Thenga Manga Pattani Sundal | Beach Sundal

Thenga manga pattani sundal / Beach sundal , a healthy snack made from yellow peas, raw mango & coconut. 

It's one of the popular sundal that you can get it on any beach in Tamilnadu. Adding raw mango gives little bit of tanginess to the sundal and with amazing coconut flavor, this sundal tastes heavenly delicious. 

Though i make sundal regularly at home, most of the time, it's simple tempering with bit of grated coconut, this particular version is very rare at our home because of the few extra ingredients it needs. 

Last week, luckily had all the ingredients, so quickly made this sundal for our evening snack and it's totally worth adding those few extra ingredients like raw mango & carrot, it totally enhances the sundal taste and it's hard to stop eating them.

Here in today's recipe, i have used yellow peas just like how it would be available in beach, but you can use the green peas also in this recipe.
In our family, we love to have sundal as tea time snack and it's one of the healthiest back-school snack also. It's full of protein, much needed for growing kids, so try to include sundal varieties in your kids evening snack box if you haven't had that practise already.

It's one of the popular sundal that you can get it on any beach in South India.
Ingredients
Yellow Peas - 1/2 cup
Green Mango - 2 tbsp(thinly sliced)
Carrot (small )- 1/2
Grated Coconut - 3 tbsp
Pearl onion - 2
Green chili - 1 
Coriander leaves - few
Oil - 1 tsp
Mustard - 1/4 tsp
Curry leaves - few
Salt - to taste

Procedure
Soak the peas in water for overnight, in the next morning, discard the soaked water and add into the pressure cooker along with fresh water just enough to cover the peas. Add the required salt for peas.
Cover and pressure cook it for 2 whistles or until it's soft. Cut the carrot & mango into thin slice, onion & green chili into small pieces. 
Heat the pan with oil, add the mustard, let it crackle, then add the onions & curry leaves. saute it in the oil for 20 secs, then add the carrot & mango along with little salt.
Saute till the mango & carrots are soft, add the cooked peas and give a good mix.
Finally add the coconut and chopped coriander leaves and mix it well. 
Tasty & healthy Thengai Manga Pattanai Sundal is ready to serve.

Notes:
  • Since i had soaked the peas overnight, cooked for 2 whistle is enough to get soft cooked peas without being mushy.
  • If you have soaked less hours, then 3-4 whistle of cooking is required.
  • Make sure to add the add the salt while cooking peas itself for even seasoning in the sundal.

Mango Sweet Pachadi | Mango Thokku | Mango Pachadi

Mango Sweet Pachadi/Thokku, a sweet, sour & spciy thokku made from the raw mangoes. When i was kid, i was so crazy about this mango pachadi and i kept on insisting Amma to make this whenever i saw raw mangoes in the kitchen. 

It tastes best with curd rice, but i like to have as it is just like jam 😄. Now i think that it's kind of like jam,you can spread this on chapathi,roti or even on dosa and have it as rolls, it would be delicious for sure.
To make delicious thokku, you should balance the sourness from the raw mango, so depends on the sourness of the mango, you may need more or less of red chili powder and jaggery. 

The mangoes that i have used here have mild sourness, if your mangoes have more sourness, increase the red chili powder than the quantity mentioned here or vice versa.So what you're waiting for?Try this delicious thokku when mangoes are in season.

Mango Sweet Pachadi

Mango Sweet Pachadi, Mango Pachadi,Mango Thokku Mango Sweet Pachadi/Thokku, a sweet, sour & spciy thokku made from the raw mangoes.
Ingredients
Raw Mango(thinly sliced) - 2/3 cup
Red chili powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Salt - to taste 
Jaggery powder - 2 tbsp
To Temper
Oil - 1 tsp
Mustard - 1/4 tsp
Curry leaves - few
Procedure
Peel the mango and sliced into thinly.Heat a kadai with 1 cup of water and bring to boil, then add the sliced mangoes.
Let it cook, once the mangoes becomes soft, add the turmeric,red chili powder and salt and cook till it becomes mushy.
Once the mango becomes mushy and thick, add the jaggery powder and mix well.
Finally temper the ingredients listed under "To Temper" and add into the mango pachadi.
That's it,Sweet and Sour Mango Pachadi is ready.

Notes:

  • If you don't want to make it as more sweet, then reduce the amount of jaggery.
  • Depends on the sourness of the mango, you may need more or less of red chili powder.
  • It stays well for more than a weak in refrigerator.

