Karachi Biscuits | Tutti Frutti Cookies

Karachi Biscuits, a melt in your mouth cookie made with Tutti Frutti(candied raw papaya). It's one of the famous Indian tea time cookies and tastes absolutely great with a cup of hot chai. 

Adding  tutti frutti to the cookies enhances the taste and also the colorful tutti frutti makes the cookies more vibrant and appetizing.  


Most recipes for these cookies call for custard powder. As i'm not the one who buys the custard powder regularly at home, i thought of working around and make these cookies. 

So for the first trial, i tried the combination of all purpose flour and corn flour in these cookies and it turned out way more delicious than i had expected.  Ever since i have been following the same recipe and it yields perfect cookies every time.

This recipe was in the drafts for a very long time and i thought of posting it around this New year. But with all the travelling and spending time with the family, the blogging took a back seat. Finally now that i'm able to edit the post and post it before the end of January :-)

Karachi Biscuits | Tutti Frutti Cookies

Preparation Time : 10 mins | Cooking Time : 15 minsServes :

Karachi Biscuits, Tutti Frutti Cookies, Indian Cookies Karachi Biscuits, a melt in your mouth cookie made with Tutti Frutti(candied raw papaya).
Ingredients
Butter - 5 tbsp
Flour - 3/4 cup
Corn flour - 2 tbsp
Sugar - 1/4 cup(heaped)
Rose essence - 2 drops
Tutti Frutti - 2 tbsp
Milk - 1 to 2 tbsp

Procedure
First take the butter in a bowl, whisk it for 2-3 mins with electric/ hand whisk. then add the sugar.
Beat the mixture again for 2 mins until all the sugar mixed well with the butter. Next add the flours and the rose essence. 
Finally add the tutti frutti and mix it all well with your hand and then add the the milk (i have use 1 tbsp only) and make a stiff dough. 
Roll the cookie dough into rectangular log and wrap it with parchment paper. Keep the cookie dough in the refrigerator for 1 hr.
Preheat the oven @350 F.  Take the cookie dough out from the refrigerator and cut it into 1/4 inch pieces. Arrange it on the parchment lined baking tray and bake it  for 12- 15 mins.
Let it cool completely and store it in airtight container. Delicious Tutti Frutti / Karachi biscuits is ready to serve.

Notes:
  • It stays well for up to a week at room temperature.

Tutti Frutti Bun | Bakery Style Sweet Bun

Tutti Frutti Bun, a mildly sweetened bun that tastes great with a cup of tea/coffee. It's more or less similar to the sweet buns that are available in South Tamilnadu tea/bakery shops. When i made tutti frutti from watermelon rind,  had few recipes in mind to try it out and this sweet bun is one among them.

 Watermelon tutti frutti tastes so similar to the traditional ones made with raw papaya and couldn't find any difference in taste and texture in baked goods. As for the buns,I have used the Tangzhong method and it never fails to impress me. As expected,the bun turned out soft and fluffy.To know more about Tangzhong method, check out my pav bread where i had explained a little more.

During this quarantine time, i have been baking a lot and trying out all the baked goods that i had wanted to try and also from the bookmarks that are left untouched over years. It's been a while since i had bought a loaf of bread from store. Baking all the time seems overwhelmed at times, but most of the time it's so relaxing. More than cakes and muffins, i love to bake bread, buns and savory bakes, typically anything with yeasted dough !!

Ok, coming back to today's recipe, you can bake this bun without tutti frutti also, but keep in mind that the bun is very mildly sweetened so adding tutti frutti helps to enhance the sweet flavor a bit more, so i would highly recommend to add them. Now let's check out how to make this super fluffy sweet bun !!


Sweet Bun | Tutti Frutti Bun

Sweet Bun, Tamilnadu Sweet Bun, Bakery Sweet Bun, Tutti Frutti Bun,Bakery snack Tutti Frutti Bun, a delicious and mildly sweetened bun that tastes great with a cup of tea/coffee. It's more or less similar to the sweet bun that are available in South Tamilnadu tea/bakery shop.
Ingredients
All purpose flour - 1 cup 
Sugar - 2 & 1/2 tbsp
Salt - 1/4 tsp
Instant yeast - 3/4 tsp
Butter - 1 tbsp
Warm Milk - 2 to 3 tbsp
Cardamon powder -1/4 tsp
Tutti Frutti - 1/4 cup
For the flour roux
All purpose flour - 1 tbsp
Milk - 1/3 cup
* See Notes section at the end if you're new in baking

