Ulunthu soru | Ulundhu Satham | Black Urad Dal Rice

Ulunthu soru is one of the signature dish of Tirunelveli district and nothing beats the combination of ulunthu soru with mutton kuzhambu. It's one of the dish that we used to prepare at our family get together.

Many people dont like this rice, because of  the sticky nature of the dal in the rice. But my mom makes this rice as fluffy and it's not at all sticky. There are two things  to  do to get fluffy rice. First one is roast the dal before add it into the water and the second one is  add sesame oil in the rice.

Sesame oil gives non sticky rice and also it gives great flavor to this rice.Even some people add sesame oil to this rice just before serve. Urad Dal & Sesame oil goes very i highly recommend to add sesame oil.

I like to have this rice with curd , i think i inherit this habit from my appa. He likes to have curd with any one pot meal like kootan soru, paruppu satham etc., so am i. Ok. enough with stories, will see the procedure now.

Rice - 3/4 cup
Black split urad dal - 3 tbsp
Garlic - 10 pods(small)
Cumin seed - 1/2 tsp
Fenugreek seed - 1/4 tsp
Grated Coconut -  3 tbsp
Water - 2 1/4 cup
Sesame seed oil - 1 tbsp
Salt - to taste
Curry leaves - few
In a kadai, dry roast the urad dal slightly(dont change the color of the dal) & also keep garlic,cumin & fenugreek seed as ready.Soak the rice for 15 mins. In the mean time, heat 21/4 cup of water in a pressure cooker/pan and add garlic ,cumin & fenugreek seed.Once the water comes to boil, add the urad dal & keep the flame in low and let it boil for 10 mins.After 10 mins add  the rice, salt & coconut & mix it well.Finally add the sesame oil in the rice , mix it well, close the lid and put on weight & cook it for 3 whistle.Tasty & very healthy ulunthu soru is ready. We had it with mutton kuzhambhu, one of the best combo . If you're vegetarian, then try uluntha soru with tomato pachadi & aviyal , another best combo. 
  • Dal to rice ratio is 1:4 .
  • Water to rice & dal ratio is 2:1, since i used 3/4 rice & 3 tbsp dal, i add 2 1/4 cup(11/2 for rice & 1/2 for dal . I added extra 1/4 cup, since i cooked the dal in open pot for initial 10 mins) of water.
  • If you want mushy rice, add extra 1/2 cup of water.
  • Garlic & cumin seed gives great flavor to this rice.
  • Add curry leaves before close the lid , since i didnt have stock on that day, i skiped it.
  • Even you can unskinned urad dal, but skinned dal gives great flavor & taste.
