Apple Jalebi | Sweet Recipe

Apple Jalebi, a quick and easy to make sweet recipe with apples. I had seen this recipe long back on manjula's kitchen, even since i wondered how would it taste and also wanted to give a try. 
At last, a year back i tried this sweet for the first time and we really enjoyed it. The sourness from the apple while eating this jalebi exactly reminded me about the slight sourness from the traditional jalebi(do check out the traditional jalebi recipe also, one of the popular post in my blog and turned out so good each time.), guess that's why they named this dish as "Apple Jalebi".

 If you're looking for some indian flavored sweet recipe with apples, then do give it a try, you won't be disappointed for sure. 

This jalebi becomes little bit soggy when it's cooled down, so I would recommend to fry as many apple slices as you want at a time and refrigerate the remaining(apples, batter and sugar syrup).

Fry them whenever needed and then slightly reheat the syrup and dip the fried apples in it, that way ,it give you crispy and tasty apple jalebis every time!!!

Apple Jalebi | Sweet Recipe

Preparation Time : 30 mins | Cooking Time : 20 minsServes : 2 to 3

Apple Jalebi,Indian sweet,Green Apple Apple Jalebi, a quick and easy to make sweet recipe with apples.
Ingredients
Green Apple - 1
Maida/All purpose flour - 1/3 cup
Instant yeast -1/4 tsp
Salt - a pinch
Sugar - 1/2 tsp
Oil - for deep frying
Water - as needed for batter
For Sugar Syrup
Sugar - 1/2 cup
Water - 1/2 cup
Lemon Juice - 1 tsp
Saffron Strands - few
Orange food color - a pinch(Optional)

Procedure
Take all the required ingredients, in a bowl, add the maida & yeast, mix it well.
Then add the sugar and salt, mix it well and then pour the needed water to make the batter.
The batter should be free flowing but not too thin. Cover it with lid and let it rest for 30 mins.
In the mean time, let's make the sugar syrup, heat the pan with water and sugar, add few strands of saffron.
Let it comes to boil, reduce the flame and cook till the syrup becomes sticky. Switch off the flame. If you're using food color, add it now and then add the lemon juice. Mix it well and your sugar syrup is ready.
Next, peel the apple and cut them into thin circles, remove the seeds from the centre and keep it ready.
After 30 mins, the batter should be all bubbly and became thick.Heat the oil in the pan for frying.
Deep the apple slice into the batter and coat them on both sides well.
Gently drop them into oil and cook on both side till it becomes golden in color. 
Drain from the oil and add it into the sugar syrup, let it soak for 2 mins and then remove from the syrup and arrange it on the plate.
Tasty Apple Jalebi is ready. Serve immediately!

Notes:

  • Sugar syrup should be warm while adding the fried apples, it helps to absorb the syrup easily.
  • If the sugar syrup becomes cold & not absorbed by apples well in between then slightly warm them.
  • Instead of saffron flavor, you can cardamom flavor too.

How to make Mango Lassi | Mango Lassi

Mango Lassi, a creamy & delicious cold drink made from mango and curd/yogurt. As Mangoes are started to arrive in abundance here, i make this delicious Mango Lassi often at home. It's so tasty & very refreshing and also helps to quench your thirst during summer.
Lassi is nothing but sweetened yougurt/curd flavored with cardamom or saffron and it's quite popular in North India where people used to have this on every meal. Now a days, mango lassi is quite popular across the world than the plain lassi. 

Here in US, every Indian restaurant menu contains Mango Lassi under Drinks section.Most restaurant use kesar mango pulp for the lassi and i too tried with mango pulp when mangoes are not in season.


Here in the recipe, i have used cardamom and saffron for flavoring and both the flavoring are really goes well with mango. But you can make the mango lassi without any additional flavoring, just mango,yogurt/curd and any sweetener you like.

Mango Lassi

Ingredients
Mango - 2 
Chilled Curd - 3/4 to 1 cup
Sugar - as needed
Cardamom - 1
Any nuts - few (for garnishing,optional)
Saffron strands - few (for garnishing,optional)

Procedure
First wash the mango well,then peel the skin and chop into mango flesh into pieces roughly and discard the seed.
Add the chopped mango into the mixie/blender jar and then add cardamom & curd.
Finally add the needed sugar and close the jar with lid and grind into smooth.
Pour into glass and garnish with nuts and saffron. That's it Tasty and creamy Mango Lassi is ready.

Notes:
  • Use fresh curd for better taste.
  • You can skip cardamom too and make it as complete mango flavor.
  • Depends on how thick or thin you want, adjust the quantity of curd.
  • Based on mango sweetness, adjust the sugar quantity.
  • Refrigerate mango lassi and serve chilled.
  • Instead of sugar, you can use honey or any of your favorite sweetener.
  • I have used pistachio for garnishing.

Milk Peda | Kesar Peda| Milk Peda with Milk Powder | Diwali Sweets

Milk peda, a delicious milk based Indian sweets. It is one of my favorite sweets from childhood. Traditionally this peda is made from boiling the milk for hours until it reduces in quantity. But today, in this recipe, we're going to use the milk powder which will reduce the cooking time and still gives such a melt in mouth pedas. 

I bought a pack of milk powder a while ago and it sits in  my counter for months without opening, so diwali is approaching, I thought that it would be the best time to make this yummy pedas. 

  • In today's recipe, i have used the full fat milk powder that i got from the Indian stores. But, in the past, i tried the recipe with non-fat milk powder from Walmart and it tasted good too. So, you can use whatever milk powder you like/have. 
  • When comes to flavour, these pedas can be easily customized to other flavours. Instead of saffron and cardamom, only cardamon or saffron flavours also work very well for this recipe.
Now , let's check out on how to make this delicious peda.



Milk Peda

Preparation Time : 10 mins | Cooking Time : 15 minsMakes : 12

Ingredients
Milk Powder - 1 cup
Heavy Cream - 1/2 cup
Sugar - 1/4 cup
Saffron - few strands
Warm milk - 1 &1/2 tbsp
Cardamom powder - 1/2 tsp

Procedure
Measure cream and powder ,soak saffron in wark milk.Heat the pan add cream and milk powder.
Mix it well and it becomes single mass within few minutes. 
Now cook the milk powder and heavy cream, with the spatula, spread the milk powder mixture in the pan and flip it. Keep doing this for 3 mins.
Now add the saffron along with milk and mix well.
Keep on stirring continuously without leaving unattended for a sec.
At one stage, the whole mixture doesn't stick to the pan and moves along with the spatula easily. It's called khoya. After adding saffron milk, it takes 11 mins to achieve this stage on medium flame.
Remove the  khoya to the plate immediately and spread it on the plate to cool quickly.
Once it's warm(hand bearable temperature), it should be crumble, at this stage ,add sugar and cardamom powder.
Mix it well with your hand(i transfer the mixture to bowl for easy mixing), if needed add 1 or 2 tsp of milk to form a dough like consistency. Now make small balls and flatten it with your hands. Do the same for the remaining.
On the top of the peda, you can make any type of impression you like, i simply make some cross with knife.
Tasty Milk Peda is ready.
Notes:
  • Cooking milk powder mixture on low flame is very important to get the perfect texture.
  • Add sugar when the khoya is warm, so it will be easy to mix together.
  • Don't add sugar when it's hot, the sugar will melt and you can't make pedas.
  • When it's warm, the khoya should be crumble., that's the correct texture.
