Vazhaikkai Puttu | Vazhaikkai Podimas | Raw Banana Stir Fry

Vazhakkai Puttu also known as Vazhakkai podimas is the one of authentic dishes made with raw banana and it's famous in Tirunelveli District of Tamilnadu. 

It's a  simple stir fry of raw banana with onions & grated coconut. But the flavor and the taste is simply amazing. It's one of my favorite accompaniments for lunch and I prefer this over Vazhaikkai varuval any day!. 

Most people outside Tirunelveli District are not much aware of this dish and in some places it's known as  "Vazhakai Podimas". But in and around of Tirunelveli, if any veggies are grated or thinly sliced and make stir fry with it, then it's known as "Puttu" instead of "Poriyal"

It's one of the recipes that looks so simple and easy but it can easily go wrong and in the end you will be left with mushy banana. When I tried this for the first time, it was a total disaster. After a lot of attempts, now i say that i can make perfect Vazhaikkai puttu, 
So there are few places that you need to be very careful for making fluffy,tasty and non-sticky vazhakkai puttu/podimas. 
Here are few things to be taken care for delicious vazhakkai puttu
  1. Not all types of raw banana work for this recipe. In Tamil we call "Naatu Vazhakkai" that's the best for this recipe because it yields a large quantity when it's cooked and grated or you can try it with a banana that has thick and firm flesh. 
  2. The whole raw banana should be immersed in water while boiling for even cooking.
  3. While boiling the raw banana, rotate it a couple of times for even cooking.
  4. Cook the raw banana till it's fork tender. Don't overcook otherwise it's difficult to grate the cooked raw banana.
  5. Grated raw bananas should look like grated coconut ! That's the sign of a perfectly cooked raw banana.
  6. Let the raw banana cool completely before grating.
  7. Keep the flame in lowest possible after adding the grated raw banana in the tempering to avoid sticking at the bottom.

Vazhakkai Puttu

Ingredients
Raw Banana - 1 
Onion - 1 small
Green chili -1
Salt - to taste
Mustard & Urad dal - 1/2 tsp
Oil - 1/2 tsp
Curry leaves - few
Grated coconut - 11/2 tbsp

Procedure
Bring 2 cup of water to boil, cut the banana into two and add into the boiling water and keep the flame in low . Cook it for 8-10 mins. At that time, the skin color of banana gets changed and also it's tender when it's pressed
Remove the banana from water and allow to cool completely.Peel the skin and the grate it with grater.
Now add enough salt to the grated banana and mix it well with your hand. Cut the onions into thin slices and split the green chili.
Heat the oil in a nonstick pan, add the mustard & urad dal,once mustard splutters, add the onions,chili & curry leaves along with pinch of salt.
Saute it well until the onions becomes translucent and then add the grated banana ,give a quick stir.
Close the pan with lid and keep the flame in low,let it be for 2 mins. Then open the lid and add the grated coconut , stir well and switch off the flame.
Tasty Vazhaikai Puttu is ready. Serve it as accompaniment for lunch. 

Notes:
  • Suppose your banana is  undercooked, dont worry, after adding the grated banana in the pan, sprinkle a little water and close it with lid and cook it for few more extra minutes.
  • Don't stir frequently, it will make the banana mushy.  
  • Sometime i use large hole in grater and sometimes i use small holes. The step wise pic and the end pics are taken on different days. So there is a difference in the size of the grated banana.

Egg poriyal | Egg podimas|Muttai Poriyal| Scrambled Egg with Indian spices

Egg podimas / Muttai poriyal , a quick & easy to prepare side dish within a  few minutes. Whenever i'm not in the mood to cook anything elaborate and still want a delicious accompaniment then this egg podimas is my first choice. life saver. It tastes great with both rice and rotis.


I personally like to add some tomatoes to my podimas for two reasons. Firstly it tastes better with tomatoes. Secondly, it gives an appetizing  color to the podimas.  So it's really up to you how you like your eggs. I'm sure that everyone has their one way of making this podimas and here is my take on it.

