Uzhuntha Vadai/Medhu Vadai


Urad Dal - 100 gms
Shallots - 20-25 nos(if you're using big onion ,then take one medium size onion)
Green chili - 2 nos
Curry leaves - few
Crushed peppercorns - 1/2 tbsp


Soak the urad dal for atleast 2 hrs.Cut the shallots, curry leaves  & chili into small pieces.

Grind the urad dal along with salt into fine paste by using wet grinder(dont add too much water while grinding ).If you are using mixer ,dont allow the batter to get heated up.While grinding give some break in betweeen.

Now mix the shallots,curry leaves,chili & peppercorns with the batter.

Heat oil in a pan for deep frying .

Take small amount of batter in the hand,flatten it and make holes in the center and put it in the hot oil.(you can also using plastic cover or banana leaves for flatten it).If you add too much water while grinding and not able to make the shape,add little bit of rice flour.To avoid the batter sticky to hand, apply some oil on hand.

Fry it until it becomes golden brown.After that drain oil from the vada and place it on tissue paper to absorb excess oil.

 Now the delicious Uzhuntha Vadai is ready to serve.

If you grind the batter into right consistency,Vadai will have crispy outside and fluffy inside without adding any other additional stuff.
