Potato Corn Sandwich | Corn Sandwich | Sandwich Recipe

Potato Corn Sandwich, a delicious and easy to make  sandwich with a handful of ingredients. The sweet corn and the spicy potato mixture make a great combo for sandwiches. 

Do you hate the fact that the stuffing from the sandwich falls apart when you bite it and at the same time you want some crispy sandwich ?? Then this combination of potato & corn in the sandwich is what you're looking for. 

Mashed potato gives nice binding between two bread slices and also holding the corn well without falling apart. Ever since i have started making this, it's become our favorite without any doubt.
Here in this recipe, i have used Indian masala to spice up my stuffing, but you can make the same with whatever spice/herbs you like.If you're looking for other corn/potato sandwich recipe, here they are

Potato Corn Sandwich, Breakfast Sandwich, How to make Potato Corn Sandwich Potato Corn Sandwich, a delicious and easy to make sandwich with a handful of ingredients.
Ingredients
Bread Slices - 8
Corn kernels - 1/2 cup
Potato - 2 
Onion - 1/2 
Tomato - 1/2
Ginger garlic paste - 1/2 tsp
Turmeric powder - 1/4 tsp
Red chili powder - 1/2 tsp
Garam masala - 1 /2 tsp
Coriander leaves - few
Lemon juice - 1/2 tsp
Oil - 1 tsp
Salt  - to taste
Butter for toasting

Procedure
First slice the onion and tomatoes into small pieces. Cook the potatoes in a pressure cooker and mash them well with a fork.
In a pan, heat the oil, add the onions and saute till it became translucent, then add the ginger garlic paste and saute for a min.
Next add the corn kernels and tomatoes, mix it well and let it cover cook till the tomatoes are soft. 
Add the mashed potatoes and the spices(turmeric,chili & garam masala powder) & salt. Mix it all well together and cook till the raw smell of the spices goes off.
Finally add the coriander leaves and squeeze the lemon juice. Mix it together. That's it, the stuffing is ready.
Take a bread, apply the corn masala on the bread evenly and then close with another bread. Toast it on the tava or place it on the buttered grill and cook till both sides are crispy.
Tasty Potato Corn Sandwich is ready.Serve it with your favorite drink/juice. We had it with Strawberry lemonade.

Notes:

  • Serve immediately for crispy outer crust.

Spinach and Corn Sandwich | Sandwich Recipe

Spinach and Corn Sandwich, a healthy and tasty sandwich made from spinach and corn. It's one of my recent favorite sandwich to make for our breakfast. It's quick to put together and also taste absolute delicious with gooey and cheesy stuffing inside. This recipe is also so versatile, you can add more or less of ingredients as per your liking. Here in the recipe, for the stuffing, i have used hung curd, but sometimes i had used sour cream also , both taste equally good. So use whatever available in your pantry. For extra cheesy texture, i have used mozzarella cheese here, but without cheese also, it tastes awesome. Now let's check out how to make this cheesy and tasty spinach corn sandwich. 

Spinach and Corn Sandwich

Ingredients
Bread Slices - 8
Corn kernels - 1/4 cup
Spinach - 1 cup(tightly packed)
Hung Curd/ Sour cream - 2 tbsp
Garlic - 2
Italian seasoning - 1/2 tsp
Mozzarella cheese - 4 tbsp
Olive oil - 1 tsp
Salt & Pepper powder - to taste
Butter for toasting

Procedure
First finely minced the garlic and roughly cut the spinach into small pices and keep it ready. Heat a pan with olive oil,add the garlic saute till it fragrant, then add the corn and saute it in the oil for 2 mins.Then add the chopped spinach and mix it well. Let the spinach cook, then add the salt, pepper powder and italian seasoning. Mix it well. Switch off the flame and let it cool completely.In a bowl, take the hung curd,add spinach & corn masala into it ,mix it well.Take the bread slices, add the needed stuffing and spread it evenly and on the top add 1 tbsp of cheese and close it with another bread slice.Heat the tava, add the needed butter for toasting the bread, place the prepared sandwich on the tava and cook on both sides till it becomes golden brown. Slice and serve.Tasty and healthy Spinach & corn sandwich is ready to serve. 
Notes:

  • Let the spinach mixture comes to room temperature before mixing it with curd/sour cream.
  • Adjust the seasoning as per your liking.
  • Serve immediately otherwise it becomes soggy.

Theatre Style Buttery Popcorn | Home made Popcorn

How many of you like theatre style buttery popcorn ?? If you're one of them, then this recipe is for you. Trust me, once you have tried this way of making popcorn at home, you never ever thought of buying one of those ready made microwave popcorn. The recipe is so simple and the key ingredients here is Coconut oil, it gives that wonderful aroma to the popcorn just like how you get it in movies.
In addition, if you want those extra buttery flavor, then add a tsp of ghee at the end to make it even more delicious and buttery.I have tried this with and without ghee, either way, it tastes good, so if you're diet conscious and don't want to add those extra fat from the ghee in to your diet, feel free and skip it altogether, still it tastes as good as those movie popcorn. Now let's check out the recipe.

