White Sauce Vegetable Pasta | Easy Pasta Recipe

White Sauce Vegetable Pasta, an easy to make delicious pasta with a lot of vegetables. White sauce is also known as  bechamel sauce made from butter, flour and milk. It's one of the five mother sauces in western cuisines and the word bechamel is from French which means thick white sauce. 

In our home, both me and ST like coriander pesto pasta and tomato sauce pasta, white sauce pasta is not our favourite but occasionally it's OK. But now, since the kid likes the white sauce pasta and having a little bit without any fuss compared to other foods. So change of scenery in my kitchen, that's why now i'm making white sauce pasta at home ! 

While travelling from India to here, my LO ate only the white sauce pasta that the airline provided out of all the food that i had packed. Ever since, i have been making this white sauce pasta  for him and after eating all the leftovers, i have to admit that indeed it's delicious and i too started to like it.

In today's recipe, i haven't prepared the sauce ahead. Just sprinkled the flour on the cooked veggies and sauteed. By this method, the chances of forming lumps in the sauce is so minimal, so the sauce would be lump free and absolutely smooth. Additionally, the recipe just needs one vessel to cook and clean later :-) 

However this method is not the traditional way of making white sauce pasta but i can assure you that it's super easy to make and finger licking delicious.

Now let's check out on how to make this creamy white sauce pasta. 

White Sauce Vegetable Pasta

Preparation Time : 5 mins | Cooking Time : 20 minsServes :

White sauce pasta, White sauce vegetable pasts, Bechamel sauce pasta White Sauce Vegetable Pasta, an easy to make delicious pasta with a lot of vegetables.
Ingredients
Fusilli Pasta - 1 cup
Onion -1/2
Carrot - 1 
Capsicum - 1 (small)
Mushroom - 1/2 cup(chopped)
Frozen Peas - 1/4 cup
Milk - 2 cups
Olive oil / Butter - 3 tbsp
All purpose flour - 3 tbsp
Cheddar cheese - 1/4 cup
Garlic - 2 cloves
Salt - to taste
Pepper - to taste
Procedure
First cook the pasta as per the package instructions and keep it aside. Cut all the vegetables and keep it ready. Heat a large pan with olive oil.

Next add the crushed garlic. Give a quick stir and when it's aromatic, add the vegetables along with salt(enough for the vegetables) and pepper powder. 
Cook the veggies till they are soft and then add the flour, give a good mix with the vegetables and roast the flour for a min or two in a low flame.
Next add the milk & salt and mix it well. Now increase the heat & stir it continuously, the sauce would be thicken in a couple of mins.
The sauce should coat the back of the ladle well and if you should be able to draw a line with your fingers. That's the perfect consistency of the sauce. Now add the cheese and the cooked pasta.
Give a good mix and let it in the flame for a couple of mins. 
That's it, Delicious veggie loaded white sauce pasta is ready.

Notes
  • Serve hot for gooey and creamy pasta. Once it cooled, the sauce thickens. 
  • You can use any varieties of pasta for this recipe.
  • Red chili flakes can be added for more spiciness.

Capsicum Raita | Bellpepper Raita

Capsicum Raita, a simple and delicious side dish made  from curd and bell pepper/capsicum. In Tamilnadu, onion raita is quite a staple raita and it's widely served as a side dish for biryaniparotta and chapathi both in restaurants and in houses. Also, in South Tamilnadu and in Kerala, we're making "Thayir pachadi" with a lot of country vegetables like ash gourd,  cucumber and okra  which is somewhat similar to raita. 
Coming to today's recipe, here i have used a combination of yellow and orange capsicum, but you can use a single  color or any of your favorite colors. If you like capsicum flavor, then you must give this raita a try, it's simply awesome and tastes great as a side dish for all types of rotis ! Now let's check out the recipe.

Capsicum Raita

Ingredients
Capsicum - 1/4 cup(chopped)
Green Chili - 1
Curd - 1/2 cup
Coriander leaves - few
Salt - to taste
Garam Masala - 1/4 tsp(optional)
Oil - 1/2 tsp
Mustard & urad dal - 1/4 tsp

Procedure
Chop the capsicum and green chili into small pieces. Take the curd in a bowl and add enough salt and whisk it well. Heat the pan with oil, add mustard and urad dal. Let the mustard splutters.
Then add the capsicum and green chilies with a pinch of salt. Saute till the capsicum are soft. Let it cool a bit, then add into the curd along with chopped coriander leaves. Mix it well. Tasty Capsicum Raita is ready to serve. 
Notes:
  • You can use any color of capsicum in this recipe.
  • I haven't used the garam masala, but for more flavor, you can add some garam masala while sauteing.

