Mix Veg Paratha | Vegetable Paratha | Stuffed Paratha

This month , again i'm doing blogging marathon after the two months break. This time, i chose Stuffed Dishes , so you can see three stuffed dishes in the coming days. The first dish is Mix veg paratha. 

I like aloo paratha, but i'm not a big fan of that. But this mix veg paratha, i love to the core. It tastes wonderful with all those veggies. First time, i tasted this paratha in "Mamaji Restaurant" in our area, instantly i love it. I want to recreate that in home, so based on the taste, i try this and it tastes almost similar to the one in the restaurant.

Ingredients
For Dough
Wheat Flour - 2 cup
Oil - 1 tbsp
Salt 
Water
For Stuffing
Potato - 2 large(Cooked)
Carrot - 1 (medium)
Beetroot - 1(Small)
Capsicum - 1(Small)
Cabbage - a small piece(yields 1/4 cup grated)
Onion - 1 (Small)
Beans - 2 nos
Ginger Garlic Paste - 1 tsp
Turmeric - a pinch
Chili powder - 1 tsp or to taste
Coriander powder - 1 tsp
Garam Masala  - 1/2 tsp
Dry Mango Powder - 1/2 tsp
Salt
Coriander leaves - few
Oil - 1 tsp

Procedure
Grate carrot,beetroot,cabbage  & capsicum with grater finely.Chop onions and beans into fine pieces.Heat the pan with oil and add the onions saute it along with  ginger garlic paste well.Add all the veggies, saute it well. Then add spices (turmeric, chili,coriander,garam masala & Dry Mango powder) & salt into veggies and mix it well.
Let the veggies cook(if needed sprinkle little water to cook the veggies). In the mean time, mash the potatoes and keep it ready .Once the veggies are cooked, add the mashed potato and give a good mix until everything blends well.Finally add the finely chopped coriander leaves and switch off the flame. Stuffing for our paratha is ready.For the dough, take the flour in the bowl along with salt and oil. Mix it well and then add enough water to make pliable dough and keep it aside for 20 mins.Make medium sized balls(i make 9) out of stuffing once it cooled. Similarly make medium size ball out of dough.Both stuffing and dough size should be equal.Take the dough , roll into small disc.Place the stuffing and seal the edges as shown below.Keep the sealed edge as downside and roll into required size with rolling pin in the dusted flour.Heat the tava and greased it with butter and place the rolled paratha . Cook it on both side well on medium flame.Tasty Mix Vegetable Paratha is ready . Serve it with raita.
Notes
  • 2 cups of flour makes 8 paratha. So I left with stuffing for one more paratha.
  • Grate the veggies finely , it helps to roll the paratha easily.