Theatre Style Buttery Popcorn

Preparation Time : 2 mins | Cooking Time : 03 minsServes :

Ingredients
Dried Corn kernels - 1/4 cup
Coconut oil - 1 & 1/2 tbsp
Salt - to taste
Ghee- 1 tsp(optional)

Procedure
First take a large pot and put it on flame, add the coconut oil and let it hot,then add few corn kernels into it.Wait till it pops, now it's time to add all the corn kernels, mix it with oil well.When it starts to pop, cover it with lid and let all the corns to pop. It takes around 1 to 1.5 mins. Once all the corn kernels are popped, switch off the flame & open the lid, add the salt.Shake the pot to mix it well.Finally add the ghee and cover the pot with lid and shake it well. It helps to coat the popcorn with ghee evenly.Tada Tasty Theatre Style Pop Corn is ready. Serve it immediately.
Notes:
  • Ghee is optional, without ghee also it tastes good.
  • Use fine salt, it helps to season the popcorn evenly.
  • Serve it immediately, it tends to become soggy when it sits for hours.

Sweet Corn Masala | Corn Masala | Side dish for rotis

Sweet Corn Masala, a delicious side dish for your rotis,naan,chapathi or mild puloa.Though i had tasted sweet corn masala in restaurant many times and liked it much, i haven't tried my hands on it till last month. As we both love to have sweet corn as boiled or grilled,i haven't thought much about making this curry. But last month, i bought 6 corns/dollar and we got bored of having as it,so made this curry along with some rotis. The combination was so delicious and we love it to the core. Now let's see now to make this curry.

Sweet Corn Masala

Preparation Time : 1 hr | Cooking Time : 20 minsServes :

Ingredients
Sweet Corn Kernels - 1/2 cup
Capsicum - 1(small)
Onion(large) - 1
Tomato(medium) - 2
Garlic - 5 pods
Ginger - 1/2 inch piece
Cumin seed - 1/4 tsp
Fennel seed - 1/4 tsp
Cashew - 5
Oil - 2 1/2 tsp
Cinnamon - 1/2 inch piece
Cloves - 2 
Cardamom - 2
Turmeric powder - 1/4 tsp
Red chili powder - 1/2 tsp
Coriander powder - 1 tsp
Garam masala - 1/2 tsp
Salt - to taste 

Procedure
First peel the onions,garlic & ginger and chop them along with tomato roughly into pieces. Heat the pan with 1 tsp of oil, add the cumin & fennel seed let it fry in oil for 30 secs.Then add the onions, ginger & garlic along with 1/4 tsp of  salt and saute till the onions become translucent.Then add the cashews and tomato and saute till the tomato becomes mushy.Switch off the flame and let it cool completely.Put the onion & tomato masala into mixie/blender jar and grind them into smooth paste. Heat the pan with remaining oil and add the whole spices(cinnamon, cloves and cardamom),let it fry in oil for 30 secs.Then add the masala paste and spice powder(turmeric, red chili & coriander powder) and salt.If needed add some water and cover the pan with lid and cook for 8-10 mins in medium flame. By the time, the raw smell of the masala is gone,open the lid and keep in low flame until the oil separates on the top. Finally add the garam masala & mix well.In an another pan, add 1/2 tsp of oil and add the chopped capsicum and saute till it becomes soft . Keep the cooked corn ready too.Add the capsicum and corn into the masala and mix well.Let it be in the flame for 5 mins and switch off the flame. Delicious sweet corn masala for your rotis is ready.
Notes:
  • Adding cashews give creaminess & richness to the gravy.
  • If the tomato has more tart taste, add 1/2 tsp of sugar to balance the gravy.
  • To make the gravy even more richer, add 2 tbsp of cream at the end.
  • The color of gravy depends on red chili powder and the tomato, so to get bright red color, always use well ripe tomato & good quality red chili powder.
  • Cook the corn till it becomes soft.

Butter Pepper Corn | Corn on the cob | Buttered Corn

Buttered Corn, an easy to make snack with fresh corn. Is it really a recipe required  to make butter corn? Definitely "no". 
But here i am sharing how i prepare my buttered corn. You can prepare this for kids as an after school snack, simply yet very tasty. It can be made with frozen corn kernels too. 
If you don't want to serve corn on the cob, remove the kernels and then toss with butter and pepper mixture. I like to have corn on the cob, so leave it as such.


Buttered Corn

Preparation Time : 5 mins  | Cooking Time : 10 mins

Ingredients
Corn - 2 
Butter - 1 tbsp
Salt - to taste
Pepper Powder - 1/4 tsp


Buttered Corn, Corn on the Cob Buttered Corn, an easy to make snack with fresh corn.

Procedure

Remove the outer leaves and silk from the corn and break one corn in to two pieces. Boil the water in a pressure cooker along with salt.

Add the corn and cover the pressure cooker , put on weight and cook it for 2 whistle.In the mean time, melt the butter and keep it ready.


Add pepper powder and mix it well with butter.Once the pressure released from the cooker, take the corn, brush it with butter well on all sides.


That's it, Tasty Buttered Corn is Ready.

Notes:


  • No need to break the corn into two, if you pressure cooker is large enough to hold that.
  • If you desired, add a pinch of chat masala on top.
  • You can remove the corn kernels from the cob and then toss with butter & pepper mixture and serve it in cup.
