Restaurant Style Mint Chutney | Mint Chutney with Coconut

Restaurant Style Mint Chutney, a delicious and flavorful green chutney that goes well with South Indian Breakfast items like idli, dosa and so on. This mint chutney is one of my recent favorite chutneys that i often make as side dish for breakfast and dinner. It tastes exactly like the restaurant mint chutney ! 

Already i have a mint chutney recipe which doesn't have any coconut. If you're interested in no coconut mint chutney, then check out this mint chutney recipe.  

This Mint chutney recipe is vaguely inspired from the Chef Ventakesh Bhat mint chutney recipe. I have made a little tweak in the recipe to suit our taste. 

Substitution Ideas 
  • Instead of green chilies, you can also use the red chilies. But the color of the chutney is not as vibrant as here.
  • If you don't like the garlic flavor, then skip it or add a piece of ginger.
  • Fresh or frozen coconut can be used in this recipe.

Restaurant Style Mint Chutney

Ingredients
Mint - 1/2 cup (tightly packed)
Onion(small) -1 
Tomato(small) - 1 
Green Chili - 4 
Garlic - 2 cloves 
Tamarind - a pea size 
Grated coconut - 3 tbsp
Coriander leaves - a few
Salt - to taste
Oil - 1 tsp
Cumin - 1/2 tsp
Urad dal - 1 tsp 
Chana dal - 1 tsp
To Temper 
Oil - 1 tsp
Mustard & urad dal - 1/4 tsp

Procedure
Peel the onion. Chop the onion and tomato roughly into small pieces, slit the green chilies. Wash the mint leaves & also keep all the other ingredients ready to saute. Heat the pan with oil.
Add the cumin seed, urad dal and chana dal. Saute them till the dal turns golden brown. 
Then add the onions, tomatoes, tamarind, green chili & garlic. Saute them till the onions and tomatoes are soft. 
Next add the mint leaves and saute till the leaves are wilted and then add few coriander leaves. 
Give a good mix and then add the grated coconut , switch off the flame and mix a good mix in the residual heat. Let the mixture cool a bit.
Transfer the mixture into a mixie/blender jar and then add salt. Grind them into coarse paste. 
Then add the water as needed and grind them into smooth paste. Transfer into a bowl and temper the ingredients listed under "To Temper " and add into the chutney. 
Delicious Restaurant style Mint chutney is ready. You can serve this as side dish for idli, dosa and paniyaram varieties.

Notes:
  • Cumin seeds give great flavor to the chutney so don't skip it. 
  • Add water little by little and grind the chutney till it's smooth. As it has dal, it takes time to become smooth. 
  • Adding dal increase the quantity of the chutney.  
  • Make sure that the mint leaves are wilted well to avoid the raw smell in the chutney.

Mint Yogurt Chutney | Kebab Green Chutney

Mint Yogurt Chutney, a delicious and flavorful chutney that goes well with any type of kebab or starter recipes. Mint & coriander leaves give great flavor and the yogurt/curd give the enough creaminess to the chutney and make it perfect as dipping sauce for your starter recipe. This mint yogurt chutney is mandatory in our home whenever i make kebabs !!! It's so similar to restaurant style kebab chutney  and if you haven't tried it before, do give it a try !!!

Ingredients
Mint - 1/4 cup(tightly packed)
Coriander leaves - 1/4 cup(tightly packed)
Green chili - 2 to 4
Ginger - 1 inch pieces
Garlic - 4 cloves
Curd/Yogurt - 1/2 cup
Salt - to taste

Procedure
Clean mint, coriander leaves and put into the blender along with green chili, ginger & garlic and grind into coarse mixture.Then add curd & salt into it and grind it as smooth chutney. That's it , Tasty & Flavorful Yogurt Mint Chutney is ready. For kebab recipe, check out here and here 
Notes:
  • Use fresh curd for great taste
  • Adjust the chili as per your liking.
  • Squeeze a little bit of lemon juice for more tanginess.

