Wheat Flour Appam | Appam Recipe | Karthigai Deepam Recipe

Yesterday only, i noticed that it has been more than 2 weeks since it posted anything on my blog. As karthigai deepam festival is tomorrow, i thought of sharing the recipe used to make for this festival.In our home, we never make appam for karthigai deepam, we only make kozhukattai and offer to god on that day. But recently , i came to know that most of the people make appam for karthigai deepam.

 This wheat flour appam is very easy to make and it tastes wonderfully with banana & cardamom flavor. This appam  can be made in paniyaram pan too. But the texture and taste is totally different from fried one. I made  this in both ways and like the fried ones a lot.Give it a try for this Karthigai Deepam. 


Ingredients

Wheat Flour - 1 cup
Rice Flour - 2 tbsp
Banana - 2 nos
Jaggery - 1/2 cup tightly packed
Cardamom - 1 (crushed)
Oil/ ghee for frying


Procedure.

Crush the jaggery & heat  it in the pan along with  1/4 cup of water and allow to melt. Once it melts completely, allow to cool.

Peel the banana and mash them well with masher/fork.


In the mashed banana , add the remaining ingredients(Wheat flour,rice flour & cardamom) except oil/ghee and the jaggery syrup. 

Mix it well, if needed add more water and make it as pouring consistency.

Now heat the oil for frying and pour the laddle full of batter in the oil and cook it in low flame on both sides until it becomes brown color


To cook them in paniyaram pan, heat the pan with ghee on each hole, pour the batter in each hole and cook them on both sides.


That's Tasty Wheat Flour Appam is ready.

Notes:

  • Filter the jaggery syrup before adding to remove impurities.
  • Cook it on low flame , otherwise it turns darker on outside easily with raw inside.
  • I used oil for frying ,but you can use mixture of oil and ghee to enhance flavor.
  • I  used too small banana , if you're using big one, one is enough.

Besan Ladoo | Gram flour ladoo | Easy diwali Sweet

Still doesnt plan anything for diwlai? Here is the simple and tasty ladoo recipe. You can make them in 20 minutes. First time, i tasted this ladoo when one of my friend brought this sweet during their visit to our home. It tastes wonderfully with ghee flavor. 

I want to try these for long time, so made this for diwali and love it totally. This ladoo stays well for more than a week and it's best sweet to give as diwali gift. So why wasting time, buy the ingredients and make this ladoo . Enjoy with your families and friends. Happy Deepavali to everyone.

Besan Ladoo

Preparation Time : 10 mins | Cooking Time : 20 minsMakes : 13 ladoos

Ingredients
Besan/ Chick pea flour/Gram flour - 1 cup
Rava/Semolina - 2 tbsp
Sugar - 1/2 cup
Ghee - 1/4 cup
Cardamom-2 nos
Dry Nuts - 2 tbsp(you can use cashew, pistachio or almond, i used almond)


Procedure
Heat the non-stick pan(preferably), add the ghee and bring into smoking hot.Add gram flour and semolina into the ghee.Roast them well, till it turns into slight brown color and nice aroma comes.It takes 12 mins for me in medium flame.you can see the color change in the below picAllow them to cool, in the mean time, grind the sugar & cardamon into fine powder.Once the besan mixture comes to hand bearable temperature, add the sugar powder to them.Mix it with hand and roll them into balls.If you wish to garnish with nuts, crush the nuts into pieces, apply ghee slightly on the ladoo and press it on the crushed nuts.
It made two batches, a set of garnished and ungarnished  ones.Tasty,easy ladoo is ready.
Notes
  • After switch off the flame, dont leave the mixture in the pan as it is. Mix it continuously with laddle to avoid burning at the bottom.
  • If you wish, you can roast the nuts in ghee and add into besan mixture.
  • Semolina gives crunchiness to the ladoo.
Now it's ready to gift

Karasev | Pepper Karasev | Diwali Recipe

KaraSev is one of the south indian savoury delicacy. There are many variation in making this like garlic sev, spicy sev etc. Here i'm sharing the recipe for basic karasev recipe and it tastes exactly like the lala kadai(sweet shops) karasev available in Tirunelveli area.

