Egg Dum Biryani | Muttai Biryani

Egg Dum Biryani is a flavorful & scrumptious biryani recipe made with exotic Indian herbs, rice and boiled eggs. I have an egg biryani recipe already here where rice is cooked separately and mixed with aromatic masala and eggs. 

But the recipe that i'm sharing is similar to how i had made vegetable dum biryani and fish biryani.  Like i said in all my dum biryani recipes, this egg biryani is also so flavorful and the rice grains are so perfectly cooked neither mushy nor under done

For a change, today i have used ponni rice for this biryani, but had tried with basmati rice many times before, it tastes awesome with both varieties of rice, so pick your favorite rice for this biryani. 

This biryani doesn't have any meat in it, therefore we have to add a  little more whole garam masala spices for recreating that exotic biryani flavors. So in addition to the whole garam masala in the tempering, i would recommend to add some garam masala powder also. 

If you have followed me for a  long time, you would have already known that if i had used whole garam masala in the tempering, usually mentioned the garam masala powder as optional for those who need more flavor. But for this recipe, adding both helps to elevate the flavor.  
Here, our days are getting longer and longer day by day, the sky is bright even after 9 pm and before 5 am as of now, it's kind of feel like living in daylight all time. Does anyone feel like this when spring season starts?? Like snow, leaves fall & sprouts again, this phenomenon of having daylight after 7 PM is always fascinating me, guess this kind of excitement never fades away since i was not used to this when growing up.  Ok.,now let's check out how to make this delicious egg biryani.




Egg Biryani | Muttai Biryani

Ingredients
Ponni/Basmati Rice - 1/2 cup
Boiled Eggs - 3
Onion(medium) - 1
Tomato - 1/2( medium size)
Ginger garlic paste  - 1/2 tbsp
Lemon - 1 tsp
Mint & Coriander leaves - handful
Turmeric powder - pinch
Red chili powder - 1/2 tsp
Green Chili - 1
Garam masala - 1/2 tsp
Cloves - 2 
Cinnamon - small piece
Cardamom - 1 
Bay leaf - 1 
Kalpaasi - a small piece
Ghee  - 1/2 tbsp
Oil - 1 tbsp
Water - 1 cup
Curd - 2 tbsp
Salt- to taste
To marinate the eggs
Ginger Garlic Paste - 1 tsp
Turmeric powder - a pinch
Red chili powder - 1/4 tsp
Salt - to taste

Procedure
First soak the rice for 40 mins. Cut the boiled egg vertically into two and marinate it with the ingredients listed under "To marinate the eggs" and set it aside for 20 mins.
Cut the onion into thin slices, eggs into small pieces and slit the green chili. Heat a thick bottom pan( here i'm using my cast iron pan) with 1/2 tbsp of oil and add half of the onions with pinch of salt &  saute the onions in medium flame till it's dark brown. Remove from the pan and set it aside.
In the same add the eggs with yolk side down and cook them it it's golden brown and flip into other side and cook for 30 secs. Remove from the pan and let it aside.
Add the remaining 1/2 tbsp of oil into the same pan then add whole gram masala spices(cinnamon, cardamom, cloves, bayleaf & kalpaasi).Saute it in oil for 30 secs, then add the onions, curry leaves, green chili & ginger garlic paste. Cook till the onions are soft.
Next add the tomatoes ,finely chopped mint & half of coriander leaves ,curd & spice powder(turmeric, red chili & garam masala powder) give a good mix.
Cook till the tomatoes are mushy and then add the water.
Next add the salt and bring into boil & drain the water from the soaked rice and add into boiling water.
Finally squeeze the lemon juice, give a good mix, cover it with lid  & let the rice cook for 5-8 mins.
When the rice is almost cooked and the water is almost absorbed add the eggs on the top and ghee.
Cover it with lid and put on some weight on the top and keep the flame in low for 10 mins and switch off the flame and let it covered for 15 more mins. Then open the lid and add the sauted onions and coriander leaves.
Mix well and it's ready to serve. We had it with onion raita & cauliflower fry. For more rice and biryani recipe, check out here

Notes:
  • For today's recipe, i have used ponni rice, but tried it with basmati rice also for many times, both tastes good for this biryani, so use whatever you like.
  • Don't over cook the eggs otherwise it becomes rubbery.
  • Highly recommend to add kalpaasi for this biryani.
  • Make sure to use pot/pan has heavy bottom otherwise it's easily get burned at the bottom.
  • Adding ghee at last gives great flavor to the biryani.
  • To avoid the escape of steam, you can use any weight on top of the lid. If your lid is flat, even pot filled with water works fine for making dum effect.
  • Don't open the pot at once when the stove is switched off, keep it covered at least for 10 - 15 mins before opening the pot.

