Veg Pulao With Onion Raita

I thought of making Dindugal Dum Briyani with Onion Raitha for today combo. But unfortunately, there was maintenance power shutdown in our area today, so i'm posting this simple pulao with onion raitha.
This pulao is very simple to make and the ghee gives great flavor to this rice.Ok. let see the procedure

Veg Pulao

Preparation Time : 30 mins | Cooking Time : 20 minsServes :

Ingredients
Basmathi Rice - 1 cup
Carrot - 1 
Beans - 4
Cauliflower florets - 1/2 cup
Capsicum - 1 small
Potato - 1
Onion - 1 
Ginger - 1 tsp (finely chopped)
Green Chili - 1 (Slit)
Bay leaves - 1
Cinnamon - a small piece
Cloves - 2 nos
Cardamom - 1 no 
Ghee - 2 tbsp
To grind
Cinnamon - a small piece
Cloves - 2 nos
Cardamom - 1
Pepper - 1 tbsp
Procedure
First soak the rice for 1/2 hr  . Cut all the veggies. Bring a cup of water to boil add carrot & beans , once it half cooked , add the cauliflower and cook it. It shouldn't be mushy, cooked yet crunchy.In an another pot, bring 2 cup of water to boil along with spices(bay leaves, cinnamon,cardamom,cloves) & salt. Add the rice and cook the rice until it's soft and fluffy . Transfer the rice in the plate and drizzle some oil to avoid stickiness and ground the spices listed under "To grind ".In a wide pan, heat the ghee , add the onions, green chili &ginger and saute it until onions become translucent and add capsicum ,give a quick stir and then add  all the cooked veggies and add the grounded spices & saltMix it well, finally add the rice  and mix it well. Drizzle some ghee while serving.

Onion Raita

Preparation Time : 10 mins | Cooking Time : 0 minsServes :

For Raita
Onion - 1 
Curd - 1/2 cup
Green chili - 1 small
Salt

Procedure
Beat  the curd well and  cut the onions & green chili into small pieces. Mix it with curd and add enough salt.
That's it, simple raita is ready.

  1. I had kept pualo raita or dal chawal as a back recipes but did not need to use these combos. Pulao & raita is my favorite combo. Looks good. Hope the power is back by now
