Broccoli Cheddar Soup | Easy Soup Recipe

Broccoli Cheddar Soup, a delicious, creamy & cheesy soup, perfect for cold winter nights. My love for soups started only after I started to travel outside India. Before that, I liked to taste only a few spoons of soups mainly because I didn't grow up having soup as a meal and also the soup that I had tasted in many Indian restaurants were simply the diluted version of curries.

Later, slowly i became a soup fan, all credits to panera bread restaurant which is my go to place for lunch/dinner whenever we're traveling.  This broccoli cheddar soup is my humble attempt to recreate the panera bread style soup with minimal ingredients. I won't say that this soup tastes exactly like a restaurant but it's simply delicious without any cream or fancy ingredients !

Moreover, now , the weather here in Canada demands more soup for winter nights.  Like i said in my hot chocolate post, soups are also a perfect winter food. Having a bowl of hot soup gives such a cozy and warm feel. I can't image having soup as meal on hot days and that makes me wonder how easily weather influences our food habits and moods. 

Ok, enough with my rambling, let's move on to the recipe. Usually i make soups for nights and one day when i had shared this soup on my IG story, many requested to share the recipe. So last week, i prepared this for our lunch that way i can take some decent pictures and share the recipe here. Now , let's check out on how to make this creamy delicious broccoli cheddar soup.

Ingredients
Broccoli Crown - 1 (medium size)
Celery stalk - 3 
Onion - 1/4 
Carrot - 1 
Garlic - 3 gloves 
Butter - 1 tbsp 
Olive oil - 1 tsp
All purpose flour - 1 & 1/2 tbsp
Vegetable stock - 2 cups
Milk - 2 cups
Cheddar Cheese - 3 tbsp
Chili flakes - 1/2 tsp
Italian Seasoning - 1 tsp 
Pepper powder - 1/2 tsp
Salt - to taste

Broccoli Cheddar Soup
Procedure
Cut the broccoli crown, celery stalk and onion into small pieces. Cut the carrot into thin slices and minced the garlic finely. Heat the oil & butter in a sauce pan, add garlic.
Saute till the garlic is fragrant and then add the onion,carrot & celery and give a good mix. 
Next add the broccoli and saute them all in butter-oil mixture. Then add the flour & mix it well. 
Next add the vegetable stock and milk.
Then add the salt, chili flakes and italian seasonings. 
Simmer for a while till the veggies are soft. Once the veggies are cooked, transfer half of them in a blender jar and grind into smooth puree(if you have a immersion blender, use it here) and then transfer back into sauce pan.
Finally add the cheddar cheese and pepper powder. Bring into a gentle boil and switch off the flame.

Tasty and flavorful Broccoli Cheddar soup is ready to serve. For more soup recipes, check out my soup collections

Notes:
  • Add more or less of liquid as per your liking.
  • For more creamy texture, reduce the milk quantity and add a little bit of cream.
  • This soup thickens as it cooled down.
  • Instead of soup, you can use water also.

Celery Soup | Celery Soup without Cream | Soup Recipe

Celery Soup, creamy and delicious soup made from celery stalk. Last week, after prepared the Fasolada soup, i left out with lot of celery stalk. As i don't use celery in my day to day cooking, i don't know what to do,later while searching online, i landed at martha stewart's celery soup recipe. It looks quite simple yet so creamy,so thought of give it a try. 

Yesterday i prepared this celery soup with a very few changes to suit our taste,as expected,it turned out so creamy and delicious. If you love celery flavor, then definitely give a try on this soup, you won't be disappointed for sure.

Celery Soup

Ingredients
Celery - 5 to 6  stalk
Potato - 1
Onion(small) - 1
Butter - 1 tbsp
Dill leaves - 1 tbsp(optional)
Water - 2 cup
Salt - as needed
Pepper - as needed

Procedure
First chop the celery into 1/2 inch pieces, peel the potato and cut into cubes, cut the onion roughly into cubes.Heat the sauce pan with butter, add the onions and saute till it becomes translucent.
Then add the celery & potato and saute in the butter for 2 mins.
Add the water and bring into boil.Keep the flame in medium and cover the sauce pan with lid and cook till celery and potato becomes tender.
Let it cool completely and then add into mixie/blender jar along with dill leaves and grind into smooth paste.
Transfer into sauce pan,add the seasoning(salt & pepper powder) & heat the soup till it becomes warm.
That's it,Creamy and delicious Celery Soup is ready.
Notes:
  • If you don't like dill flavor, you can skip that.
  • Instead of water,you can use equal amount of veg or chicken stock.
  • Adjust the water as per the consistency you like.

Fasolada | Greek Bean Soup | Soup Recipe

Fasolada is a greek soup made from white beans/lima beans along with vegetables mainly carrot and celery. It's also called as "National food of Greek". 

According to wiki, it's similar to the ancient greek dish made of broad beans and vegetables,strictly without meat which was used to sacrifice to Greek God Apollo during the festival Pyanopsia,an ancient greek festival to honour the God Apollo.


Traditionally, this soup was prepared by cooking beans in large pot for hours and in between all the veggies are added.But here i have used my pressure cooker to make the process easier and faster. 

This is the first time, i'm trying soup with some beans, to be honest it was so delicious and the flavor was so wonderful. Olive oil and celery gives nice flavor to the soup and the tomatoes gives bright color and required tanginess. Over all, we totally love it and i'm gonna make this again soon 😄


Fasolada | Greek Bean Soup

Preparation Time : 8 hrs for soaking | Cooking Time : 30 minsServes :

Ingredients
Lima Beans/White Beans - 1/2 cup
Celery sticks - 2 
Red Onion(small) - 1 
Carrot - 1
Tomato* - 2 
Olive Oil - 1 tsp
Paprika - 1/2 tsp
Salt - to taste
Pepper - to taste 
*Instead of tomato, you can use 2 tsp of tomato paste too.

Procedure
Soak the bean in water for minimum 8 hrs or overnight.In the next morning, drain the water from the bean and add into the pressure cooker along with 1 cup of water and 1/4 tsp of salt and cook it for 3 whistle.
In the mean time, chop onion into small pieces,carrot into thin slices and celery into 1/2 inch pieces.Heat the sauce pan with olive oil, add the onions and saute till it becomes translucent.
Then add the carrot and celery and saute it in the oil for 2 mins. Chop the tomatoes roughly into small pieces, add into the mixie/blender jar and grind into smooth puree.
After 2 mins of sauteing the veggies, add the tomato puree into veggie along with 1 cup of water.
Add paprika & salt and bring into boil.
Then add the cooked beans along with the cooked water and let it simmer for 20 - 25 mins.
That's it, Healthy and Tasty Fasolada/Greek Bean Soup is ready.While serving, add pepper powder as needed.
Notes:
  • Instead of tomato, you can use tomato paste.
  • Use well ripe tomatoes to get the bright red color.
  • Let the soup simmer for atleast 20 mins to infuse the flavor well.
  • Minimum 8hrs of soaking bean is must to get the soft cooked beans.
