Kuthiraivali Upma | Millet Upma | Breakfast Recipe

Kuthiraivallu Upma, an quick and easy to make breakfast with the millets. This is one of my recent favorite breakfast recipe to make on my lazy days. It's quite similar to the arisi(rice) upma in taste and texture. Once i had knew the knack of cooking the millet perfectly, i have been trying out various recipe with millets in the place of rice and this upma is one among of my successful experiment of using millets in the place of rice. It turned out so delicious and fluffy.
The tempering used in this upma really goes well with the millets. I have tried the same upma recipe with kodo,little & branyard millet. All turned out well, so you can use any millets for this upma as per your liking. I personally like coconut flavor in all my upma dishes,so i have used coconut oil and grated coconut here in this recipe too.  Without further delay, let's check out the recipe, but if you want to know what i have prepared for past 2 days under Whole Grains, here they are

Kuthiraivali Upma

Ingredients
Barnyard Millet - 1/2 cup
Pearl Onion - 4
Green Chili - 2 nos
Ginger - 1 tsp(chopped)
Curry leaves - few
Grated Coconut - 2 tbsp
Coconut Oil - 1 tsp
Mustard 1 tsp
Channa Dal - 1 tsp
Water - 1 cup
Salt - to taste

Procedure
Soak the millet in the water for 20 mins, peel the onions and chop them into small piece,slit the green chili. Heat the kadai with oil, add the mustard and let it crackle.Add onion,chili,ginger,curry leaves,channa dal one by one and saute till the onions becomes translucent. Then add the water and salt.Let the water comes to boil , drain the water from the millet and add into the boiling water. keep the flame in medium and cover the pan, let it cook until all the water absorbs. Finally add the grated coconut and mix it well.Tada,  Healthy Millet Upma is ready fo serve. Taste as good as on its own or you can serve it with chutney or sambar.

Notes:
  • Ginger gives great flavor to the upma, so highly recommend to add it.
  • Instead of coconut oil, you can use any cooking oil as per your liking.
  • Carrot & frozen peas can also be added into upma.
  • Soaking the millet is necessary to achieve softly cooked millets.

How to boil eggs | Boiled Eggs with perfectly cooked yolk | Cooking Basics

Why would a post required on how to boil the eggs? Yep,that might be the question in your mind when you read the title. Though I have been eating eggs from childhood and i tried various egg recipe with boiled eggs for past 6 years,still when comes to boil the egg perfectly is bit tricky for me. Either it's over cooked and leave the green ring around the yolk or under cooked with middle part is still gooey in consistency. 

Seriously for really very long time,I don't know that green ring around the yolk is a result of over cooking the eggs.I thought that might be the nature of some eggs,silly me.Later i googled on how to cook eggs perfectly, i found lot of method and tried each one of them, but the method that i have mentioned here works perfect for me every time without fail.It yields perfectly cooked yolk every time yeah,literally every time,neither it has green ring nor it's gooey at the center.So i'm sharing this here that might be useful to beginners in cooking.

Ingredients
Eggs - 3 

Procedure
Take a deep sauce pan, add water up to 3/4 of the pan and also it should be enough to immerse the egg completely, put it on heat and bring to vigorous boil, then add the eggs.Let it be in flame for exactly 1 & 1/2 mins.Remove from heat and cover it with lid and set it aside for 30 mins. Discard the hot water and run the eggs in cold water for 2 mins, then peel the eggs.Tada, Perfectly cooked eggs every time.
Notes:
  • The water should be enough be immerse the eggs completely.
  • When you drop the egg in hot water, gently drop the egg with tongs.
  • 30 minutes standing time is must to get completely cooked yolk,if you remove it from hot water sooner, then yolk would be slightly running.
  • Run it in cold water  helps to remove the shell easily.

Semiya Upma | Vermicelli Upma | Breakfast Recipe

It's almost 3 months, since i posted a recipe here and it's time to give some attention to my little space. Due to hubby's job, two months before, we moved to Houston. Initially we stayed in hotel for almost a month and finally we found  a apartment and moved in. Starting from stratch, all over again in other country is bit difficult, but we managed well so far . 
And for the last 2 weeks i have been cooking  in the proper kitchen ,as of now, i cook simple meal nothing special.So here's the simple recipe for semiya upma and it's useful for the beginners and bachelors , not for the experts :-)  


Semiya Upma
Preparation Time : 5 mins | Cooking Time : 15 mins | Serves : 2

Ingredients
Semiya/ Vermicelli - 1/2 cup
Onion - 1 (small)
Green Chili - 2 nos
Curry leaves - few
Oil - 1+1 tsp
Mustard & Urad dal - 1 tsp
Channa Dal - 1 tsp
Water - 1 cup
Salt - to taste


Procedure
First roast the semiya with 1 tsp of oil till it's golden brown and keep it aside.Cut the onions into small pieces and slit the green chili into half.Heat the remaining 1 tsp of oil in the kadai and add mustard , once it splutters , add urad dal and channa dal, roast it for 30 sec.Then add the onion ,chili and curry leaves and saute till the onions become translucent.Add the water and salt , bring into boil.Add the roasted semiya and cover the kadai with lid and keep the flame in medium. Keep it covered for 4-5 mins or till the  semiya cooked.Finally add the grated coconut , give a good mix and switch off the flame.Tasty and Simple Semiya Upma is ready.
Notes:
  • Adjust the chili according to your taste.
  • I used MTR semiya here, as the pack suggests to roast the semiya before use. Normally i dont when i  use anil semiya variety.
  • If you wish, add few cilantro at the end.
  • You can add some veggies as per your liking. 
  • Even without roasting the semiya also, the upma would turned out wonderful.I have tried many times without roasting.
