Cabbage Patties Sandwich | Cabbage Sandwich

Cabbage Patties Sandwich , a delicious and healthy sandwich made from cabbage & eggs. For breakfast and dinner, I do prefer easy sandwiches as much as south indian tiffins like idli & dosa and this cabbage patties sandwich is one of my recent favorite sandwiches. 

Most of the time, the cabbages that are available here are so big and it lasts weeks for me, even though i have used it regularly in fried rice, noodles, poriyal and so on. So always looking for other ways to include in our diet and this cabbage sandwich is inspired from the Korean street food style bread toast. These patties made from cabbage and egg are good on its own, even it can be served as breakfast without any bread for a mild breakfast. Ok, now let's check out how to make this awesome cabbage sandwich.   


  

Cabbage Patties Sandwich | Cabbage Sandwich

Ingredients
Cabbage(shredded ) - 2 cups
Egg - 2
Chili flakes - 1/2 tsp
Italian seasoning - 1/2 tsp(optional)
Salt - to taste
Pepper powder - 1/4 tsp
Bread Slices - 4
Oil/Butter - 1/2 tsp + for toasting the bread
Hot sauce / Tomato Ketchup - as needed
Green Chutney - as needed(optional)
Onion - few slices
Tomato - few slices


Procedure
Measure the shredded cabbage and add it a bowl along with little bit of salt. With your hand, crunch the cabbage well, it helps to soften the cabbage. 
Next crack open the egg into it and then add chili flakes, Italian seasoning(if you're using),salt and pepper powder and mix it all well together with a spoon. Heat the tava, grease it with oil and add half of the cabbage egg mixture in square shape or in the shape of your bread. 
Cook it on medium flame till the bottom turns brown and then gently flip into other side and drizzle little oil to cook.
Remove from the flame when both sides are well cooked and keep it aside. Next toast the bread with butter till it slightly brown and crispy on top.
Apply hot sauce and green chutney(if using) on the bread and then place a cabbage patty, few onions and tomatoes on one bread slices and close it with another slice.
Tasty Cabbage Pattie Sandwich is ready to serve.

Notes:

  • Cook the patties on medium or low medium flame to ensure the eggs are cooked thoroughly.
  • I have used sriracha sauce today, but you can use any hot sauce or ketchup you like.
  • Onion and tomatoes gives nice texture to the sandwich
  • I have used oil for cooking patties and butter for toasting the bread.

Peanut Butter Banana Sandwich | Easy Sandwich

Peanut Butter Banana Sandwich, delicious and easy to make healthy sandwich in minutes. It's one of my favorite sandwich to make for breakfast. Simple yet so fulfilling and scrumptious !!! This sandwich comes handy after your evening workout or later night hunger or even mid day snack. All you need is some bread, peanut butter and banana and your sandwich is literally ready in a min. Try to use natural peanut butter without any artificial sugar, the sweetness from the banana itself is enough to make this sandwich yummilicious !!!

Here in today's recipe, i have used sour dough bread for this sandwich, but in general, sandwich bread is used for this recipe. For all kind of gooey filling inside the sandwich, my go to bread is sour dough bread. That's just my personal preference. If you haven't tried this sandwich before, do give it a try, it's just awesome !!!




Peanut Butter Banana Sandwich

Ingredients
Bread Slices - 2
Peanut Butter - 2 tbsp
Banana - 1/2
Butter - to toast

Procedure
Take all your ingredients, add 1 tbsp of butter on each slice of bread and spread it evenly, then slice the banana thinly and place it evenly on one side of the bread.Sandwich the bread and toast it in the pan or grill until the bread is golden brown or it has grill marks. Tasty Peanut Butter Sandwich bread is ready to serve.Serve it with some more bananas or any other fruits of your choice and juice.
Notes:
  • As per your liking, you can add more of peanut butter and banana.
  • Instead of peanut butter, almond butter can also be used.
  • Here i have used sour dough bread. But regular sandwich bread also works fine.
  • I have used smooth and creamy peanut butter without any sugar here.

Potato Corn Sandwich | Corn Sandwich | Sandwich Recipe

Potato Corn Sandwich, a delicious and easy to make  sandwich with a handful of ingredients. The sweet corn and the spicy potato mixture make a great combo for sandwiches. 

