Ridge gourd kootu | Peerkangai kootu

Ridge gourd is a versatile vegetable , you can make kootu or thogaiyal with this and also it's rich in dietary fiber,so it's good to use this vegetable regularly in our regular diet.

Ridge gourd / Peerkangai - 1/2 cup chopped
Moong Dal - 2 tbsp
Green chili - 1 no
Asafoetida powder - a pinch
Coconut - 1 1/2 tbsp (optional)
Coriander leaves - few
Salt to taste
To Temper
Oil - 1 tsp
Mustard & urad dal - 1/4 tsp
Pearl onions - 2 nos(finely chopped)
Curry leaves - few

Peel the ridge gourd and remove the seeds in the middle and then chopped them into small pieces.
Heat a kadai with 1/2 cup of water, add the moong dal along with asafoetida powder & green chili.Once the dal is half cooked , add the ridge gourd.
Once the ridge gourd is cooked, add the salt & coconut, mix it well. Then temper the ingredients listed under "To Temper" and add into the kootu .Finally add the coriander leaves and switch off the flame.
Tasty Peerkangai Kootu is ready.
