Rose Ice Cream | No Churn Rose Ice cream recipe

Rose Ice Cream, a delicious , flavorful and  easy to make homemade ice cream. This Rose ice cream is a no-churn ice cream so you can make this easily at home with a blender. It's such a simple recipe with a very few ingredients, but the taste and flavors are simply amazing.

If you like rose milk or rose flavor in general then this rose ice cream is definitely for you. Do give it a try and i'm sure that you would be amazed by its deliciousness.

Heavy Cream

The key ingredient of this ice cream is the heavy/full fat cream. Here in the recipe, i have used cream with 35% fat. Higher fat content gives the richness to the ice cream. So highly recommend  to use full fat cream.

Sugar

Make sure to add the sugar when the cream starts to thicken, then only the sugar will be all melted when the cream reaches its peak.

However you can also use condensed milk for more richness. If you're using condensed milk, you can add it in the cream when it reaches peak and gently fold it.

Flavoring

Rose essence is the key to the flavor of this ice cream. If you're using rose water instead of rose essence then add more rose water because its flavor is not very concentrated.

Freezing

When freezing this ice cream / any ice cream, make sure the cling wrap touches the ice cream completely. It prevents the ice crystal formation and gives a super smooth ice cream.

Scooping

For perfect ice cream scoop, keep the ice cream out of freezer for 2-3 mins and then dip the ice cream scoop in the warm water and scoop the ice cream. It would be easy to scoop a perfect ball of ice cream.

Ice cream Cake | Coffee Cake | Coffee Ice cream Cake

Ice cream Cake/bread, an quick way of making cake with just 2 ingredients such as ice cream & self rising flour. As i don't have self rising flour, here in the recipe i have used all purpose flour and it turned out very tasty. The texture of this cake is quite in between cake and bread,so you can call them as either cake or bread.
So far i have tried this cake with vanilla ice cream and coffee ice cream and i like the cake made with coffee ice cream more than vanilla. First time, when i had tried with vanilla ice cream, i used 2 cups of ice cream for 1 & 1/2 cup of flour & the cake turned out soft but it didn't rise much, later when i tried with coffee ice cream, i have increased the ice cream quantity to 2 & 1/4 cups and it turned out as i expected and rise well. Also depends on your flour quantity,it may absorb more or less liquid, start with 2 cups of ice cream, if the batter is too thick, add the extra 1/4 cup of ice cream.

Ice cream Cake

All purpose flour -  1 &1/2 cup
Baking powder - 2 tsp
Salt - 1/2 tsp
Chocolate Chips - as needed

Preheat the oven at 350F.
First measure the flour, baking powder and salt and sieve it once to make sure that all mix together well. Take the ice cream out of freezer and let it soften.Mix the ice cream with spatula well and make sure it's creamy and smooth, pour into the flour mixture & mix it well with spatula.Add chocolate chips and mix it well and then pour into the buttered baking pan.On the top, add some more chocolate chips and bake it in the preheated oven for 30-45 mins or until the tooth pick inserted in the center comes out clean. Let it cool for few mins in the pan.Run the knife around the edges and flip the pan on the wire rack. Tada, your cake is ready, let it cool completely and then slice & serve.Tasty Coffee Cake is ready.

Notes:
  • I kept the ice cream out of freezer for an hour before starting the process or you can microwave it for 30 secs to make it smooth & creamy.
  • Chocolate chips gives great taste to this bread.
  • You can make this with any of your favorite ice cream flavor.
  • Mine got ready in 45 mins, but after 30 mins, you keep an eye on the oven since every oven is different and it might takes different time.
  • If you have self rising flour, you can use 1 & 1/2 cup of self rising flour instead of flour, baking powder and salt.
  • Always use full fat ice cream for better taste.

Paal Ice | Milk Popsicle | Popsicle recipe

Paal Ice / Milk Ice, a creamy & delicious popsicle made from the milk. It's one of the popular popsicles around the 90s in Tamilnadu and almost all the ice cream carts would sell these popsicles at that time.

It's so easy to make with just a handful of basic ingredients at your pantry and the taste is simply amazing. So if you're looking for easy popsicles to make this summer, do give this recipe a try.

To be honest, i'm not a big fan of popsicles or ice creams. But occasionally  i do make these popsicles and enjoy it with family. When we were kids , we (me & my bro) both caught cold very easily and frequently too, so our parents strictly omitted popsicles and ice creams for us.

Still today, I'm a little bit worried about getting cold while having ice creams or popsicles and also I never even crave for it so far, so it's not like i missing out on something. Also I think we crave for the food which we grew up eating only.

But ST likes popsicles a lot, particularly this paal ice  and he keeps on talking about it that he had from the ice cream cart(thallu vandi) during his summer holidays. So i made this once or twice in the past. But now ( in 2024) i'm making this frequently at home because i wanna introduce all kinds of foods to my kid :-)

Milk

For the recipe, i have tried both 2% milk and whole milk. Both turned out delicious however using whole milk gives richness to the popsicle. So you can make this popsicle with whatever milk you have or you can use 50:50 of both the milk too.

Flavoring

I personally like the cardamom flavor in this popsicle. But you can make it with vanilla flavor too. If you're using fresh cardamom/crushed cardamom like me, it tends to settle on the bottom of the popsicle so strain the milk mixture once it cooled down before pouring into the mold. It will help to remove the tiny bits of cardamom seeds and make a super smooth popsicle.

Now let's check out on how to make these delicious Paal Ice.

Ingredients
Milk - 1 cup
Sugar - 3 to 4 tbsp
Cardamom(crushed) - 2
Corn flour - 2 tsp

Procedure
In a bowl, add the corn flour and 1 tbsp of milk and mix it well without lumps and set aside until use.
Heat the remaining milk in a large pan, let it comes to boil, keep the flame in simmer for 3 mins, then add the sugar, let the sugar melts completely.
Then add the cardamom and the corn flour mixture, mix it well, within a min, it becomes slightly thick. Switch off the flame and let it cool completely.
In a popsicle mold, pour the milk mixture till the top and close it with the lid.
Let it freeze for minimum 6 to 8 hrs and to remove the popsicle ,keep the popsicle mold under the running water for 2 mins, then remove it,it will easily come out.
That's it , Tasty & creamy Paal Ice is ready.
Notes:
  • Don't add more corn flour than the mentioned quantity, otherwise it will becomes too thick.
  • I have used 3 tbsp of sugar and it's perfect for us.
  • Use full fat milk for better taste.
  • If you don't have popsicle mold, then use any tall glass along with ice cream stick or even small too works.
  • If you don't have ice cream stick, just freeze it in tall glass/small bowl and demold it and serve it in a bowl with spoon.
  • Depends on the size of the mold, the above quantity yields 3 to 4 popsicles.
  • I freeze it overnight but freeze atleast for 6 hrs before serving.
  • Serve it immediately once it's out of freezer
  • You can skip the cardamom too if you want only milk flavor.
