2 Ingredients Coconut Macaroons | Coconut Macaroons with Condensed milk

Coconut Macaroons, delicious and flavorful cookies made with just two main ingredients such as dried shredded coconut and condensed milk. 

It's one of the easiest bakes that i have made so far. If you have been following me for a while then you may already know that how much i love coconut or anything with coconut. I had been wanting to make these macaroons for a while and finally made them a couple of months ago. As expected, the cookies are so delicious! 

Ever since, i have been making these macaroons regularly at home and it's been my favorite now. It tastes and reminds me of the coconut cookies from the Indian bakeries. If you like coconut flavor then do give it a try !  

Life has been so busy with running around the toddler lately. So everything takes a back seat and i have been struggling to post a recipe in a month :-) But i love to cook/bake with my little one and he's so curious about mixing, pouring and everything that i do in the kitchen. 

Though it takes time and a lot of energy to bake along with the kids, sometimes i do love it. Lastly, he happily poses for the pictures whenever i ask him to hold the food :-)  The below picture has my whole heart ❤️  It's always the little things that make the most beautiful memories, right?
Now coming back to today's recipe, let' see what type of coconut to use 

Coconut Flakes vs Shredded Coconut vs Desiccated coconut. 

All these varieties are dried versions of coconut that's usually available in packets under the baking section in the grocery stores. These dried versions are available as both sweetened and unsweetened. I have used unsweetened coconut. 

Also for this recipe, we want finely shredded coconut. Both finely shredded and desiccated coconut works but desiccated coconut may need little more of condensed milk for the below mentioned quantity in the Ingredients section. 

If you find only coconut flakes that are thick or long stripes then pulse it for a couple of times in a blender/mixie that will help to shape the macaroons better. I have used dried finely shredded coconut flakes  in this recipe.

Ok, now let's check out how to make these delicious macaroons.

Preparation Time : 10 mins | Cooking Time : 20 mins | Serves : 2

Ingredients
Dried Shredded Coconut(unsweetened) - 1 cup
Condensed milk - 1/4 cup*
Vanilla essence - 1 tsp
Candied Cherries - a few(optional)

*You can use up to 1/3 cup for more sweetness

Procedure
Preheat the oven at 350 F 
In a bowl, add the dried shredded coconut(unsweetened), condensed milk and vanilla essence.

First mix it all with a spatula and then switch to your hands and mix it well until it all combines together.Check whether you're able to make balls from the coconut mixture. If not, add a couple of tsp of condensed milk at a time and check again. Do this until until you're able to form the ball. Even with the same brand of all ingredients, sometimes 1/4 cup of condensed milk is enough for 1 cup of coconut and sometimes it needs more. So depends on the ingredients, you may need more or not.
Next cut the candied cherries into half and keep it aside. Make a small ball out of the coconut mixture and flatten it a bit in your palm.
Place it on the parchment lined baking sheet and then place the cherries on the center for each macaroon. Candied cherries is totally optional. So you can skip it if you don't have it.
Place it in the oven and bake it for 18-20 mins.
Delicious Coconut Macaroons are ready. Let them cool completely and store it in airtight container.

Notes:
  • Macaroons would be soft when they are out of the oven. It firms up once it's completely cooled.
  • These macaroons stay crispy for a day or two, after that it became soft. 
  • Cherries are totally optional, so you can skip that if you don't want to use them.

Milk Cake using Condensed Milk| Milk Burfi

Milk Cake/ Milk Burfi, a delicious sweet made from the milk ! Traditionally, this milk cake is made from the pure cow milk and it takes hours to reduce the milk into desired consistency.

Here in today's recipe, i have taken the shortcut and used the condensed milk to speed up the process without compromising in taste and texture. 

For this diwali, if you're looking for exotic milk sweet to make with less time, then i would highly recommend to try this milk cake with condensed milk.



Tips to make perfect milk cake
  • Make sure to keep the flame in medium once the milk mixture starts to boil. 
  • Stir it continuously to avoid burning at the bottom. Even the slightest burning at the bottom spoils the whole mixture.
  • Add the curd on the needed basis because depends on the sourness of the curd you may need more or less. If the milk is started to curdle then stop adding the curd.
  • Cook the mixture till it leaves the sides of the pan and immediately pour into the greased pan. Cooking after this stage makes chewy milk cake
  • Make sure to cover the pan with thick cloth and leave it aside for at least 3 hrs. It helps to set the cake and able to cut it when it's cooled.