Procedure
Measure and take one cup of flour, take one tbsp of flour from that and put it in a sauce pan for making roux.
Add 1/3 cup of milk into the sauce pan and place it on heat, stir it continuously until it's thick. Remove from the flame and let it cool a bit.
In the remaining flour, add the yeast, sugar, cardamon powder & salt  and mix it well. Then add the butter and the prepared flour roux, mix it well with hands. Next add milk little by little and make a soft dough.
Knead the dough for 10 mins or until it's smooth and place it on the bowl and cover it with cling wrap and set aside for 1 to 1.5 hrs or until it's doubled.
After 1.5 hrs, punch out the gas from the dough and then add the tutti frutti & mix it well with the dough.
Divide the dough into eight equal parts and take each pieces of dough in between your palm and roll it smooth. 
Place it on the baking tray.Do the same for the all the dough and cover it with cling wrap and set it aside for 30 mins.
Preheat the oven @ 400 F. After 30 mins, brush the top of bun with milk sugar mixture(add 1 tsp of sugar in 2 tbsp of milk and use it for brushing).
Place it in the preheated oven and bake it for 20-22 mins. 
Tasty and fluffy Sweet Bun is ready !!!

Notes:
  • While preparing the roux, make sure to stir it continuously, it tends to clump together at the bottom quickly.
  • Cool the roux completely before use it in the dough.
  • Kneed the dough well  to get that soft , smooth & non-sticky dough. 
  • Add more or less of tutti frutti as per your liking.
  • For more sweetness, you can add extra 1 tbsp of sugar.
  • Adding little sugar in the milk for brushing the top of the bun helps to get that dark color on the top.
  • While brushing the top of the bun with milk, don't over do it, otherwise, the milk drips and make the bun sticks to the pan and it's hard to remove from the pan once baked

Indian Tutti Frutti from Watermelon Rind

Tutti Frutti, a colorful confectionery made from various candied fruits. Last year when i had  bought the "candied fruits & peel mix" from local store here in Canada, thought it was similar to tutti frutti available in India. But after the taste test only, realized that they were complete different. It has mix of candied fruits with various flavor, guess some are natural and some are artificially colored. Then started my search to understand how Indian tutti frutti is made !!!

In India, Tutti Frutti means artificially colored candied raw papaya  which is completely different from Western world Tutti Frutti. Throughout India it's widely used in bakery items like cookies, buns, cakes & so on.  My eagerness to make tutti frutti at home dropped when i knew that it's made from raw papaya. Because it's hard to source them here and also it takes years for me to finish off all the tutti frutti made from one whole raw papaya. Never used raw papaya in my cooking therefore don't know what else to make 

Recently through one of FB recipe sharing group, came to know this awesome recipe of making tutti frutti from watermelon rind. Stop !!! What is watermelon rind?? It's nothing but the white part in between the peel and pink flesh part. That's totally edible and also understood recently that it can also be used in making dosa, chutney, curries apart from this tutti frutti. Never tried any of those recipe, if tried, let you guys know. 

Ok, coming to the recipe, it's such a simple & easy recipe. Don't throw away the left over part of watermelon after eating the pink flesh. That's all you need to make this awesome tutti frutti. Totally amazed by the output when i had tried first time!! Hardly noticed any difference in taste & texture !! Now let's check out how to make tutti frutti from watermelon rind.

Tutti Frutti from Watermelon Rind

Preparation Time : 1 hr | Cooking Time : 15 minsServes : 1/3 cup

Tutti Frutti,Watermelon Rind, Indian Tutti Frutti,How to make, Homemade Tutti Frutti Making Indian Tutti Frutti from watermelon rind is so easy !! The taste and texture is so similar to the original which are made from raw papaya.
Ingredients
Watermelon rind - 1 & 1/2 cup(chopped)
Sugar - 1/2 cup
Water - 1 & 1/2 cup
Food colors - few drops

Procedure
Take the watermelon rind and peel the skin and try to remove all the pink flesh part(if there is any left)
Cut them into stripes and later into small cubes. 
In a sauce pan, add the sugar and water & put it on the flame.
Once the sugar is all melted, add the watermelon rind . Let it comes to boil and keep the flame in low and simmer for 10 - 12 mins.
Remove from the flame and let it cool a bit. The watermelon rinds look transparent when it's cooked. Divide the cooked watermelon rind into three equal bowl.
Add few drops of food colors(i have used yellow, red and green) in each bowl & mix it well.Let it sit aside for 1 hr.
Then drain the excess sugar syrup and spread it on plate and let it dry completely. When it dries, it shrink its size.  
Tutti Frutti is ready. Store it in air tight container for future use. It can be used in all types of sweet bakery items . Check out  this coconut bun/thengai bun recipe on how i have incorporated tuttti frutti in it
Notes:
  • Cook the watermelon rind until it's transparent and still retains its shape. Don't over cook them otherwise it would be mushy.
  • Use any color as you like.
  • For orange color, i have used mix of red & yellow color.
  • Make sure to let it dry completely and then store it.
  • Initially when the tutti frutti is wet, i have used  parchment paper to avoid the color getting transferred to the vessel, once it's non sticky, transfer into clean plate for further drying.
  • Color get intensify when it's dried completely.
