Susiyam | Suzhiyam | Diwali Recipe

Susiyam , a delicious deep fried sweet made from the channa dal and jaggery. It's one of the famous sweet in Tirunelveli area and it's often prepared on festive days like deepavali/diwali and Aadi Pandigai. 

In our family, we make this susiyam for deepavali and Aadi festival along with all the vadas and serve as offering to the god. It's one of the authentic sweet that has been prepared in our home town for generations. 

The chana dal stuffing for this susiyam is quite similar to the poornam of modak kozhukattai that we used to prepare on vinayagar chathurthi. 

So with the same stuffing, you can make two sweets, after making the susiyam, usually i reserve some of the stuffing in refrigerator and the next day i would be making the kozhukattai with the same stuffing and vice versa.

Ok, now let's check out how to make authentic sweet recipe.

Susiyam

Chana dal pooranam, Susiyam,Suzhiyan,Authentic tamil sweet, Diwali Sweet,Jaggery Susiyam , a delicious deep fried sweet made from the channa dal and jaggery. It's one of the famous sweet in Tirunelveli area and it's often prepared on festive days like deepavali/diwali and Aadi Pandigai.
Ingredients
For Stuffing
Channa Dal - 1/2 cup
Jaggery - 1/2 cup
Cardamom - 2 nos
Grated Coconut - 3 tbsp
Oil for frying
For Outer Layer
Maida - 1/2 cup
Salt - 1/4 tsp
Water - as needed


Procedure
Soak the channa dal for 1/2 hr .
In a sauce pan, bring 3 cup of water to boil, add the channa dal and allow to cook.
The channa dal should not be mushy, if you press the channa dal in between your fingers, it should be pressed.That's correct stage, switch off the flame, drain the dal and dry it on neat kitchen cloth until the extra water is absorbed.
Put the chann dal in the blender and pulse it for few seconds, it will become powdered easily and keep it aside
Heat the  wide pan, add the jaggery with litltle water & crushed cardamom, allow the jaggery to melt and bring it to boil.
Add the powdered chann dal, mix it well, then add coconut and stir it well.
Once the dal leaves the side , remove it from flame & allow to cool. Then make equal size balls from the stuffing and keep aside.
For Outer layer, take the flour & salt in a bowl and then add enough water to make thick paste like below pic. Heat the oil in a kadai. Once the oil is heated (if you drop pinch of batter in oil, it should come up immediately).Take one stuffing at a time, coat it with the batter well.
 Drop it in oil slowly. Gently flip the susiyam in all sides and cook until the outer layer is well cooked. Remove from the oil and place it in tissue paper.
 Tasty susiyam is ready to serve.

Notes:
  • You can make the stuffing a day before evening and make equal size balls and keep it at room temperature for next day use. It doesn't get spoiled and stay good for next day.
  • The batter should be in thick consistency and coat the stuffing well, otherwise, the stuffing will come out and mix it  in the oil while frying and the whole oil get wasted. so check it by dropping one in oil and then proceed.
  • Don't stir the susiyam immediately when you drop it in oil, let it cook for few minutes and then flip or stir, it will help the outer layer to cook & firm and prevent the stuffing to come out.

Kozhukattai | Porna Kozhukattai | Mothagam | Vinayagar Chaturthi Special

Mothagam/Poorna Kozhukattai, a delicious steamed sweet dumpling made from rice flour dough as outer covering and  chana dal & coconut  stuffing inside. This kozhukattai is my all time favorite, i love chana dal puranam (stuffing) more than any other stuffing in kozhukattai. 

In our home, Amma never used rice flour for kozhukattai, always prepared fresh rice batter, saute till it's thick and use them for the outer layer for kozhukattai.It gives a very soft outer layer and stays soft even when it's cooled down. Though the process looks lengthy,if you plan ahead, you can make this traditional kozhukattai at your home easily for this year vinayagar/ganesh chathurthi. 

