Butter Cake | Easy Tea Cake

Butter Cake , a delicious, rich and soft cake with wonderful butter flavor. It's one of my favourite cakes to bake for evening snacks. It's such an easy cake and the output is awesome every SINGLE time.

My kid loves this butter cake so much and he asked for this cake as an after school snack. So ever since he started school, i have baked this cake almost every other week and now i almost lost count how many times that i had baked this cake for the past three months.

If you're looking for a make ahead snack for your kids, i would highly recommend to give a try on this. I'm sure that you and your kiddo will love this. 


Couple of years back, i saved this recipe from somewhere and i don't even know where it was from, now. Few months back , when i browsed through my drafts, i noticed this cake and tried it and it turned out super delicious. Ever since it became a regular in our house. 

Usually i bake this cake in a small loaf(4*7) which is enough for our small family , so here i'm sharing the recipe for a small loaf only. It would be sufficient for 2-3 people for one serving. If you're looking to bake a larger cake, you can easily double or triple the recipe. 

Flour

For the recipe that i have shared today , i have used only all purpose flour. But i tried the same recipe with the combination of wheat flour and all purpose flour as well as only wheat flour(aata). 
To be honest, i don't see any major difference in taste and texture. The color of the cake only differs with the wheat flour. So use whatever flour you have or like.

Butter Cake | Easy Tea Cake

Ingredients
Butter - 1/4 cup
Sugar - 1/4 cup
All purpose flour - 1/3 cup + 2 tbsp
Salt - a pinch
Baking powder - 1/4 tsp
Vanilla Extract - 1/4 tsp
Milk - 2 tbsp
Egg - 1

Procedure
Preheat the oven @ 350 F. In a bowl, add the softened butter and sugar. Whisk the both together for a couple of mins.

Then crack open an egg and add it along with vanilla extract. Whisk it all together well. It may look curdle but that's totally fine. 
Next place a siever over the bowl and add the flour, baking powder and salt. Sieve it into the egg butter mixture and mix it well.
Then grease the baking tray with butter and dust it with the all purpose flour. Place a parchment paper on the bottom and transfer the cake batter into the pan. Bake it in the preheated oven for 40 mins or until the toothpick inserted in the center of the cake comes out clean.
Delicious and spongy Butter cake is ready !

Notes:
  • Make sure all the ingredients are at room temperature.
  • Slice the cake when it's cooled down completely. It give a neat slices.

Gulab Jamun Cake with Flour Buttercream frosting

Gulab Jamun Cake with Flour Buttercream frosting , a delicious and spongy cake with full of Indian flavors. This cake is perfect for any celebrations like Birthdays, Anniversary or Get-together. 

If you're bored with the traditional vanilla / chocolate cake and looking for some unique cake with exotic flavors, then you must give a try on this Gulab jamun cake. 


Today I'm sharing this delicious cake recipe to announce an extremely happy news in our life. Our son Kavin was born on Dec 21,2021 and we're overjoyed by his arrival into our life. Although life has been crazy busy right now and we hardly find any free time, it's a dream come true moment for us. So we're enjoying every second of it !

Though I have this post and pictures on my drafts for a while, it took a couple of weeks to write the intro alone. You know, it's a typical newborn phase of life ! 

 
Ok, Before moving on to the recipe let me answer some FAQs 

Can i use the store bought Gulab Jamun for this recipe?
Yes, sure you can ! The canned gulab jamun works very well for this recipe. But in this recipe, i have used the home made gulab jamun ! 

Can i make this cake ahead and store it in the refrigerator?
Yes, this cake store well in the refrigerator. You can make this cake ahead of one or two days before you need. 

What are the other flavors that can be used in this cake ?
Instead of rose essence, you can use vanilla or butterscotch essence also. But personally, i like rose essence for this cake since the gulab jamun also has rose flavor already.

Can I bake the cake earlier and do the frosting later?
Yes, of course ! You can bake the cake one or two day before and do the frosting when needed.

What other nuts can be used for decorations ?
Here in today's cake, I have used pistachios, but you can use whatever nuts you like or simply omit the nuts. It would be fine and taste great as well.

