Rava Badam Ladoo | Diwali Recipe

Rava Badam Ladoo, a delicious and rich sweet made from the semolina, almond flour and sugar as the main ingredients. If you're looking for a new variety of ladoo to make at home for this Diwali, then try this simple yet amazing Rava Badam Ladoo.

Couple of months back, i had some almond flour at my pantry which was bought a while ago so i wanted to finish it off before it goes rancid. And i had this idea of making ladoo with it so i gave it a try and it turned out so good with little overpowering of sweet. 

So next time, i made this ladoo again for Krishna Jeyanthi with reduced sugar and it was a perfect melt in your mouth ladoo.  

Sugar 

Normally for the regular rava ladoo, i add 1/3 cup of sugar for 1 cup of rava which is perfect for our taste. Here, even though i added 1/2 cup of almond flour in addition to the rava, i have added only 1/3 cup( heaped ) because generally almond flour doesn't need much sugar.

But if you have a really sweet tooth or your kids prefer more sweetness in their sweets then you can add up to 1/2 cup of sugar for the given quantity.

Ingredients
Rava - 1/2 cup
Almond flour - 1/2 cup
Sugar - 1/3 cup(heaped)
Cardamom - 2 
Ghee - 2 to 3 tbsp
Cashew - 8 to10

Procedure
Heat a pan with a tsp of ghee and then add the rava and roast till it's aromatic.

Transfer the rava into the mixie/blender jar and let it cool a bit. In the meantime, add the almond flour in the same pan and roast till it's aromatic.
Transfer the roasted almond flour into a big bowl and then grind the rava into fine powder and add into almond flour.
Next add the sugar into the mixie/blender jar along with the cardamom seeds and grind into fine powder and add into the rava-almond flour mixture.
Mix it all well together and then heat the remaining ghee in a pan and add the cashews and roast till it's golden brown. 
Then add the roasted cashews along with the ghee into the rava mixture and mix it all together well.
Take a small portion of the rava mixture and start making the ladoos.
Delicious and flavorful rava ladoo is ready.

Notes:
  • Cashews are optional and you can totally skip it.

Mango Ladoo | Mango Coconut Ladoo

Mango Coconut Ladoo, a delicious ladoo made with desiccated coconut and mango pulp. It's one of the easiest ladoo recipes to make within 10 mins. 

If you have followed me for a while, you might already know about my love for mangoes . It's really hard for me to reserve some mangoes to try any recipes because i simply love eating them as it is ! 

But i have been wanting to make this ladoo for a while, so this summer, i bought some extra mangoes on every grocery shopping with a hope of making these ladoos before mangoes are gone for this season. As a result, so far i have made these ladoos three times ! Yep, it's that much good and addictive ! 



Condensed Milk 


For this ladoo, i have used condensed milk for sweetness. It gives such a rich taste to the ladoo.
Also depending on the sweetness of the mango, you may need more or less condensed milk.

So start off with 1/3 of condensed milk.  First mix coconut, mango pulp and condensed milk, give a quick taste and then add more condensed milk if needed.

Fresh Mango Vs Mango Pulp


I have used fresh mango for this ladoo. But store bought mango pulp can also be used for this recipe. If you're using canned mango pulp, make sure to add less condensed milk because most of the canned mango pulp already has sugar in it.

Mango Ladoo | Mango Coconut Ladoo

Ingredients
Mango pulp - 1/2 cup
Desiccated Coconut - 1 cup
Condensed milk - 1/3 -1/2 cup*
Cardamom powder - 1/4 tsp
Ghee - 1 tbsp
* Depends on the mango sweetness, you can add more or less of condensed milk.

Procedure
Take a one medium size well-ripen mango, scoop out all the flesh in a blender and grind into smooth puree. Take 1/2 cup of mango pulp from it.  