Hariyali Chicken Kebab | Green Chicken Kebab | Starter Recipe

Hariyali Chicken Kebab, a flavorful, delicious & juicy chicken kebab which is very popular in North India!!! Hariyali means "Green",so it's basically a chicken kebab made with aromatic green masala. The green paste used in this recipe made from mint, coriander and some aromatic indian spices. The flavor from the green paste totally elevates the taste of this kebab to a whole new level. 

Hariyali Chicken kebab taste best with boneless chicken, so i prefer to use chicken breast for this kebab. But it's totally up to you, if you like your kebab/chicken with bone the best, then absolutely go head and use chicken drumstick or chicken leg or whatever you like.It tastes good as starter or as side for your rice or roti. Even you can stuff this kebab along with some onions & veggies in your favorite flat bread and have it as wrap. 

Here in today's recipe, i have used my oven to bake this kebab. But if you've open grill, i highly recommend to use that for the smoky flavor. Next the color and flavor of this kebab are mainly depends on the mint and coriander leaves used in the recipe, so try to use as fresh as possible for best flavor and vibrant color. If the herbs are little old and the color is little on darker side of green, then you may not get that  vibrant green color on your kebab, but taste wise still it would be awesome.

Hariyali Chicken Kebab

Ingredients
Boneless Chicken - 1/2 lb
Mint - 1/4 cup(tightly packed)
Coriander leaves - 1/4 cup(tightly packed)
Green chili - 2 to 4
Ginger - 1 inch pieces
Garlic - 4 cloves
Curd/Yogurt - 1/2 cup
Lemon juice - 1 tsp
Salt- to taste
Oil - 1 tsp

Procedure
Clean mint, coriander leaves and put into the blender along with green chili, ginger & garlic and grind into coarse mixture.
Then add curd into it and make it as smooth puree. Cut the chicken into small pieces & clean the chicken and keep it ready.
Add the mint coriander paste into the chicken along with salt and oil.
Finally add lemon juice and mix it all well together. Let it marinate for 1 - 2 hrs. Keep the wooden skewer in the water for 1 hr and line the baking tray with foil paper. Thread the chicken into the skewer and arrange it on the tray.
Preheat the oven @ 420 F  and place the tray and bake it for 20-25 mins(see notes for pan cooking). For final two minutes turn on the broil mode and broil it for some color on the top.
That's it. Tasty Hariyali Chicken Kebab is ready.Serve it with your favorite dip. For more chicken recipe, check out here 

Notes:
  • You can marinate the chicken and keep it overnight for more flavor.
  • Add 1/2 tsp of garam masala in the marination for more flavor 
  • Apply some ghee on top of the kebab when it's come out form the oven for rich kebab. I didn't use it. 
  • Instead of baking in oven, you can cook it in stove top also. Heat some oil in the pan and place the skewers, rotate now and then until the chicken is thoroughly cooked.
  • Depends on the size of the chicken pieces, baking time from 20- 25 mins.

Mint Chutney for Breakfast | Pudhina Chutney without Coconut

Pudhina Chutney, a delicious and flavorful chutney made from mint leaves. It tastes so good with both idlis and dosas. When i was in chennai,I had tasted something similar to this chutney in few restaurant as one of the side dish for dosa. 

The mint flavor was very mild and it tasted delicious with dosa. Later i tried to recreate the chutney with what i had tasted and remembered, after a few trials, the recipe that i'm sharing today was almost similar to the restaurant style chutney and now it's one of our favorite chutney. 

If you like restaurant style mint chutney , then give it a try, definitely you will love it. Also remember that the mint flavor is intense once it's grounded into paste, so use more or less of mint leaves as per your preference. 

Since i like mild flavor, here in the recipe i have used 1/2 bunch of mint leaves (1/2 cup approximately), but you can add more if you want strong mint flavor. Now let's check out the recipe.


