White Sauce Vegetable Pasta | Easy Pasta Recipe

White Sauce Vegetable Pasta, an easy to make delicious pasta with a lot of vegetables. White sauce is also known as  bechamel sauce made from butter, flour and milk. It's one of the five mother sauces in western cuisines and the word bechamel is from French which means thick white sauce. 

In our home, both me and ST like coriander pesto pasta and tomato sauce pasta, white sauce pasta is not our favourite but occasionally it's OK. But now, since the kid likes the white sauce pasta and having a little bit without any fuss compared to other foods. So change of scenery in my kitchen, that's why now i'm making white sauce pasta at home ! 

While travelling from India to here, my LO ate only the white sauce pasta that the airline provided out of all the food that i had packed. Ever since, i have been making this white sauce pasta  for him and after eating all the leftovers, i have to admit that indeed it's delicious and i too started to like it.

In today's recipe, i haven't prepared the sauce ahead. Just sprinkled the flour on the cooked veggies and sauteed. By this method, the chances of forming lumps in the sauce is so minimal, so the sauce would be lump free and absolutely smooth. Additionally, the recipe just needs one vessel to cook and clean later :-) 

However this method is not the traditional way of making white sauce pasta but i can assure you that it's super easy to make and finger licking delicious.

Now let's check out on how to make this creamy white sauce pasta. 

White Sauce Vegetable Pasta

White sauce pasta, White sauce vegetable pasts, Bechamel sauce pasta White Sauce Vegetable Pasta, an easy to make delicious pasta with a lot of vegetables.
Ingredients
Fusilli Pasta - 1 cup
Onion -1/2
Carrot - 1 
Capsicum - 1 (small)
Mushroom - 1/2 cup(chopped)
Frozen Peas - 1/4 cup
Milk - 2 cups
Olive oil / Butter - 3 tbsp
All purpose flour - 3 tbsp
Cheddar cheese - 1/4 cup
Garlic - 2 cloves
Salt - to taste
Pepper - to taste
Procedure
First cook the pasta as per the package instructions and keep it aside. Cut all the vegetables and keep it ready. Heat a large pan with olive oil.

Next add the crushed garlic. Give a quick stir and when it's aromatic, add the vegetables along with salt(enough for the vegetables) and pepper powder. 
Cook the veggies till they are soft and then add the flour, give a good mix with the vegetables and roast the flour for a min or two in a low flame.
Next add the milk & salt and mix it well. Now increase the heat & stir it continuously, the sauce would be thicken in a couple of mins.
The sauce should coat the back of the ladle well and if you should be able to draw a line with your fingers. That's the perfect consistency of the sauce. Now add the cheese and the cooked pasta.
Give a good mix and let it in the flame for a couple of mins. 
That's it, Delicious veggie loaded white sauce pasta is ready.

Notes
  • Serve hot for gooey and creamy pasta. Once it cooled, the sauce thickens. 
  • You can use any varieties of pasta for this recipe.
  • Red chili flakes can be added for more spiciness.

Baked Onion Samosa using Phyllo Sheets | Onion Samosa | Vengaya Samsa

Baked Onion Samosa, a savory pastry made from phyllo sheets with spicy onion fillings. I guess, samosa needs no introduction, it's a deep fried savory pastry from India. Samosas which are quite famous in the west has potato filling inside. 

But in India, you can find variety of stuffing inside the samosa and the famous stuffing next to potato is onions. In Tamil Nadu, you can find this mostly in road side vendors, especially when you shop in T.Nagar, Chennai, you can't miss this crispy samosa from the road side vendors.  
I have the fond memories of having them in T nagar,Chennai. When i first moved to chennai for job, i was really confused by the name "Samosa". In my home town, we call this onion samosa as "Onion Samsa(சம்சா)" and the sweet one (made with roasted chanal da powder) as "Samosa". So it really take time to get used to the local slang :-). 

Now coming to the recipe, here i have used phyllo pastry to make this samosa. I have already tried few savory items like potato samosa and avocado roll with the phyllo sheets. So i'm quite confident about the outcome, as expected it turned out super crispy and delicious.
Instead of phyllo sheets, you can use the samosa sheets that are available in the frozen section of the grocery store, but i'm not sure how good it will be when it's baked. When comes to phyllo sheets, it bakes so well with both sweet and savory filling. 