Next add the desiccated coconut, mango pulp and condensed milk in a pan and then switch on the heat. Milk it all well together.
Cook it in a medium flame and within a few mins, it all comes together like a single mass. At this stage add the ghee and the cardamom powder.
Cook it for a few more mins. When you're able to roll the mixture into smooth ball, switch off the flame. The ladoo mixture is ready. 
Let it cool down until the heat of the mixture is hand bearable. Then take a small amount of mixture and roll into smooth ball. 
That's it, Delicious Mango Ladoo is ready.
Notes:
  • Within 8-10 mins the ladoo would be ready for the given quantity, so don't cook for a longer time otherwise the ladoo would be chewy.
  • My mango is very sweet ,so i have added only 1/3 cup of condensed milk
  • It stays well in the refrigerator for up to 7 days.
  • Use a fine variety of desiccated coconut.
  • Use mango that has less fibre and in bright color for smooth and vibrant looking ladoos
  • Store bought mango pulp can also be used for this recipe.

Green Moong Dal Ladoo | Pachai Payaru Urundai

Pachai Payaru Urundai, a delicious and healthy ladoo made from the green moong dal and palm jaggery as main ingredients. It's one of the healthiest ladoos that i have made so far and it tastes so great !

If you're looking for a healthy sweet without any white sugar and a lot of ghee, then i would highly recommend to try this ladoo. 


For this ladoo, i have used palm jaggery/karupatti, it gives the nice aroma and taste to this ladoo. But if you can't source the palm jaggery, normal jaggery can also be used. However the unique flavor from the palm jaggery would be missing.
 
This ladoo tastes so much like the stuffing of the traditional sweet "Munthiri kothu", so if you like munthiri kothu, then i'm sure that you would love like ladoo too.  

Green Moong Dal Ladoo | Pachai Payaru Urundai

Preparation Time : 10 mins | Cooking Time : 20 minsServes : 15

Ingredients
Whole Green Moong dal / Pachai Payaru - 1 cup
Grated Coconut - 1/2 cup
Roasted chana dal /Pottukadalai - 1/4 cup
Palm Jaggery - 3/4 cup
Water - 1/4 cup
Cardamom - 3

Procedure
First measure the whole green moong dal and add it in the thick bottomed pan and start roasting in the medium flame.


Roast till the dal became brown. Remove from the flame and transfer into a bowl.In the same pan, add the grated coconut.
Roast the coconut till it became brown and then transfer into the bowl. Let them cool a bit. 
In the mean time, let's prepare the jaggery syrup. Measure the jaggery, add it into the sauce pan along with the water and heat it.
Let the jaggery melts completely. Keep the flame in low and let it boil still the syrup is sticky. It only takes a couple of times.Switch off the flame and let the syrup cool a bit. In the mean time, add all the roasted ingredients into mixie/blender jar.
To that, add pottukadalai and cardamon too. Grind all into coarse powder just like fine rava.
Add the grounded mixture into the jaggery syrup and mix it well until it all comes together.
Take a small portion of the mixture and make a ladoo. Do the same for all the mixture.
That's it, Healthy and Tasty Green Moong Dal Ladoo/Pachai Payaru Urundai is ready.

Notes:
  • Roast the green moong dal and coconut well that gives a great flavor to the ladoo.
  • Palm Jaggery gives unique taste and flavor so highly recommend to use that.

Ellu Urundai | Sesame Seed Ladoo | Ladoo Recipe

Ellu Urundai, a delicious sesame seed balls sweetened with jaggery syrup. I have been thinking of posting this recipe for a very long time and yesterday when I was browsing through pinterest, I found out that the ellu urundai is one of the dishes prepared for ganesh chathurthi. 

In our family, we make kozhukattai/mothagam and sundal for ganesh chathurthi, never remember of making ellu urundai on this particular day, later when i talked to Amma, she mentioned that even in some part of tamilnadu, ellu urundai is prepared for ganesh chathurthi. 

With all that being said, thought it's the right time to post this recipe since ganesh chathurthi is just a few days away, today morning i have prepared this ellu urundai. It's such a simple recipe to make in no time during this festive season.
Now coming to the recipe, the cooking part of making this ellu urundai is so simple if you got the correct syrup consistency. When it comes to shaping them, I find it a little difficult to bear the heat. 

If you're like me who can't bear the heat and have sensitive hands(the heat from the jaggery syrup would easily burn the palm slightly, nothing to scare but still it hurts a little.), I would suggest making them as burfi instead of balls.