Ingredients
For Cake 
All Purpose Flour  - 3/4 cup
Sugar - 1/2 cup
Milk - 1/3 cup
Curd - 1/4 cup
Oil - 1/4 cup
Baking Soda - 1/4 tsp
Baking Powder - 1/2 tsp
Cardamom powder - 1/2 tsp
For Frosting 
All purpose flour - 2 tbsp
Milk - 1/2 cup
Butter - 1/2 cup
Sugar - 1/2 cup
Rose essence - a few drops

Procedure
For the cake 
First preheat the oven @ 350 F. Next sieve the flour, baking soda and baking soda in a large bowl. If there is any lumps left out, rub it with your finger and add it in the bowl.
Next add the sugar, milk, curd and oil one by one.
Finally add the cardamom powder and mix it all together with a whisk until it became a smooth batter.
The batter should be smooth and flowy as shown below. Then butter the baking pan and lined it with parchment paper.
Pour the batter into the prepared pan and bake it in the preheated oven for about 40 mins or until the tooth pick inserted in the center comes out clean.
Take the pan out of the oven and invert the cake on to the cooling rack and peel off the parchment paper. 
Once the cake is completely cooled, wrap it in a cling wrap and put it in the refrigerator for about 1 hr.
For the frosting.
Now let's prepare the frosting, in a sauce pan, add the flour, milk and the sugar. Whisk it all together and put it in the heat . 
Whisk it continuously till it became a roux.
Transfer the roux into a bowl and cover it with cling wrap. Make sure the cling wrap touches the roux, it helps to avoid forming skin on the top. Put it in the refrigerator until it cooled down completely.
Next take the softened butter in a bowl and whisk it till it's creamy.
Then add the prepared flour-sugar roux and rose essence and whisk it all together well until it's creamy and fluffy. Now the delicious flour butter cream is ready ! 
Take the cake from the refrigerator and cut into two. Here i'm using the floss to cut the cake. 
Add a couple of tsp of gulab jamun sugar syrup all over the cake and then add 1/4 f the buttercream on top of the cake.
Spread it evenly on the cake. Next add some sliced gulab jamun and again add 1/4 of buttercream and spread evenly.
Next place the other half of the cake on top of it and then add the remaining buttercream and cover the cake completely.
Finally decorate the cake with gulab jamun and some finely chopped nuts on the sides! Delicious Gulab Jamun cake is ready !
Notes:
  • You can store this cake in the refrigerator for upto 5 days.
  • Instead of rose essence, you can also vanilla or butterscotch essence

Christmas Fruit Cake | Christmas Plum Cake

Christmas Fruit Cake/Christmas Plum Cake, a delicious and super easy cake to bake on this festival season. Few years back, i shared the eggless christmas fruit cake recipe , instead of eggs, i had used buttermilk in it. Do give it a check if you're looking for eggless one.

I had been searching for Christmas plum cake recipe with eggs at the same time without the dominant egg flavor like the one we get in the Indian bakery in the name of Christmas cake/Plum cake/Kerala Plum cake and finally my search end with this recipe. 

The recipe is super easy, no need to soak the nuts & fruits, alcoholic free and it can be made in a hour, what more we need, right? The basic recipe is from joyofbaking but i have tweaked a little bit with the flavoring that suits to our taste.

If you're looking for a Christmas plum cake /fruit cake recipe that the indian bakery sells during the christmas time, then you must try this recipe, even i couldn't believe how perfect they were when i had baked it for the first time. I have been baking this cake for a while now and it turns out perfect every "SINGLE" time. 
Baking is not the method of preparing food when i grew up, so i highly relay on the recipe available online, but the thing is every recipe(there are few exception) available online is for whole loaf or full cake, so i couldn't bake as much as like because if it turned out good, it takes days to finish and if not, the whole thing went to trash.

Then i found the solution and invested it in mini baking dishes(because if you baked  the reduced quantity in the full pan, the result won't be the same) like the loaf pan i have used here, similarly i have few other basic baking dishes in the mini size. So now, either i have halved or sometimes quartered the recipe available online and work around with the mini baking dishes i have. 

If you're new in baking, don't buy all those big baking dishes impulsively unless you really need it. Start with small one first until you get confident in baking :-) A little something that i had learned while learning baking myself.
Now come to today's recipe, the dried fruits and nuts i have used in the recipe are my favorites.You can add any types of candied peel, tutti fruits and the nuts you like. Make sure to cut the nuts and dried fruits into small pieces such that it get evenly distributed in the cake. Next the spices, i have used equal amount of ginger, cinnamon & cloves, if you don't like any one of these, leave that out and add the others more.

And lastly this cake taste best from the day after baking, so give it a rest for one day to the flavor gets intensified. Now let's check out the recipe for this delicious cake. Happy Holidays and Merry Christmas to all whose who celebrate.