Do you hate the fact that the stuffing from the sandwich falls apart when you bite it and at the same time you want some crispy sandwich ?? Then this combination of potato & corn in the sandwich is what you're looking for. 

Mashed potato gives nice binding between two bread slices and also holding the corn well without falling apart. Ever since i have started making this, it's become our favorite without any doubt.
Here in this recipe, i have used Indian masala to spice up my stuffing, but you can make the same with whatever spice/herbs you like.If you're looking for other corn/potato sandwich recipe, here they are

Potato Corn Sandwich, Breakfast Sandwich, How to make Potato Corn Sandwich Potato Corn Sandwich, a delicious and easy to make sandwich with a handful of ingredients.
Ingredients
Bread Slices - 8
Corn kernels - 1/2 cup
Potato - 2 
Onion - 1/2 
Tomato - 1/2
Ginger garlic paste - 1/2 tsp
Turmeric powder - 1/4 tsp
Red chili powder - 1/2 tsp
Garam masala - 1 /2 tsp
Coriander leaves - few
Lemon juice - 1/2 tsp
Oil - 1 tsp
Salt  - to taste
Butter for toasting

Procedure
First slice the onion and tomatoes into small pieces. Cook the potatoes in a pressure cooker and mash them well with a fork.
In a pan, heat the oil, add the onions and saute till it became translucent, then add the ginger garlic paste and saute for a min.
Next add the corn kernels and tomatoes, mix it well and let it cover cook till the tomatoes are soft. 
Add the mashed potatoes and the spices(turmeric,chili & garam masala powder) & salt. Mix it all well together and cook till the raw smell of the spices goes off.
Finally add the coriander leaves and squeeze the lemon juice. Mix it together. That's it, the stuffing is ready.
Take a bread, apply the corn masala on the bread evenly and then close with another bread. Toast it on the tava or place it on the buttered grill and cook till both sides are crispy.
Tasty Potato Corn Sandwich is ready.Serve it with your favorite drink/juice. We had it with Strawberry lemonade.

Spinach and Corn Sandwich | Sandwich Recipe

Spinach and Corn Sandwich, a healthy and tasty sandwich made from spinach and corn. It's one of my recent favorite sandwich to make for our breakfast. It's quick to put together and also taste absolute delicious with gooey and cheesy stuffing inside. This recipe is also so versatile, you can add more or less of ingredients as per your liking. Here in the recipe, for the stuffing, i have used hung curd, but sometimes i had used sour cream also , both taste equally good. So use whatever available in your pantry. For extra cheesy texture, i have used mozzarella cheese here, but without cheese also, it tastes awesome. Now let's check out how to make this cheesy and tasty spinach corn sandwich. 

Spinach and Corn Sandwich

Preparation Time : 5 mins | Cooking Time : 15 minsServes :

Ingredients
Bread Slices - 8
Corn kernels - 1/4 cup
Spinach - 1 cup(tightly packed)
Hung Curd/ Sour cream - 2 tbsp
Garlic - 2
Italian seasoning - 1/2 tsp
Mozzarella cheese - 4 tbsp
Olive oil - 1 tsp
Salt & Pepper powder - to taste
Butter for toasting

Procedure
First finely minced the garlic and roughly cut the spinach into small pices and keep it ready. Heat a pan with olive oil,add the garlic saute till it fragrant, then add the corn and saute it in the oil for 2 mins.Then add the chopped spinach and mix it well. Let the spinach cook, then add the salt, pepper powder and italian seasoning. Mix it well. Switch off the flame and let it cool completely.In a bowl, take the hung curd,add spinach & corn masala into it ,mix it well.Take the bread slices, add the needed stuffing and spread it evenly and on the top add 1 tbsp of cheese and close it with another bread slice.Heat the tava, add the needed butter for toasting the bread, place the prepared sandwich on the tava and cook on both sides till it becomes golden brown. Slice and serve.Tasty and healthy Spinach & corn sandwich is ready to serve. 
Notes:

  • Let the spinach mixture comes to room temperature before mixing it with curd/sour cream.
  • Adjust the seasoning as per your liking.
  • Serve immediately otherwise it becomes soggy.