Once the mixture is ready, pour it on the greased plate and let it cool for mins and then you can cut into desired shape.Now let's see how to make this delicious sesame ladoo.


Ellu Urundai | Sesame Seed Ladoo

Preparation Time : 5 mins | Cooking Time : 10 minsMakes : 8

Ellu Urundai, Sesame Seed Ladoo, Sesame Seed Balls Ellu Urundai, a delicious sesame seed balls sweetened with jaggery syrup.
Ingredients
Sesame Seed - 1/4 cup
Jaggery - 1/4 cup
Cardamom -1 
Water - 1/4 cup

Procedure
First heat a pan and dry roast the sesame seed until it starts to burst, remove it from the heat and transfer into the plate.
In the same pan, add the jaggery and water and let the jaggery melts completely.
Strain the jaggery syrup to remove the impurities and pour the syrup back into the pan(make sure to clean the pan before using) and add powdered cardamom & bring into boil again.
Once the syrup starts to bubble, pour few drops of syrup in the water and check the consistency.
The syrup should form a soft ball consistency, that means you can take the syrup from the water and able to form a ball. That's the correct stage, add the roasted sesame seed and mix it well.
Within few seconds, it forms together a ball, remove from the heat and start making small balls.
Tada, Yummy Sesame balls/ Ellu Urundai is ready.

Notes:
  • The syrup consistency is important to form the ball shape, so keep the flame in low when the syrup is about to reach the consistency to make sure that you don't miss the correct stage.
  • Apply a few drops of ghee in your hands, it will helps to roll smoothly.
  • You must roll them when the mixture is hot, if you can't bear the heat, simply layer it on the tray and cut into pieces.
  • Instead of white sesame seed, you can used black sesame seed also.

Rava Coconut Ladoo | Rava Ladoo | Ladoo Recipe

Rava Coconut Ladoo, a delicious and easy to make ladoos with semolina and coconut. Rava ladoo is one of ST's favorite sweets and the only sweet he asks me to make often. So far,apart from the regular rava ladoo, I have tried quite few variations like making them using condensed milk and  sugar syrup without ghee. Each one has its unique taste & texture.

And this rava coconut ladoo is my recent favorite in this rava ladoo series. In general, I love anything with coconut in it and coconut gives nice aroma and taste to this ladoo. If you like me who loves coconut, give this method a try next time when you make rava ladoo.

While making this ladoo, make sure to roast both rava and coconut until they are aromatic, that makes a lot of difference in both taste and texture wise. So far I have made this ladoo for a handful of times and in every time, the amount of ghee needed varies slightly plus or minus 2 tsp of ghee. 

Therefore add ghee little by little and stop when it starts holding shape, even if it doesn't hold shape after using all the ghee, you can add more ghee or simply use a couple of tsp of warm milk or water. Milk actually reduces the shelf life of the ladoo, so if you're making this ladoo in large quantities, I would recommend sprinkling a couple of tsp of warm water to hold the shape. It doesn't affect the taste at all. Now let's check out how to make this delicious rava coconut ladoos.

Rava Coconut Ladoo Recipe

Ingredients
Rava/Sooji - 1/2 cup
Grated Coconut - 2 tbsp
Sugar - 1/3 cup
Cardamom powder - 1/4 tsp
Ghee - 2 to 3 tbsp 
Cashew - 5

Procedure
Heat a tsp of ghee in a frying pan, add rava and start roasting the rava.
Roast until the rava is aromatic, remove from the heat and transfer to the plate, in the same plate, add the grated coconut.
Roast till it slightly started to changes to its color, remove from the heat and transfer to the plate. Now add the remaining ghee in the pan and heat it.
Broke the cashews into pieces and add into it. Roast until it becomes golden. Switch off the flame. In a mixie jar, add the sugar and powder it.
Next add the rava and coconut into it and pulse it couple of time until it all mix together.
Transfer into the bowl, add the cardamon powder and the ghee along with roasted cashews.
Mix it all together and start making ladoos.

Notes:
  • No need to powder the rava, just give a couple of pulses until it all mix together.
  • The ghee should be hot, so that it holds the ladoo in shape well.
  • If the ladoo shape doesn't hold well, you can add a couple of tsp of boiled milk/warm water.