Brown Rice Noodles with Broccoli and Peanuts | Noodles Recipe

Brown Rice Noodles with Broccoli and Peanuts, it's my recent favorite to make with rice noodles. Recently i had bought this brown rice noodles from Costco and looking for some interesting and quick to make recipe with it, that's when i came across this recipe from pinterest while browsing. I liked the recipe instantly since it doesn't need any fancy ingredients or meat. All you need is some basic sauces and your favorite veggies to make this delicious and healthy noodles in no time. Adding peanuts give nice crunchiness to this noodles and also i highly recommend to use good quality of soy sauce and the sesame oil, that gives great flavor to this noodles. Now let's see how i made this yummy noodles. 

Brown Rice Noodles with Broccoli and Peanuts

Preparation Time : 1 hr | Cooking Time : 20 minsServes :

Ingredients
Brown Rice Noodles - 1 pack
Broccoli Florets - 1/2 cup
Bell pepper/Capsicum - 1/4 cup(roughly chopped)
Garlic - 1
Green onion - 2
Soy sauce - 1 tsp
Chili sauce - 1/2 tsp
Sugar - 1/2 tsp
Salt - as needed
Tomato Ketchup - 1 tsp
Roasted peanuts - 1 tbsp
Sesame oil - 2 tsp

Procedure
First cut the green and white part of green onions finely, capsicum into small chunks. Cook the noodles as per package instructions and keep it ready. Add tomato ketchup, soy sauce,chili sauce,sugar,salt into bowl, mix it well and keep it ready.Heat the pan with oil, add the crushed garlic, then add the white part of green onions, saute for 30 secs, then add the broccoli and bell pepper,  saute it in the oil for 2 mins.Then add 1/4 cup of water in to the sauce mixture, mix it well and then add into the veggies, let it simmer for 3-4 mins in the low flame.Next add the cooked noodles, give a quick toss and switch off the flame. Just before serving, add the roasted peanuts and green onions. Tada, Delicious Noodles is ready to serve.
Notes:
  • Add more or less of sauces as per your liking.
  • Once all the sauces become thick, add the noodles into the pan. 
  • Don't cook the noodles for long time, otherwise it turns mushy very easily.
  • Add the roasted peanut just before serving to retain its crunchiness.
  • I like more veggies in my noodles, but you can add more or less of veggies as per your preference.

Roundup for One Vegetable Different Ways

This is the first time that i'm doing roundup for the BM theme. As usual, this month BM also has some interesting themes and one among them is "One Vegetable Different Ways". The concept is you have to choose one vegetable as main ingredient and cook it in three ways. Really i liked the concept and had chosen "Broccoli" as main ingredients and cooked three dishes. Red Bell Pepper Chutney | Capsicum Chutney | Chutney Recipe

Red Capsicum/Bell pepper Chutney is one of my favorite chutney to have with my dosa and idli. Generally i like the flavor of capsicum and love to add way more in my pizza & pasta, so no surprise,i do like this chutney.  First time, i came to know about this chutney when i was browsing through pinterest, the vibrant color of this chutney really caught my attention, ever since i'm making this chutney regularly at my home as the side dish for idly/dosa.
So far i have tried this chutney with both red & green color bell pepper and each of them have their unique flavor and good on its own, but my personal favorite is red bell pepper chutney. Not only it looks vibrant, the flavor from the red bell pepper is so wonderful and making you wanting more & more. Either with spongy idly or crispy dosa, it tastes absolutely delicious. Though i have prepared various chutney at home regularly, just now i realized, that i hardly post any chutney recipe here, will try to post more simple chutney recipe that goes well with idly/dosa.

Red Bell Pepper Chutney

Preparation Time : 5 mins | Cooking Time : 10 minsServes : 2 to 3

Ingredients
Red capsium/bell pepper - 2(small)
Chana dal - 2 tsp
Red chili - 2 
Tomato - 1
Pearl onion - 2
Garlic - 1 
Sesame oil - 1 tsp
Salt - to taste
To Temper
Sesame oil - 1/2 tsp
Mustard  - 1/4 tsp
Curry leaves - few


Procedure
Cut the capsicum into small chunks and discard the seeds. Then cut the tomato into small pieces and take all other ingredients as ready.Heat the oil in a pan, add chana dal and red chili, roast till the dal becomes golden brown.Remove from heat and add into mixie jar. Then add the onion & garlic in the same pan and sauté if for 30 secs, then add capsicum and sauté it for 2 mins.Now add the tomatoes and sauté till it becomes mushy. Remove from heat and let it cool completely.First grind the dal and red chili into coarse mixture, then add the sautéed veggies into the mixie jar.Add the required salt and grind into smooth paste(water from the tomato is enough to grind into smooth paste). Transfer into the  bowl, temper the ingredients listed under "To Temper" and add into the chutney.Colorful and Flavorful chutney is ready. Serve it with idly/dosa. We had it with cone dosa!!!
Notes:
  • Sesame oil gives great flavor to the chuney.
  • You can make the same chutney with green bell pepper too.
  • Chutney has mild sourness from the tomato, if you want more sourness in your chutney, you can add one more tomato.
  • Cook the capsicum till it becomes soft.