So whenever i buy phyllo sheets to make baklava, i always reserve few sheets to try this onion samosa. Now let's check out the recipe.

Baked Onion Samosa using Phyllo Sheet

Bake Onion Samosa, Baked Samosa, Phyllo Sheet Samosa, Indian Samosa Baked Onion Samosa, a savory pastry made from phyllo sheets with spicy onion fillings.
Ingredients
Phyllo Sheets - 4
Onion -1(big)
Carrot-1
Curry leaves - few
Fennel seed - 1/4 tsp
Oil - 1 tsp + 1 tbsp(for brushing)
Red chili powder - 1/2 tsp
Turmeric powder - 1/4 tsp 
Garam masala powder - 1/2 tsp
Coriander leaves - few
Salt - to taste 

Procedure
First cut the onions into thin slices and grate the carrot. Heat the oil, temper the fennel seed.
Next add the onions and curry leaves with pinch of salt.
Saute till the onions are translucent, add the spices(turmeric,red chili and garam masala powder) and salt. Give it a good mix.
Add the grated carrot, saute till the carrot are soft. Finally add the chopped coriander leaves. Switch off the flame. Stuffing is ready.
Thaw the phyllo sheets as per instructions and keep it ready. Take a sheet, cut into half, take one half and fold them vertically.
Apply oil on the sheet, then place the onion mixture and start folding in triangle.
Continue folding till the end. Seal the edges with water. 
Place it on baking tray and brush it with oil on top.Do the same for the remaining sheets and bake them in preheated oven at 370F for first 10 mins and then reduce the temperature to 350 F and bake it for 10-15 mins.
Tada, Yummy Onion Samosas are ready.

Notes:
  • The mild sweetness from the carrot balance out the spices and gives great taste to this samosa.
  • Keep on eye on the samosa after 20 mins to avoid burning. 
  • For more flavor, you can use oil and ghee mixture to brush the sheets.

Carrot Cheese Paratha | Carrot Paratha | Paratha Recipe

Carrot Cheese Paratha, a delicious stuffed paratha that can be prepared in no time.  I have been thought of making this paratha for every long time, but ST is not fond of any meal with slight sweet in it. Also I was thinking that the paratha might have slight sweet in it,because of carrot. Finally keep the doubts aside and tried it last week, Yes it has mild sweet taste but not at all overpowering and with other spices and cheese, it tastes so good. Even ST had it without any complaints :- ). Ok, now let's check out how to make this super easy carrot paratha. 

Carrot Cheese Paratha

Preparation Time : 10 mins | Cooking Time : 20 minsServes :

Ingredients
For dough
Wheat flour - 1 cup
Oil - 1 tsp
Salt - to taste
Water - as needed
For Stuffing
Carrot - 2 
Cheese - 1/2 cup
Red chili powder - 1/4 tsp
Garam masala powder - 1/4 tsp
Salt - to taste


Procedure
Take the flour in a bowl, add salt & oil and mix it with flour well. Then add water to the flour.Mix it with your hand and gather it together as a single mass , now knead the dough well until the surface looks smooth.Cover it with lid and set aside for minimum 15 mins.Next grate the carrot finely and add into the bowl along with the other ingredients of the stuffing. Mix it well.Pinch medium lemon sized balls from the dough and roll it as smooth. Take the rolling pin and roll into small disc, place the stuffing in the center.Pleat the sides towards the center and seal it. Keep the sealed edge downside and roll into thick paratha(if needed add more flour for dusting).Heat the tava, grease it will oil and place the rolled paratha on it.Cook it on both side until the brown spots appears on both sides.Tada, Tasty Carrot Paratha is ready.

Notes:

  • You can add more or less cheese as per liking.
  • Here i have used Mozzarella cheese,but you can use any cheese you like.
  • Grate the carrot finely, it helps to roll the paratha evenly.

Roundup for One Vegetable Different Ways

This is the first time that i'm doing roundup for the BM theme. As usual, this month BM also has some interesting themes and one among them is "One Vegetable Different Ways". The concept is you have to choose one vegetable as main ingredient and cook it in three ways. Really i liked the concept and had chosen "Broccoli" as main ingredients and cooked three dishes.