Mint/Pudhina Chutney

Preparation Time : 20 mins | Cooking Time : 15 minsServes : 2 to 3

Mint Chutney, Pudhina Chutney, Green Chutney Pudhina Chutney, a delicious and flavorful chutney made from mint leaves. It tastes so good with both idlis and dosas.
Ingredients
Mint - 1/2 bunch
Onion -1
Tomato -1
Red chili - 2
Chana dal - 1 tsp
Garlic - 1 pod
Oil - 1 tsp
Salt - to taste
To temper
Oil - 1/2 tsp
Mustard & urad dal - 1/4 tsp
Curry leaves - few

Procedure
First chop the onions and tomatoes roughly, clean the mint and remove the stems. Heat the oil in a pan, add the chana dal, red chili and garlic.
Let the chana becomes golden brown in color, then add the onions with a pinch of salt and saute it becomes translucent.
Then add the tomatoes , give a good mix and cover it with lid, let the tomatoes cook and becomes mushy.
Add the mint leaves and let the mint leaves shrinks, let it in the flame for 2 more mins and switch off the flame. Let it cool completely. Put it in the mixie jar along with required salt.
Grind into smooth paste, transfer into a bowl, temper the ingredients listed under "To Temper" and add into the chutney.
Tasty and flavorful mint/pudhina chutney is ready.

Notes:
  • Chana dal gives thickness to the chutney.
  • Add more or less of chili as per your preference.
  • Instead of red chili, you can use green chili also.

Sweet & Salt Limeade | Limeade Recipe

Limeade , a humble & refreshing drink that quench your thirst on this hot summer afternoons. Back in India, i always use lemons to make juice on summer days,but never used limes once and i couldn't remember seeing them on markets too. Don't know whether limes are not available as much as lemons or i didn't pay much attention to the varieties back then. 

But here in US, limeade drinks are quite popular and it occupies most of the juice section in our grocery store on this summer days. So out of curiosity, we bought one few weeks before and it was so refreshing and we love the flavor so much.The flavor was quite similar to "Narthangai"(a citron used to make pickles in Tamilnadu) with sweet taste.So later on every visit to grocery store, i never forget to pick lime.As we both like lemon juice with sugar & salt, i just recreate the same with lime. It's so refreshing & tasty and leaves you wanting more.

Sweet & Salt Limeade

Preparation Time : 5 mins | Cooking Time : 5 minsServes :

Ingredients
Lime - 1
Sugar - 1/4 cup
Water - 2 1/4 cup
Salt - 1/2 tsp

Procedure
First let's make simple syrup, in a sauce pan, add the sugar and 1/4 cup of water, place it on heat and let the sugar dissolve completely.Switch off the flame and let it cool completely. Take a lime, cut into half.Squeeze the lime juice in a vessel, add the sugar syrup.Add the 2 cups of water and salt,give a quick stir.Tada, Your Limeade is ready. When serving, add few lime slices, mint and ice cubes.
Notes:
  • I have prepared excess sugar syrup and put in refrigerator for later use.
  • Depends on the sourness of the lime, you may need more or less sugar syrup,so always prepare little extra sugar syrup and you can store the leftover in refrigerator for later use.
  • Salt really helps to bring out the sweetness and balance the taste.

Mint Chaas | Masala Chaas | Savory Buttermilk

Chaas is nothing but flavored buttermilk.During summer, buttermilk is quite popular across India and made in different flavors across the region. In Tamilnadu, it's called as Neer moor  and it's quite different from North Indian version of savory buttermilk, here we do basic tempering with oil,mustard & curry leaves and add into the buttermilk and i'm big fan of that tempered buttermilk.
But in North India,they add cumin powder into buttermilk to enhance the flavor. I love both version of buttermilk because of their unique flavor.Here in this recipe, i added few mint leaves into the buttermilk and it was super hit, the mild mint flavor in this buttermilk is so yummy and also wanting it more.As buttermilk is a natural coolant, having it during this summer helps you to keep hydrated and cool. Now let's see the recipe.

Mint Chaas

Preparation Time : 5 mins | Cooking Time : 0 minsServes :

Ingredients
Curd - 1/2 cup
Water - 3/4 cup
Cumin powder - 1/2 tsp
Salt - to taste
Coriander leaves - few(optional)
Mint leaves - 2 to 3

Procedure
Add curd,cumin powder,coriander & mint leaves, salt and water into the mixie/blender jar and blend it well until it becomes frothy.
Tada, Your Mint Chaas is ready.
Notes:

  • Instead of regular salt, you can use black salt also.
  • You can add more or less of mint leaves as per your preference.
  • You can omit mint leaves and make it as plain chaas.