Nethili Karuvadu Kuzhambu | Dry Anchovies Curry with Veggies

Neithili Karuvadu Kuzhambu, a spicy and tangy curry with dry anchovies and lot of country vegetables. Here in the curry, i have used brinjal, drumstick,raw mango and drumstick along with dry anchovies. All these veggies give great flavor to the curry,even without any one of the veggies,i never prepared this curry so far.
While making any dishes with dry fishes, always under do the salt, as dry fishes have lot of salt in it,over doing the salt totally spoil the dish. And the other thing is wash the dry fishes well as it has lot of dirt and sand in it especially when you buy from local fish market . The imported dry fish that come in package hardly have any sand,but still it's better to soak for 15 mins in hot water and wash it thrice before using it. 

Nethili Karuvadu Kuzhambu

Preparation Time : 30 mins | Cooking Time : 20 minsServes :

Ingredients
Dry Anchovies/Nethili Karuvadu - 20 to 25
Tamarind - a goose berry size
Raw Banana - 1/2 
Green Mango - 1/2
Drumstick - 1
Brinjal -1
Green chili - 1
Tomato(small) - 1
Pearl onion -5
Curry leaves - few
Seasame Oil - 1 tbsp
Mustard  -1/2 tsp
To Grind 
Grated Coconut - 1/4 cup
Garlic - 2 pods
Pearl onion -1
Cumin seed - 1/2 tsp

Procedure
First soak the tamarind in water for 30 mins.In the meantime, take the karuvadu and soak it in warm water for 15 mins,then remove the head with your finger and wash it in water for atleast thrice and keep aside until use.Then chop the veggies(brinjal,mango,banana,chili) into thick strips, drumstick into 11/2 inch pieces,tomato into small pieces and keep it ready.Heat a kadai with oil, add mustard, let it splutter then add the pearl onions & curry leaves, saute for 1 min, then add the other veggies expect tomato.Saute the veggies in the oil for 2 mins, then add the tomatoes & karuvadu one by one, give a good mix with the veggies.Extract the tamarind juice from the soaked tamarind and add it into the veggies and then add turmeric powder.Add chili powder & salt and bring to boil.Cover the kadai with lid and cook till the karuvadu and the other veggies are well cooked.In the mean time, grind all the ingredients listed under "To Grind" into smooth paste.Once the karuvadu & veggies are cooked , add the coconut paste and water(if needed) and bring into boil. Cook till oil separates on the top. That's it Tasty & Finger licking Nethili Karuvadu Kuzhambu is ready.
Notes:
  • Brinjal, drumstick,raw banana & mango give great taste and flavor to the curry, i highly recommend to add all of these.
  • Sesame oil gives great flavor to the curry.
  • Nethili and other veggies almost take(10-12 mins) same time to cook.
  • Under do the salt as karuvadu already have salt in it.Do the taste test and if needed, add at the end.
  • If the raw mango has more sourness, then reduce the quantity of either mango or tamarind.

Mangai thokku | Raw Mango thokku

Mango Thokku, a delicious and spicy accompaniment made from the raw mangoes. It's one of the most famous side dishes for curd rice. A little bit of mango thokku as sides makes the curd rice so delectable.

For this week's blogging marathon, I chose the theme "Seasonal Veggies" . Being in India during summer, what else would be the seasonal vegetable other than Mango. So you can see three different mango recipes for the coming days.

I saw this recipe in geetradhu channel around one year back and made it for last summer. Ever since, I have been making this thokku whenever I have mango in stock. It's so delicious and can be prepared in minutes. 

Depending on the mango sourness, you may need more or less of red chili powder to balance out the tanginess. Here I have used kili mooku mango which has mild sourness. 



Raw Mango Thokku

Preparation Time : 5 mins | Cooking Time : 15 minsServes :

Mangai Thokku, Raw Mano Thokku, Mango Pickle, Instant Mango Pickle, Mango Thokku, a delicious and spicy accompaniment made from the raw mangoes. It's one of the most famous side dishes for curd rice.
Ingredients

Raw Mango - 1 (medium size)
Red chili powder - 1 1/2 tsp
Turmeric - 1/4 tsp
Jaggery - 1 tsp approx
Salt - to taste (1/2 tsp approx)
Fenugreek seed - 1/4 tsp

To Temper
Gingelly/Sesame oil  - 2 tbsp
Mustard - 1/4 tsp



Procedure

Peel the mango & grate it . It yields 1 cup approximately.First in a small pan, add the fenugreek seed & dry roast it well & powder it.
Heat the heavy bottom pan, temper the ingredients listed under "To Temper" . Add the grated mango, saute it well.
Once it started to shrink, add the spices(turmeric& chili powder) & salt.Mix it well. Let it cook till the oil separates.
Then add the jaggery & mix well until it all melts. Switch off the flame & then add the fenugreek powder and give a quick stir.
That's it, tasty & finger licking manga thooku is ready. Serve it with curd rice.
Notes:
  • You can store this in refrigerator for more than 1 week.
  • Always use clean spoon to take the thokku to increase its self life.
