Lemon Rice | Eelumichai sadham | Variery Rice

As I have been posting recipe related to "Navarthri' for few days now, here is the another simple rice recipe for the occasion. Lemon rice, a simple south indian rice flavored with lemon juice and basic tempering.I can say it's the most easy recipe,if you know how to cook rice, then you can make this.Here the knack is roasting each ingredients in the tempering as perfect neither burned nor under roast ,so keep the flame in low/low medium always.And also add the lemon juice, once swich off the flame,other wise the lemon juice gives bitter taste to the rice.
If you have done this perfectly, then you will have yummy lemon rice. To be honest here, i didn't like lemon rice in fact any kind of variety rice in my school days. Amma found it very difficult to pack lunch box for me.But now a days i started to like all types of variety rice more than the regular meal like rice,sambar & poriyal. Even i'm wondering why?May be taste changes with age :-)

Lemon Rice

Cooked Rice - 2 cup
Lemon - 1 
Chana Dal - 1 tbsp
Roasted Peanut - 11/2 tbsp
Cashew(broken) - 1 tbsp
Mustard & Urad Dal - 1/4 tsp each
Turmeric Powder - 1/4 tsp
Curry leaves - few
Red chili - 1 
Green Chili(slit) - 1
Gingelly oil - 1 tbsp
Salt - to taste

Take all the ingredients for tempering be ready. Squeeze the lemon juice from lemon.Heat the pan with oil.Add cashew and roast till it becomes golden brown and keep it aside. Now add mustard & urad dal, let the mustard crackle and then add chana dal,roast till the dal becomes crispy.Keep the flame in low.Then add peanuts,red chili,green chili ,curry leaves one by one and saute it.Finally add turmeric powder in the oil and saute it.Once all the ingredients are sauted well,switch off the flame and then add the lemon rice.Stir the lemon juice & the tempering till it blends well.Let the tempering comes to roam temperature, add the cooked rice and  salt. Mix it well.Finally add the roasted cashew and give a quick stir.Lemon rice is ready to serve.Tasty & easy lemon rice is ready.
  • Keep the flame in low and roast all the ingredients slowly .
  • Add lemon juice after switch off the flame.
  • Adjust the chili according to your preference.
  • Cashew has the tendency to absorb lemon juice more than any other nuts we used here. And i dont like sour cashews in my rice.So i roast it separately and add it in the end.
  • Cook the turmeric powder in the oil till the raw smell leaves.
  • While cooking rice , add 1/2 of the salt required for the rice and 1 tsp of gingelly oil. It give  well seasoned and separate grains of rice.
  • I got 11/2 tbsp of lemon juice from one lemon.