To make karasev easily , you can use your murukku press and press it like oma podi and once it fried you can break them into pieces. It gives uniform shapes. But i want to recreate the ones(irregular shapes) available in shops,so i used grater,you can also use jalli karandi(spoon with holes) to make this, it's bit tedious process, but it's all worth it at the end.

Karasev/Pepper Karasev

Preparation Time : 10 mins | Cooking Time : 20 minsMakes : 2 Cups

Ingredients
Chickpea flour/ Besan - 1 cup
Rice flour - 1 cup
Cumin seed - 1 tsp
Butter - 2 tbsp
Crushed Pepper corns - 2 tsp
Salt - to taste
Oil for frying

Procedure
In a bowl, add the chickpea flour , rice flour, cumin seed , butter, pepper corns & salt. Mix it well and then add enough water to make pilable dough. Then heat the oil in a kadai.
When the oil is heated (if you drop a piece of dough in oil, it should come up immediately), hold the grater above the oil and take a handful of dough and rub it on the grater, it will form strings and it automatically drop into oil. Rub the dough on grater till it's done.Allow the karasev to cook, once cooked ,the shh sound stops, you can now remove the karasev and place it on tissue paper.
Do the same for remaining dough, once it cooled ,stored it in air tight container.
Tasty Crunchy Karasev is ready.
Notes:
  • You can use ghee instead of butter.
  • Be careful, while rub the dough on grater. you can feel the oil heat,so do in small batches at a time.
  • If you want extra spice, add 1/2 tsp of chili powder too.
  • It stays well for more than a week.

Dates Nuts Ladoo | Dry Nuts Ladoo| Dates Ladoo| Sugar Free Diwali Sweet

Dates Nuts Balls/Ladoos, a healthy and protein rich energy ball made from dates and nuts without any sugar. It is one of the easiest ladoo/energy balls that you can make in minutes. It's a perfect snack to pack for your kids lunch box or have it as after school snacks. We like to pack this ladoo for long trip or day hike or to a park visit in order to avoid the unhealthy munching on packed fried foods. It's truly satisfying your sweet tooth and keep your energized, what else you need, right??

Though i'm not a big fan of dates as it is, i like them as sugar substitute in my smoothies, oats and this kind of ladoos/energy balls. You never miss the sugar and at the same time it's healthy. I have very strong sweet tooth and these are the few tricks that i do to keep satisfy my sweet cravings. 
Here in today's recipe, i have used cashews, almonds, peanuts & walnuts. But you can use whatever nuts you have in hands and make them. I have seen that this ladoos are coated with poppy seeds or with dried coconut on the top in sweet shops.So if you wish, you can do that !!

Also Instead of making them as ladoo, you can roll into log and refrigerate the whole for a while and then slice them into circles like how you get it in some sweet stalls. Ok, now let's check out how to make this healthy and tasty dates nuts ladoo. If you haven't tried it before, trust me and try it, even the pickiest eater in your home will approve !!!

Sugar Free Dates Nuts Ladoo

Preparation Time : 10 mins | Cooking Time : 5 minsMakes : 15

It is one of the easiest ladoo/energy balls that you can make in mins.
Ingredients
Dates - 1 & 1/2 cup
Dry Nuts - 3/4 cup (i have cashews, almonds, peanuts & walnuts ) 
Flax Seed - 2 tbsp
Ghee - 1/2 tsp (Optional)
Cardamom powder - 1/2 tsp(Optional)



Procedure
Heat the pan with ghee, add all the nuts and roast till it's crunchy.
When the nuts are almost roasted, add the flax seed and roast till the flax seeds started to pop. Remove from the flame and let it cool a bit. In the mean time, chop the dates finely.
Add the nuts into mixie/blender jar and grind into coarse powder and then add the dates.
Grind till it all comes together.Give a mix in between. Add the dates nuts mixture into a large bowl/pan and add the cardamom powder.
Mix it all well and start making ladoos/balls. 
That's it, Tasty & healthy Dates Nuts Ladoo/Energy Balls are ready. Store it in air tight container. For more sweets and snacks, check out here & here 
Notes:
  • You can roast the nuts without ghee also, just for flavor, i have used 1/2 tsp of ghee & cardamom powder.
  • Instead of ghee, you can also use butter.
  • If your dates is dry & want them soft before grinding, then saute it in pan for a while until it's warm.
  • It stay well for days at room temperature.
  • Without flax seed also, you can make this energy balls.