Egg Dosa | Muttai Dosai

Muttai Dosai, a delicious & filling dosa recipe with egg. There are so many variations in egg dosa, here i'm gonna share the simple recipe that you can make in no time. This recipe comes handy on busy morning or when you run low on dosa batter and gives you a fulfilling breakfast. Though egg dosa is quite common in our house hold for breakfast/dinner, don't know why i haven't posted this recipe so far, may be thought that it's too simple to make a post.  

Dosa batter and egg are the only two main ingredients that you need to make this delicious dosa. For seasoning, you can use whatever the spice powder you like, here i'm using idli podi and that's our favorite to sprinkle on egg dosa. Simple salt & pepper also works well. In addition you can sprinkle some chopped coriander leaves on top. Even some people like to add thinly sliced onions on the top, so it's really up to you how you want your egg dosa. Now let's see how i have prepared my egg dosa.

Ingredients
Dosa batter - 1/4 cup
Egg -1 
Idli podi - 1/2 tsp
Sesame oil - 1/2 tsp

Procedure
Heat the dosa pan and make dosa as regular, crack open a egg on the center of the dosa.With the help of spoon, spread the egg all over the dosa. Sprinkle idli podi on the top and drizzle oil on the sides of the dosa.Once the bottom gets brown, gently flip the dosa and cook on other side wellThat's it, Tasty Muttai Dosai / Egg Dosa is ready to serve. It taste good as it is or you can serve it with sambar and/or chutney. For more breakfast item check out here 
Notes:
  • Instead of idli podi, you can sprinkle salt and pepper on top also.
  • If you find it difficult to spread the egg with spoon, then whisk the egg in a bowl and then add into the dosa.
  • Idli podi and sesame oil goes well together & gives great flavor to the dosa.

Parotta Stall Egg Kothu Parotta | Muttai Parotta

Egg Kothu Parotta, a delicious parotta recipe made with minced parotta and egg.In tamil "Kothu" vaguely means "minced", since egg and parotta is used in this recipe, it's called as Egg Kothu Parotta. 
Down south in Tamilnadu, parotta is more a emotion than food. Every street corner has at least one parotta stall. Though they are so many claim against consuming maida, people craziness over parotta never subsides. 

As for me, moderation is the key here and also try to eat as much as home made food right from parotta to pizza. That way you knew what goes into your food and as time goes by, you can develop the awareness of how much oil or cheese is needed to replicate the restaurant style parotta and pizza, once you get that realization, automatically our cravings and consumption is reduced. I'm not a expert in food or nutrition, it's just my humble opinion and learned through my cooking journey.

Ok, now come back to egg kothu parotta recipe, this can be prepared with fresh or with frozen parottas too, both tastes awesome. Back in days, when we visited my grandma place in Sankarankovil for summer holidays, egg kothu parotta was one of our favorite dinner from near by parotta stall where we had to mention how many parottas and eggs need to be added into our kothu parotta like 1:1(one parotta+ one egg) or 2:1(2 parotta + one egg).

There is no fixed ratio for parottas and eggs, some like more eggs in their parotta and ask for more eggs and vise versa. Later never seen such a thing in any other restaurant, so when you make them at home, you can add more or less eggs as per your liking. Now let's check out on how to make this egg kothu parotta.

Parotta Stall Syled Egg Kothu Parotta

Ingredients
Parotta - 3 
Egg -2 
Onion -1 (small)
Tomato - 1 (small)
Cinnamon - 1/4 inch piece
Cloves - 2 
Cardamom - 1 
Kalpaasi - a small piece
Ginger garlic paste - 2 tsp
Red chili powder - 1 tsp
Coriander powder - 2 tsp
Turmeric powder - 1/4 tsp
Oil - 1 tbsp
Salt - to taste
Coriander leaves - few

Procedure
First tear the parotta(for home made parotta) into small with your hands. Slice the onions thinly and slit the green chili and cut the tomatoes into small pieces and keep other ingredients ready.
Heat the pan with oil, add the whole gram masala spices(cinnamon, cardamom, cloves, & kalpaasi). And then add the onions,green chili & saute, till the onions become translucent.
Next add the ginger garlic paste and saute till they are aromatic and then add the tomato & spice powder(turmeric, red chili & garam masala powder) give a good mix & let it cook till the tomatoes are mushy.
Crack open the eggs and mix it well. 
Once the eggs are almost cooked add the parotta, mix it well until they are well coated with egg masala and let it in flame for 3-5 mins. Finally add some coriander leaves and switch off the flame.
Tasty Parotta stall style Egg Kothu Parotta is ready. Serve it with raita and/or salna

Notes:
  • It has mild spice for the given quantity
  • If you have any leftover salna or kurma, you can add 1/4 cup of that along with parotta for extra deliciousness. 
  • Serve it hot for best taste
  • Highly recommend to use kalpasi for parotta stall flavor, but you don't have just skip it, still it tastes awesome.

