Cilantro Pesto Vegetable Pizza | Coriander Pesto Pizza

Cilantro Pesto Vegetable Pizza, an easy, delicious & flavorful pizza that would be ready in minutes given that you have pizza dough in hand. Cilantro/ Coriander pesto sauce requires just handful of ingredients and the sauce will be ready in a jiffy. If you like cilantro flavor then you must give this sauce and pizza a try, i'm sure that you would be amazed by its flavor and taste.

Back in days, when we were in Houston, we love the pizza from  "MOD pizza", our favorite pizza outlet. It provides various option for base sauces, toppings & finish sauce. That's where i got introduced to the idea of using pesto and white sauce over pizza and ST love their finishing sauce especially siracha on top of the pizza. It adds nice kick to the pizza.

If you're so used to spicy Indian food and find pizza as bland, then you must add siracha or any hot sauce over the pizza and try. It's a totally game changer for all spicy lovers!!!

First for the dough, i have used my pizza dough recipe as base and made the dough with a little twist. Instead of using all purpose flour as whole, in today's recipe i have used half of whole wheat flour. Whenever i'm making thin crust pizza, i prefer to add equal amount of all purpose flour and wheat flour for dough. It gives such a crispy crust. But you can follow the same dough recipe without any change also, it also works fine,i have done that so many times.

Next for pesto sauce, since i'm not a big fan of pesto sauce made from basil and it's kind of over powering flavor to me, i prefer to make pesto from my favorite herb, cilantro/coriander leaves. It's absolutely lip smacking and good on anything like sandwich, pizza or pasta. I would rather prefer pesto sauce over the regular tomato sauce on my pizza whether it's from pizza outlet or home made.

Finally for the toppings, I would recommend vegetables like onion, tomato, capsicum/bellpepper, sweet corn, spinach, mushroom, pineapple. With just any one of the  toppings or combination of any veggies that i have listed above would taste good on this pizza.

In addition to the above vegetables, we would like to add finely chopped ginger to this pizza for additional flavor and kick. I knew that the ginger is not the standard topping on the pizza, but when it comes to home cooking, there is no rule book !!! you can add whatever your heart and tummy desires, right??

Hariyali Chicken Kebab | Green Chicken Kebab | Starter Recipe

Hariyali Chicken Kebab, a flavorful, delicious & juicy chicken kebab which is very popular in North India!!! Hariyali means "Green",so it's basically a chicken kebab made with aromatic green masala. The green paste used in this recipe made from mint, coriander and some aromatic indian spices. The flavor from the green paste totally elevates the taste of this kebab to a whole new level.

Hariyali Chicken kebab taste best with boneless chicken, so i prefer to use chicken breast for this kebab. But it's totally up to you, if you like your kebab/chicken with bone the best, then absolutely go head and use chicken drumstick or chicken leg or whatever you like.It tastes good as starter or as side for your rice or roti. Even you can stuff this kebab along with some onions & veggies in your favorite flat bread and have it as wrap.

Here in today's recipe, i have used my oven to bake this kebab. But if you've open grill, i highly recommend to use that for the smoky flavor. Next the color and flavor of this kebab are mainly depends on the mint and coriander leaves used in the recipe, so try to use as fresh as possible for best flavor and vibrant color. If the herbs are little old and the color is little on darker side of green, then you may not get that  vibrant green color on your kebab, but taste wise still it would be awesome.

Now let's check out on how to make this delicious Hariyali/Green Chicken Kebab.

Home made Coriander Powder | Coriander Powder | Indian Spice Powder

Coriander powder is one of the few ingredients that you must need in Indian Cooking. Now a days, you can find coriander powder in almost every grocery store. But i like to make my batch of coriander powder at home for the past one year. When we were in India, i never brought any spice powder like chili powder, sambar powder and coriander powder from stores. Amma always make big batch of all these and pass it to me.After moving to US, initially i brought it from stores and tried various brands, but i'm not satisfied with any of those brands.First they are available in large packs(minimum 200gms,yep it's more for 2 people) and it lost it's flavor just after few weeks.Home made coriander powder also lost its flavor over the time, but not as quick as store brought ones.So i had started to make coriander powder on my own in little batches for our need.If you have good blender, then it's very easy to make & also it's so fresh and more aromatic than any store brought coriander powder.

Home made Coriander Powder

Preparation Time : 15 mins | Cooking Time : 5 mins | Makes : 1 cup
Recipe Category: Spice Powder | Recipe Cuisine: Indian
Ingredients
Coriander seed - 1 cup or as needed

Procedure
Heat a kadai in medium flame and add the required coriander seed and roast it on medium flame.Once the coriander seed becomes aromatic and also slightly becomes brown in color, switch off the flame and let it cool. When the coriander seed is still warm, add it into the blender/mixie jar and grind in medium speed for 2 mins, you will get coarse coriander powder at this stage. To get fine powder, again run the blender in medium speed for 1 to 1 1/2 mins, you will get fine coriander powder. That's it, Home made fresh and aromatic coriander powder is ready.Store it in air tight container for long shelf life.
Notes:
  • Sieve it once,if needed.
  • Roast till aromatic is most important to get flavorful powder.
  • Instead of dry roasting, you can use sun dried coriander seeds also.
  • Don't let the coriander seed cool completely.
  • Grind the coriander seed still it's warm,it helps to get fine powder.

As India is celebrating its 68th republic day on Jan 26,i have tried this tricolor idly to celebrate the occasion. Not only these idlis are looking cute, it's more healthy and tasty than the regular idlis. Here i have used carrot to get the saffron color and coriander leaves for green color. But you can use any greens(just blanch them & use) in this recipe.

Coriander Chutney | Kothamalli Chutney |Side dish for Idly or Dosa

Kothamalli Chutney, a delicious chutney made from the coriander leaves, coconut and other spices. It's one of my all time favorite chutneys, i love coriander flavor like anything, so at least once a week, i'm making this chutney as a side dish for idli and dosa.

Like many of my recipes in my blog, this recipe is also from my mom. I have been making this chutney as she had taught me years ago without any change.

Adding roasted urad dal(you can use skinned or unskinned urad dal, mom always uses skinned urad dal for this chutney for better flavor, so do i) gives such a nice flavor to the chutney. If you haven't tried this way of making coriander chutney, give it a try, it would be amazing and taste great with idli and dosa.

Remove from kadai and put it in mixie jar, in the same kadai add the coconut and roast till aromatic.
Allow the roasted ingredients to cool, in the mean time, remove the coriander leaves from stem, no need to remove all the stem, just remove the thicker stems on the end.
Add the coconut in the mixie along with dal, chili, tamarind & garlic, grind it to a coarse mixture. In this, add coriander leaves & enough water.
Add salt and grind into smooth paste. Heat the kadai for tempering with 1/2 tsp of oil.
Add mustard, let it splutter, add the finely chopped onion & curry leaves, saute till onions becomes translucent, add the chutney.
If need add water to adjust the consistency. When it's about to come boil, switch off the flame.
That's it Coriander Chutney is ready to serve with dosa or idly.

Notes:
  • Roasting coconut helps to increase the self life of chutney.
  • If you're making this chutney for packing, roast the coconut till it becomes slightly brown, it really increases the self life a long.
  • You can use green chili instead of reds ones.
  • Skinned urad dal gives excellent aroma & taste. I recommend to use that if you have.