Coriander Pesto Panini Sandwich | Veg Panini recipe

Panini Sandwich is nothing but a grilled sandwich made from the bread that has light chewy texture like baguette, ciabatta, and michetta. When i had panini sandwich for the first time in the restaurant "Panera bread" along with tomato soup, immediately i fell in love with this sandwich and the combo. I really loved the chewy texture of this sandwich and with soup as sides, it was delicious.

Ever since, whenever i have prepared this sandwich at home, tomato soup also would be there.There are different varieties of panini sandwich based on the stuffing inside, but today i'm sharing my most favorite and simple but delicious panini sandwich "Tomato & mozzarella Panini Sandwich with Coriander pesto". 

Coriander Pesto Panini Sandwich | Veg Panini recipe

Preparation Time : 10 mins | Cooking Time : 10 minsServes :

Ingredients
Ciabatta bread roll - 1 
Tomato - 2(thinly sliced) 
Mozzarella cheese - as needed
Coriander leaves - 1 bunch
Walnut - 3 tbsp
Olive oil - 1 tbsp
Lemon juice - 1 tbsp
Garlic - 1 pod
Green chili - 1
Salt - needed
Coriander Pesto Panini Sandwich, Panini Sandwich Panini Sandwich is nothing but a grilled sandwich made from the bread that has light chewy texture like baguette, ciabatta, and michetta.

Procedure
First let's make the coriander pesto, take walnut, garlic and green chili in a blender and grind into coarse mixture.
Then add the coriander leaves, olive oil, lemon juice & salt  into the blender.
Grind them into smooth paste and transfer into a bowl. Cut the bread into slices.
Take a slice, generously add the coriander pesto and apply it all over, then add the thinly sliced tomato and mozzarella slices.
Cover it with other slices and place it in the panini maker and cook it's nicely brown.
Tasty Veg Panini with Coriander Pesto is ready.

Notes:

  • Ciabatta bread give nice chewy texture to this sandwich, but you can use any kind of bread,but make sure that it has nice chewy texture.
  • If you don't have panini maker, use the normal pan to toast the sandwich.
  • Add more or less of pesto as per your liking.

Avocado Sandwich | Guacamole Sandwich | Sandwich Recipe

Avocado Sandwich ,another easy yet super creamy & delicious sandwich.I have tried this sandwich so many times for breakfast and it's finger licking delicious each time. The best thing about this sandwich is  the creamy stuffing inside the butter toasted bread,when you bite together it's so yummy.So I suggest you to serve this sandwich as soon as prepared,otherwise the bread becomes soggy.

Avocado Sandwich

Preparation Time : 10 mins | Cooking Time : 10 minsServes :

Ingredients
Bread - 8 slices
Avocado(ripe) - 2
Onion(chopped) - 2 tbsp
Coriander leaves(chopped) - 2 tbsp
Jalapeno - 1
Lemon - 1
Salt - to taste
Mozzarella cheese - 2 to 3 tbsp
Butter - to toast  

Procedure
First finely chop the onions,coriander leaves & jalapeno into small pieces and keep it ready.Cut the avocado into two, remove the seed and scoop out the flesh into the bowl.Mash the avocado into smooth paste with fork,immediately squeeze the lemon juice. into it.Then add the onions,coriander leaves & jalapeno into the avocado along with required salt and give a good mix.Take a slice of bread and apply the avocado mixture on one side of the bread and sprinkle cheese on the top.Cover it with another bread, heat the tawa and grease it with butter generously and the place the sandwich and cook till both sides become crispy.
That's Tasty & Healthy Avocado Sandwich is ready.
Notes:
  • You can use any types of onions you like,here i used red onions.
  • If you like, you can add some chopped tomatoes.
  • Depends on the spice you want, adjust the jalapeno.
  • Once you mashed the avocado,immediately squeeze the lemon juice and mix it thoroughly,it prevents the color change of avocado.
  • Mash the avocado as per your liking either smoothly or chunky.
  • I used brown bread here, but you can use any type of bread you prefer.
