Capsicum Rice | Capsicum with Nuts Rice | Rice Recipe

Capsicum rice, the recent favorite rice in our home. This rice is very mild and with full of wonderful flavors. In our home, we're not fond of any type of pulav, so i rarely make pulao.We are kind of people who loves rice with sambar & one or two side dishes.One day when i looked into my recipe notes in phone, i saw this rice recipe, don't know when did i make note of this, probably from some tv shows i guess,that's why i would use my phone to make notes.It's sounds very interesting.
Immediately i tried this rice recipe and it turned out very delicious. After that, i purposely bought capsicum just to make this rice. The capsicum and nuts really goes very well with the rice. And now it's one of our favorite rice , even we packed this rice for our one day outing recently.

Capsicum Rice

Ingredients
Basumati Rice - 1/2 cup
Capsicum(diced) - 3/4 cup 
Onion - 1(small)
Garlic(minced) - 2 tsp 
Ghee - 2 tsp
Cinnamon - a small piece
Cloves -2 
Cardamom -1
Salt - to taste
To roast & grind
Red chili - 3 
Chana Dal - 1 tsp
Urad dal - 1 tsp
Coriander seed - 1 tsp
Cumin seed - 1/2 tsp
Peanut - 2 tbsp
Cashew(broken) - 1 tbsp

Procedure
Soak basumati rice for 20 mins, heat 1 cup of water in a pressure cooker,bring to boil add salt enough for rice.Add the soaked rice,cover the cooker with lid and put on weight,cook it for 3 whistle.Once the pressure released from the cooker, open the lid,transfer the rice into wide plate and allow to cool.In the mean time, dry roast the ingredients (red chili, chana dal, urad dal & coriander seed) till nice aroma comes,once it's almost done, add the cumin seed and roast for 2 min.Remove it on plate.In the same pan, dry roast peanuts & cashew till it becomes crispy. Allow all the ingredients to cool.Remove the skin of peanuts, put all the ingredients in the mixie jar and grind into coarse powder.Chop onions into small pieces, capsicum into small dice and minced the garlic.Heat the pan with ghee, add cinnamon,cloves & cardamom and fry for 30 secs.Then add minced garlic, let it fry for 30 secs.Add onions and saute it,once the onions becomes translucent, add capsicums.Add salt (just for the masala,remember we already added salt in rice) and saute till the capsicum becomes little soft,add the grounded masala powder.Mix a good mix and saute it for 2 mins, then add the cooked rice, mix well.Tasty & colorful capsicum rice is ready.
Notes:
  • For any type of variety rice, add salt while cooking the rice itself,it gives well seasoned rice.
  • Once the water comes to boil, add the rice, it helps to give separate grains of rice.
  • Don't over cook the capsicum, it should be little crunchy.
  • You can add any type of nuts you have, sometimes, i add almond & walnut too.
  • Ghee gives great flavor to the rice. 
  • I used green & red capsicum, you can use any color, mix of colors or single color.

Veg Pulao With Onion Raita

I thought of making Dindugal Dum Briyani with Onion Raitha for today combo. But unfortunately, there was maintenance power shutdown in our area today, so i'm posting this simple pulao with onion raitha.
This pulao is very simple to make and the ghee gives great flavor to this rice.Ok. let see the procedure

Veg Pulao

Preparation Time : 30 mins | Cooking Time : 20 minsServes :

Ingredients
Basmathi Rice - 1 cup
Carrot - 1 
Beans - 4
Cauliflower florets - 1/2 cup
Capsicum - 1 small
Potato - 1
Onion - 1 
Ginger - 1 tsp (finely chopped)
Green Chili - 1 (Slit)
Bay leaves - 1
Cinnamon - a small piece
Cloves - 2 nos
Cardamom - 1 no 
Ghee - 2 tbsp
To grind
Cinnamon - a small piece
Cloves - 2 nos
Cardamom - 1
Pepper - 1 tbsp
Procedure
First soak the rice for 1/2 hr  . Cut all the veggies. Bring a cup of water to boil add carrot & beans , once it half cooked , add the cauliflower and cook it. It shouldn't be mushy, cooked yet crunchy.In an another pot, bring 2 cup of water to boil along with spices(bay leaves, cinnamon,cardamom,cloves) & salt. Add the rice and cook the rice until it's soft and fluffy . Transfer the rice in the plate and drizzle some oil to avoid stickiness and ground the spices listed under "To grind ".In a wide pan, heat the ghee , add the onions, green chili &ginger and saute it until onions become translucent and add capsicum ,give a quick stir and then add  all the cooked veggies and add the grounded spices & saltMix it well, finally add the rice  and mix it well. Drizzle some ghee while serving.

Onion Raita

Preparation Time : 10 mins | Cooking Time : 0 minsServes :

For Raita
Onion - 1 
Curd - 1/2 cup
Green chili - 1 small
Salt

Procedure
Beat  the curd well and  cut the onions & green chili into small pieces. Mix it with curd and add enough salt.
That's it, simple raita is ready.

Sweet Corn Pulao/Pulav

Sweet Corn pulao/ Pulav is the quick, easy & tasty pulao. It's one pot meal & you can make it quickly in the morning for office goers / you can pack this as lunch for your kid. 

