve immediately.
Tasty & healthy Ragi Adai/Roti is ready. Serve it with you favorite chutney.

Notes:

  • If you wish, you can saute the onions and add it in.
  • If you're using banana leaves, you can invert the flatten roti in the tava directly. Plastic cover sticks to the tava,so invert it in hand and then i placed it on tava.
  • You can add grated carrot into this.
  • It tastes best when it's hot or warm.