Christmas Fruit Cake | Plum Cake

Preparation Time : 15 mins | Cooking Time : 35 minsServes : 2 mini loaf

Ingredients
All purpose flour - 3/4 cup
Raisins - 1/2 cup
Dates & Dried Plums- 1/3 cup(chopped)
Orange zest - 1 tsp
Lemon zest - 1/2 tsp
Dried Nuts - 1/3 cup(i have used pecan, walnuts & almonds)
Light brown sugar - 1/2 cup
Butter - 2 tbsp
Cinnamon powder - 1/2 tsp
Cloves powder - 1/2 tsp
Ginger powder - 1/2 tsp
Salt - 1/4 tsp
Baking Soda - 1/2 tsp
Water - 1/2 cup
Egg -1 
Vanilla extract - 1/2 tsp

Procedure
Preheat the oven at 325 F. In a sauce add the raisins, dates & plums, then add butter, spice powder (cinnamon, cloves & ginger powder) ,salt & brown sugar.

Finally add the water and put it on the flame, let it bring into boil and let is simmer for 3 mins. Switch off the flame and let it cool.

Raisins would be puffed up after boiling. Crack open the egg in a bowl, add vanilla extract and beat it smoothly.
In the fruit- sugar mixture, shift the flour and baking soda, then add the egg mixture.
Next add the nuts ,orange & lemon zest. Mix it all together until it's combined. 
Butter the pan and line it with parchment paper. Pour the batter into the pan and bake it for 30-40 mins or until the tooth pick inserted in the center comes out clean.
Keep it in the counter for few mins, then gently flip the cake on the wire rack on remove the parchment paper.
Let it cool completely on the wire rack. Slice and store in air tight container.
Tasty Christmas Fruit Cake/Christmas Plum Cake is ready.
Notes:
  • Using sharp knife to cut the cake.
  • I have used my mini loaf pan. The dimension is  5.75 x 3
  • Make sure the raisins are puffed up in the sugar syrup before adding other ingredients.
  • Adjust the spice level according to your side, the given quantity has mild flavor.
  • You can double the recipe and use the regular size loaf pan to bake.

Ice cream Cake | Coffee Cake | Coffee Ice cream Cake

Ice cream Cake/bread, an quick way of making cake with just 2 ingredients such as ice cream & self rising flour. As i don't have self rising flour, here in the recipe i have used all purpose flour and it turned out very tasty.The texture of this cake is quite in between cake and bread,so you can call them as either cake or bread.
So far i have tried this cake with vanilla ice cream and coffee ice cream and i like the cake made with coffee ice cream more than vanilla. First time, when i had tried with vanilla ice cream, i used 2 cups of ice cream for 1 & 1/2 cup of flour & the cake turned out soft but it didn't rise much, later when i tried with coffee ice cream, i have increased the ice cream quantity to 2 & 1/4 cups and it turned out as i expected and rise well.Also depends on your flour quantity,it may absorb more or less liquid, start with 2 cups of ice cream, if the batter is too thick,add the extra 1/4 cup of ice cream.  



Ice cream Cake

Preparation Time : 10 mins | Cooking Time : 45 minsMakes : 1 loaf

Ingredients
Ice cream(coffee flavored) - 2 &1/4 cup
All purpose flour -  1 &1/2 cup
Baking powder - 2 tsp
Salt - 1/2 tsp
Chocolate Chips - as needed

Procedure
Preheat the oven at 350F.
First measure the flour, baking powder and salt and sieve it once to make sure that all mix together well. Take the ice cream out of freezer and let it soften.Mix the ice cream with spatula well and make sure it's creamy and smooth,pour into the flour mixture & mix it well with spatula.Add chocolate chips and mix it well and then pour into the buttered baking pan.On the top, add some more chocolate chips and bake it in the preheated oven for 30-45 mins or until the tooth pick inserted in the center comes out clean. Let it cool for few mins in the pan.Run the knife around the edges and flip the pan on the wire rack. Tada, your cake is ready, let it cool completely and then slice & serve.Tasty Coffee Cake is ready.


Notes:
  • I kept the ice cream out of freezer for an hour before starting the process or you can microwave it for 30 secs to make it smooth & creamy.
  • Chocolate chips gives great taste to this bread.
  • You can make this with any of your favorite ice cream flavor.
  • Mine got ready in 45 mins, but after 30 mins, you keep an eye on the oven since every oven is different and it might takes different time.
  • If you have self rising flour, you can use 1 & 1/2 cup of self rising flour instead of flour,baking powder and salt.
  • Always use full fat ice cream for better taste.