But here in the recipe I have shared both the rice batter and rice flour method for making the outer dough, pick the one which is convenient for you and make this delicious poorna kozhukattai for this vinayagar chathurthi. If you're a beginner in cooking, I would recommend using the rice flour method because it's easy to make and less time consuming than the other method.
Now a days, though there are so many varieties/stuffing used for making mothagam, this chana stuffing for the mothagam is the classic and traditional one, still i used to make this one on chaturthi day without fail in addition to other modak and sundal recipes.

Mothagam/Porna Kozhukattai

Ingredients
For Stuffing
Channa Dal - 1/2 cup
Jaggery - 1/2 cup
Cardamom - 2 nos
Grated Coconut - 3 tbsp
For Outer Layer
Idli rice method 
Idly Rice - 3/4 cup 
Oil - 1 tsp
Salt - 1/4 tsp
Water - to grind
Rice flour method 
Rice flour - 1/2 cup
Oil - 1 tsp
Salt - to taste
Water - 1/2 cup(approx)


Procedure
Soak the channa dal for 1/2 hr. 
In a sauce pan, bring 3 cup of water to boil, add the channa dal and allow to cook.

For outer layer using idli rice 
Soak the rice for 2 hrs and grind into smooth batter.Heat a wide non stick pan, add the  oil and the batter. Stir it continuously,until it leaves the side.
Remove it from flame , allow to cool & make equal size balls from the dough.
For rice flour method 
If you're using rice flour method, take the rice flour in a bowl, add salt and oil, mix it well, then pour the boiling water and make a soft dough. Let it rest for 5 mins.
Now grease the hand and take one outer layer ball, make bowl shape from that, place the stuffing inside and seal it as shown in below pics
Do the same for the remaining dough.
Steam it in steamer for 5-7 mins. I used my idly pot to cook the Kozhukattai.
Tasty  Mothagam/ Purna Kozhukattai is ready.

Notes:
  • This stuffing will stay good for a day at room temperature itself
  • You can make the stuffing a day before evening and make equal size balls and keep it at room temperature/refrigerator. It doesn't get spoiled and stay good for next day.
  • Don't cook the Kozhukkatai for long time, it will make crack in the outer layer.
  • Grease the hand with oil while making the outer shape for smooth finishing.
  • Use sesame oil for greasing your hands and steamer plate for great flavor.

Aama Vadai | Paruppu vadai

Aama Vadai/paruppu vadai  is one of my favorite vadai from childhood. I prefer masala vada over medhu vadai , because of its crunchiness . To me, my mom makes best paruppu vadai. Amma makes this vadai in a jiffy. When i started to make this vadai, it didn't turned out as good as my mom's. For a while, every time, when i make this vadai, i would call my mom and confirm the ingredients and procedure. After many attempts, finally understood the knack of the recipe. To grind the mixture into coarse and cook in slow flame, are the secret to crispy and tasty masala vadai. 

Aama Vadai/Paruppu Vadai

Ingredients
Channa Dal - 1/2 cup
Red Chili - 3 nos
Garlic - 4 pods
Ginger - 1/4 inch piece
Fennel seed - 1/4 tsp
Salt - to taste (3/4 tsp approx)
Onion -1 (medium)
Curry leaves - few
Oil for deep frying
Procedure
Soak Channa dal for 1.5 - 2 hrs. In a mixie , first grind red chili,garlic, ginger and fennel seed into coarse. Then add soaked dal along with salt and grind into coarse paste.
Cut the onions into small pieces , roughly tear the curry leaves and add the both into channa dal paste. Heat oil in a deep pan for deep frying. Apply water in the hand and make lemon  sized balls from the mixture and gently press it like patties.
Slowly slide it in hot oil , do the same for remaining mixture. Dont crowd the pan, keep the flame in medium and cook it slowly. Flip the vadas on both side frequently, till both side became brown.

Drain the oil and put it in paper towel.
Crispy Aama vadai/ Paruppu Vadai is ready .Serve it with hot coffee/tea.   
Notes:
  • Cook the vadas in medium flame, so that you will get crispy texture.
  • Grind the mixture into coarse,even you can keep 2 tbsp soaked dal aside and add it into mixture for extra crispy texture.
  • Add curry leaves generously, it gives super flavor to the vada.
  • Dont add water while grinding.