Last week , i bought this fresh sweet corns from the farmer's market. Usually i make sundal, this time, i want to try something different, so searched it on google & found this rice as interesting. But i hesitate to try this, I doubt that corn will make the rice as sweet. But yesterday, keep my doubts aside & give it a try, the result was amazing. To my surprise, the sweetness from the corn & hotness from  the chili & pepper powder compliments very well. Ghee & pepper powder gives great flavor to this rice.
  

Ingredients

Basmati Rice - 1 cup
Sweet Corn - 1/2 cup
Onion - 1 small
Green chili - 2
Ginger Garlic paste - 1 tsp
Pepper powder - 1 tsp
Coriander leaves - few
Water - 2 cup
Salt - as needed (1/2 tsp approx)

To Temper

Ghee - 1 tsp
Cinnamon - 1/4 inch piece
Cloves - 4 
Cardamom - 1
Bay leaves -1




Procedure

First soak the rice for 15 mins. In the mean time, cut the onion into thin slices, slit the green chili and keep everything ready


In a pressure cooker, heat the ghee, temper the ingredients listed under "To Temper" & then add onion & green chili & saute them well.


Once onions are translucent, add the ginger garlic paste & pepper powder , saute it well. Then add corns and give a quick stir and add water.


Once the water comes to boil, add the rice, coriander leaves & close the lid & put on weight. Cook it for 3 whistle.


Once pressure released , fluff it with fork & serve it with your favorite curry.


Note:


  • Adjust the spicy level according to your taste.
  • Recommend to use ghee instead of oil. It gives great flavor
  • Even you can drizzle few drops of ghee while serving.
  • Any north indian curries goes well with this rice.

Baby corn pulav



This baby corn pulav is easy to make and also very tasty, If you like baby corn,give it a try, definitely you like it.
Ingredients
Basmati Rice -3/4 cup
Baby corn - 8 pieces
Onion - 1(small)
Cardamom - 1
Cloves - 3
Star anise -1
Cinnamon - 1 small piece
Oil - 1/2 tbsp
Ghee - 1 tsp
Chili powder - 1 tsp
Garam masala - 1 tsp
Turmeric powder - pinch
Water- 1 1/2 cup
Lemon - 1/2
Salt - to taste (1 1/4 tsp approx)

Cashew - 6-7 pieces
To grind
Coriander  leaves- 1/4 cup loosely packed
Garlic - 6 pods
Ginger - 1/2 inch piece.

Procedure

Cut the onion into thin slices and baby corn in to 1/2 inch pieces.




Grind all the ingredients under "To  grind" and keep it ready. Soak the basmati 
rice for 10 mins
 

Heat the pressure cooker and add oil & ghee together, once it heats, add the cinnamon,cloves,cardamom, star anise.



Once it splutters add onion and saute it till translucent and then add the grounded masala and saute it



Now add the baby corn, chili,turmeric and garam masala and saute it for 2 mins.






Add the water and bring it to boil and then add  salt and rice.
In the mean time, fry the cashew till golden brown and add it in the rice.


Finally add few coriander leaves and squeeze the lemon and close the lid and put on weight.



Cook the rice for 3 whistles. Once the pressure released, open the lid and fluff it with fork.



Now the tasty baby corn pulav is ready . Serve it with any raita of your choice. I served this with simple onion raita.

Peas Pulav & Moong dal

Peas Pulav is very simple dish and also very tasty.

Ingredients
Basumathi Rice - 1 cup
Frozen Peas - 3/4 cup
Onion(chopped) - 1
Ginger garlic paste  - 1 tbsp
Green chili(slit) - 2 (adjust to your taste )
Mint & Coriander leaves - handful
Garam masala - 1 tsp
Cloves - 2 nos
Cinnamon - small piece
Cardamom - 1 no
Ghee  - 3 tbsp
Water - 11/2 cup
Salt

Procedure 
Soak the rice for 30 mins.Heat the ghee in a cooker and add cloves,cinnamon ,cardamom & saute for 30 sec

Then add onions & slitted green chili,once onion become translucent add ginger garlic paste and saute for 1 min.

After that add peas(if you use the regular one,soak it overnight) and saute it and then add rice and mix it well.

Then add water,coriander & mint leaves, salt & garam masala.Mix it well and close the lid.

Cook it for 3 whistle.Peas Pulav is ready.

Moog Dal Recipe

Ingredients

Moong Dal - 100gms
Asafoetida - 1/4 tsp
Green chili(slit) -1
Pearl Onion - 5 nos(chopped roughly)
Tomato - 1(medium,chopped)
Turmeric powder - pinch
Red chili powder - 1/2 tsp
Coriander leaves - few
Salt
To Temper
Oil - 1 tbsp
Mustard & urad dal - 1 tsp
Curry leaves -few

Procedure

Put dal, chili,asafoetida,onion, tomato in a pressure cooker . Add enough water and cook it for 3 whistle.

In a sauce pan tempering the ingredients listed under "To Temper" , then add the cooked dal.

Once it comes to boil add the tumeric,chili powder and salt.

After the raw smell goes off,add the coriander leaves and switch off the flame.

Simple but tasty dal is ready.Serve this Moog Dal as the side dish for peas pulav,dosa,idly or even chapathi.