Milk Cake using Condensed milk

Preparation Time : 5 min | Cooking Time : 20 mins | Serves : 4

Ingredients
Milk - 1 cup 
Condensed Milk - 1 small tin(14 oz)
Curd - 2 to 3 tbsp
Ghee - 3 tbsp
Cardamom powder - 1/4 tsp

Procedure
In a non-stick pan, add both milk and condensed milk. 
Switch on the flame and keep stirring continuously until both mix together well. Bring the milk mixture into boil in medium flame.
Once it starts to boil, add curd little by little and mix it well.
When the milk mixture starts to curdle and look grainy, stop adding the curd. Now start adding the ghee little by little. Mix it well.
When all the ghee is absorbed add more ghee. Do this till all the ghee is used. 
Cook till the mixture is thick and leaves the sides of the pan(Some of the readers who have tried the recipe told me that it's too sweet for their taste. Yes, it's so sweet because of the condensed milk. Give a taste test(be aware it's extremely hot) when the mixture is thick. If it's too sweet for you , add 1/3 to 1/2 cup of unsweetened khoya at this stage and cook it for a few more mins ). Finally add the cardamom powder, mix it well and switch off the flame.
Grease any bowl with enough depth or loaf/baking pan with little ghee. Pour the mixture into the pan and smooth the top surface.
Cover the top with foil paper and then wrap the tin with thick towel. Let it undisturbed for 2- 3 hrs or until it's cooled completely. 
After it cooled down, unwrap and remove the foil paper from the baking pan and invert on to a plate. Gently tap on the pan, the milk cake would fall off from the pan easily.  Then cut into desired shape and serve.
Tasty Milk Cake is ready !

Notes: 
  • Store the leftovers in refrigerator since it's milk based
  • You can skip the cardamom and leave it with milk flavor too.

Coconut Ladoo | Coconut Ladoo with Condensed Milk | Diwali Sweets

Coconut Ladoo , an easy ladoo recipe with coconut flakes and condensed milk. Yep, just two ingredients and within 10 mins you can make 16 ladoos from the scratch. 

I have been eyeing on this ladoo for long time , finally today i made it and enjoyed every bite of it. It's so delicious and i like the chewy texture of the ladoo.
Here i'm using coconut flakes, but you can use the fresh coconut too, while scraping the fresh coconut, avoid scraping the brown part, it will change the color of the ladoo.

If you love coconut like me, then give it a try for this diwali and enjoy with your family. And also it's a perfect ladoo for gifting to your neighbors or relatives on this diwali and i have placed it on cupcake liners for gifting to one of my friend. It looks so inviting and tastes so delicious.

Coconut Ladoo

Preparation Time : 10 mins | Cooking Time : 5 mins | Makes : 16

Coconut Ladoo, Coconut Ladoo with condensed milk, Easy ladoo recipe Coconut Ladoo , an easy ladoo recipe with coconut flakes and condensed milk. Yep, just two ingredients and within 10 mins you can make 16 ladoos from the scratch.
Ingredients
Unsweetened Coconut flakes - 2 cups 
Sweetened condensed milk - 200ml
Unsweetened coconut flakes - 1/4 cup(for rolling)

Procedure
Heat a non stick pan, add condensed milk and coconut flakes into it.
Mix it well and keep on stirring for 3 to 5 mins on medium flame.
After around 5 mins, the whole mixture becomes a single mass and moves along with the spoon easily.
Remove from flame and let it comes to room temperature. Take a small amount and roll into ball shape and put it on coconut flakes.
Roll the ladoo in coconut flakes on all sides & keep it aside. Do the same for the remaining mixture.
Tasty Coconut Ladoo is ready. Put it in airtight container when it's completely cooled.

Notes:
  • You can use dessicated coconut or fresh coconut too.
  • If you're using fresh coconut, dry roast it and use.
  • If you wish, add 1/4 tsp of cardamom powder for extra flavor.
  • Depends on the size of the ladoo, the quantity varies !

Rava Coconut Ladoo with Condensed Milk | Ladoo Recipe

Wish you all very happy new year 2016. I feel that the year 2015 went away in lighting speed. Like all years, this year too have lot of ups and downs in our way. But in terms of blogging, this has been the best year so far, i post really a lot of recipes in this year
Initial on this year, i started to participate in Blogging Marathon and also i participated in one Mega Blogging Marathon, that is whole month(september) blogging. I felt really proud when i completed the Mega Marathon successfully.
Hope this year will be blessed one for every body. I thought of sharing a sweet recipe,so that you can try this on new year day. This rava ladoo is very easy  to make and only need few ingredients. I like to add coconut in my rava ladoo, but you can skip the coconut and make with only rava. 



Rava Coconut Ladoo

Preparation Time : 5 mins | Cooking Time : 10 mins | Makes : 7 ladoos

Ingredients

Rava/Semolina - 1/2 cup

Grated Coconut - 1/4 cup
Condensed Milk - 1/4 cup
Cardamom powder - 1/8 tsp
Milk - 2 tbsp
Ghee - 1 tsp
Cashews - few


This will make 7 small ladoos

Procedure
Measure and keep everything ready.Heat 1/2 tsp of  ghee in a pan, add the cashews and fry it till golden brown.Now add rava and saute it well for 2-3 mins or unitl nice aroma  comes. Then add coconut and saute it for a while.Both coconut & rava are sauted well, add the condensed milk , milk, cardamom powder and stir well. When it comes together, add the remaining 1/2 tsp ghee and give a give stir. Switch off the flame and let it comes to hand bearable temperature.Grease the hand with ghee  and make ladoos as shown below.Tasty & easy Rava Coconut ladoos are ready.
Notes:
  • Be careful  while sauteing rava & coconut to avoid color change.
  • You can skip coconut and make with rava only.
  • This ladoo is kind of chewy texture, not like our regular rava ladoo.