Egg Thokku | Boiled Egg Masala | Muttai Masala

Egg Thokku, a simple and delicious accompaniment made from the boiled eggs. It can be served as side dish for all types of pulao, biryani, meals or even with chapati/roti too. It's one of our favorite way of eating eggs and it's good for lunch boxes too. 

If you have followed my instagram page , you might knew that how many times i have packed this egg masala for ST's lunch box. So far he never get bored of this and keep on asking for making them whenever possible. 

One time, i had shared quick story  on how to make this on my instagram page . Many requested  the full recipe so here is the detailed post for this simple dish.
Now coming to the recipe, if you have boiled eggs in hand, within 10 mins, this muttai thokku will be ready. Take your time and saute the onions well, that will give that nice color & taste to this masala. Here in today's recipe, i have used curry masala powder since i was preparing as accompaniment for my mushroom biryani

But when i make the same as accompaniment for sambar / rasam rice, i would go for sambar powder to spice it up. So it's really up to you, what flavor you're looking for and you can use the spices accordingly. Now let's check out the recipe.

Egg Thokku, Muttai Thokku,Muttai Masala, Egg Masala Egg Thokku, a simple and delicious accompaniment made from the boiled eggs. It can be served as side dish for all types of pulao, biryani, meals or even with chapati/roti too.
Ingredients
Boiled Egg - 2 
Onion - 1/2 
Tomato - 1/2 
Turmeric powder - 1/8 tsp
Red chili powder - 1/4 tsp
Curry masala powder - 1/2 tsp
Salt - to taste
Curry leaves - few 
Coriander leaves - few
Oil -1 tsp

Procedure
Boil the egg and keep it ready, check out here on how to boil eggs perfectly. Cut the onion into thin slices and tomato into small pieces. Heat the kadai with oil, add the onions and curry leaves with pinch of salt. 
Saute till the onion become translucent and then add the tomatoes and spices(turmeric, red chili, curry masala powder) & salt.
Cut the boiled egg into halves and keep it ready. Cook till the tomatoes are mushy and the raw smell of the spices are goes off. 
Place the yolk side of the egg on the masala and cook it for 2 mins and then gently flip & cook the other sides too for 2 mins. Finally add the chopped coriander leaves on the top.
Tasty and spicy Egg Thokku is ready.

Notes:
  • Instead of curry masala powder, garam masala or sambar powder can also be used.
  • Adjust the spices as per your liking.
  • Boiled eggs shouldn't  be over done, soft boiled eggs would be great for this recipe
  • Don't cook the eggs for long time in masala, it should be rubbery.

Egg Paniyaram with left over dosa batter | Muttai Paniyram

Muttai/Egg Paniyaram, an easy to make paniyaram with leftover idli/dosa batter, eggs and some flavorful Indian spices. I love both the sweet and savory paniyaram  and make them at least once in a week.
This egg paniyaram is my recent favorite. Adding egg to the idli/dosa batter gives such a spongy and tasty paniyaram and also it hardly has any egg smell.

As i mentioned it already, the best thing about this paniyaram is that you can make them from the left over idli/dosa batter. No need to grind separate batter for this paniyaram. 

If you bored of regular idly and dosa, then try this egg paniyaram, all you need is some dosa batter,egg and basic tempering,Voila, your paniyaram batter is ready.

Egg Paniyaram

Preparation Time : 10 mins | Cooking Time : 20 minsServes :

Ingredients
Dosa Batter - 1 1/2 cup
Egg - 1
Onion(small) - 1
Oil - 1 tsp + for greasing
Mustard & Urad dal - 1/4 tsp
Chana dal - 1 tsp
Curry leaves - few
Coriander leaves - few

Procedure
Chop the onions into small pieces. Heat a kadai with oil, add mustard and urad dal, let the mustard splutters.
Add the chana dal and roast till it becomes golden brown,then add the onions & curry leaves and saute till the onions becomes translucent and switch off the flame.
Take the dosa batter in a bowl, in an another bowl, crack open a egg and beat it till it becomes frothy.
Add the egg into dosa batter, then add  the sauted onions and some coriander leaves. Mix it all well with dosa batter.
Heat the paniyaram pan, grease it will oil well, pour the batter into each hole of paniyaram pan and let it cook for around 1 mins in medium flame.
Then flip the paniyaram and cook on other sides till it becomes golden brown.
That's it, Tasty and spongy Muttai Paniyaram is ready.Serve it with your favorite chutney and/or sambar.

Notes:
  • The batter should be in pouring consistency, if it's too thick after adding the egg, then add some water to make it as pouring consistency.
  • Keep the flame in medium throughout the process.
  • I have used a large egg here.