Now let's check on how to make this delicious egg podimas.

Egg Podimas/Poriyal

Preparation Time : 5 mins | Cooking Time : 10 minsServes : 1 or 2

Egg Podimas, Muttai Poriyal, Egg Poriyal Egg podimas / Muttai poriyal , a quick & easy to prepare side dish within a few minutes.
Ingredients
Egg- 2 nos
Onion - 1(small)
Tomato - 1/2 of medium size
Green chili - 1 
Curry leaves - few
Turmeric - pinch
Red chili powder - 1/4 tsp
Coriander leaves - few
Oil - 1/2 tsp
Mustard & urad dal - 1/4 tsp
Salt - to taste


Procedure
First cut onions, tomatoes & green chili into small pieces and keep other ingredients ready. Heat the pan with oil, add the mustard let it splutter, then add the urad dal.
Add onions, green chili & curry leaves one by one and saute till the onions became translucent.
Add the tomatoes & spices (turmeric & chili powder).
Add salt(just enough to the masala) & saute till the tomatoes becomes mushy and then crack open the 2 eggs in the pan.
Now add salt  for egg & mix it together well . Stir it continuously(to avoid sticking at the pan) till the eggs are cooked. 
While mixing, if you have any large chunks, keep the spatula in perpendicular and break it. Once the eggs are cooked, it doesn't stick to the pan,immediately switch off the flame and add some chopped coriander leaves. 
Egg podimas is ready to serve. You can serve this with rice or pulao or even with chapathi.

Notes:
  • While cooking the egg, with the help of spatula, just break the egg & cook(like how we make kothu poratta), it will help to make fine podimas without any big chunks.
  • Adding the tomatoes helps to retain the moisture in the podimas 
  • Dont over cook the eggs, otherwise it became rubbery.
  • If you like extra flavor, add 1/4 tsp of garam masala along with other spices.
  • Adjust the spice level according to your preference.

Potato Podimas | UrulaiKizhangu Podimas | Urulai Podimas

Potato podimas, a simple stir fry made with potato and flavored with garlic & coconut.I like this potato podimas more than the normal potato curry( with red chili powder). I still remember that there was a time,i like only potatoes and this podimas was my favorite(still it does).I didn't mind to have them in lunch box daily.
If you have cooked potatoes in hand, then you can prepare this dish under 15 mins.
It's very mild in spices and dominant in garlic & coconut flavor,it goes well with any spicy kuzhambu and rice.Generally i paired them either with Puli Kuzhambu or Sambar. This podimas taste best when you use pearl onions instead of big onions,but today i have used big onions only as i don't have stock of pearl onions.

Potato Podimas

Preparation Time : 10 mins | Cooking Time : 15 minsServes :

Ingredients
Potato - 3 medium size
Onion -1 small
Grated coconut - 2  tbsp
Garlic - 2 pods
Green chili - 1 to 3 
Coriander leaves - few
Salt - to taste

To Temper
Oil - 1 tsp
Mustard - 1/4 tsp
Split Urad dal - 1/2 tsp
Curry leaves - few


Procedure
Cook the potatoes in pressure cooker for 3 whistle. Once cooled peel the skin and cut into small cubes.Cut the onion into thin slices, slit the green chili and crushed the garlic and keep everything ready.Heat the oil in a pan and temper the ingredients listed under "To Temper". Then add the onions,green chili and saute  until  onion become translucent.Then add potatoes along with salt and saute it well.
Mashed the potatoes slightly with the ladle and then add grated coconut along with coriander leaves. Saute it till all blends together. 
That's it, Quick & Tasty Potato podimas is ready.  
Notes:
  • If you want extra spice, grind the green chili and add it. But don't add too much, the mild sweetness from coconut gives great taste to this dish.
  • If you wish , you can add ginger garlic paste, instead of crushed garlic.
