Mango Kulfi with Mango Pulp | Kulfi Recipe

Mango Kulfi, a rich and creamy frozen summer delight made from the mango and thickened milk. Kulfi is a frozen milk dessert from India, nowadays it comes with various flavors and this mango kulfi is one of the famous flavors across India.

I had tasted kulfi(store bought) a few times in the past and really loved the creaminess and flavor. It's such an easy & creamy frozen dessert to make without any ice cream machine. 

In today's recipe, I have used kesar mango pulp available in the can, but you can use the fresh mangoes too, but make sure that they are sweet and have less fiber varieties. Depending on the sweetness of the mango, you can add more or less sugar as per your preference.
Though i make popsicles often in summer, i'm not a big fan of any frozen dessert or never once crave for them. Yep that's true, now i can imagine your facial expression while reading this line, it's hard to say it in the public, every time when i say "i don't like ice cream/popsicle", people has that confused look on their face, i can totally understand because i myself never seen any person who don't like ice cream/popsicle outside of my family. 

As a kid, me and my brother were very prone to cold and got sick often, just like any doctors, our doctor also suggested avoiding frozen dessert and our parents took it very religiously and kept us out of frozen desserts completely. After I grew up, I found that all the frozen treats are too cold for my throat and it hurts really , so I stopped having ice creams altogether . That's my story and ice creams!!
Nowadays I make all these frozen treats for ST only, he is a big frozen dessert lover, like all kinds of ice creams and popsicles. I post here only after he approves and gives a big thumbs up !! and for this kulfi he gave a big thumbs up. Once it melted, I too had a few spoons, it's indeed delicious!!! So, now let's check out the recipe.


Mango Kulfi with Mango Pulp | Kulfi Recipe

Preparation Time : 6 hr | Cooking Time : 15 minsServes :

Mango Kulfi, Mango Popsicle, Mango Kulfi with Mango Pulp Mango Kulfi, a rich and creamy frozen summer delight made from the mango and thickened milk.
Ingredients
Milk - 1 cup
Mango Pulp - 1/2 cup
Sugar - 2 tbsp
Cardamom -1 
Pistachios - 1 tsp (optional)

Procedure
Heat the milk in a sauce pan, let it comes to boil.
Add sugar and keep the flame in low and let it simmer for 5 - 7 mins. By that time, the milk should be reduced to about the half.Switch off the flame.
Let it cool completely, then crush the cardamom seed and add into it. Next add the mango pulp into it and mix it well.
Pour the milk-mango mixture into the kulfi mold/any glass and cover it with foil paper.
Keep it in the freezer for 4-6 hrs/overnight. Next day, remove it from the freezer and peel the foil paper.
Keep it under running water for few secs and flip it on the any serving plate/bowl.
Yummy Mango Kulfi is ready.

Notes:
  • Adjust the sugar depends on the sweetness of the mango pulp.
  • Kulfi tends to melt very easily, so serve it immediately.
  • Cardamom here is optional, but i highly recommend.
  • Use full fat milk for richness and creaminess.
  • If you have popsicle stick, you can use them too,it will be more easy to unmold them.

Mango Mastani | Mango Milkshake with Icecream | Summer Beverage

Mango mastani,  a delicious & creamy cold beverage made from mango. Actually it is nothing but a mango milkshake topped with ice cream. It was originated from the city, Pune,India and now it's quite popular all around the country. 

It's one of the easiest drink to prepare and it taste absolutely delicious, for all mango lovers out there, if you haven't tried it before, you must try this delicious drink.  

And also it's very versatile, depends on the available ingredients in your pantry, you can topped it with any nuts or dried fruits. Here i have used only pistachios and sliced mangoes for toppings, but you can add any nuts or cheeries  or even tutti frutti to make it even more appealing.

Mango Mastani | Mango Milkshake

Mango Mastani, Mango Milkshake, Mango Drink Mango mastani, a delicious & creamy cold beverage made from mango. Actually it is nothing but a mango milkshake topped with ice cream.
Ingredients
Mango - 1 
Milk - 1/2 cup
Sugar - as needed
Vanilla ice cream - 1 scoop
Any nuts for serving

Procedure
Peel the mango and cut the flesh into small chunks, put it in blender jar and add sugar.
Add the boiled and chilled milk and grind into smooth puree, then pour into the serving glass.
Add a scoop of ice cream to the top and garnish with nuts and chopped mangoes.
Tada, Yummy,creamy Mango Mastani is ready.
Notes:
  • Depends on the sweetness of the mango, add more or less sugar as per your liking.
  • Use less fiber mango for creamy mango mastani.
  • You can use tutti frutti also for garnishing.

Mango Falooda | How to make Mango Falooda at home

Mango Falooda, a delicious and layered summer dessert prepared from mango puree, mango icecream, sweetened milk, sabja seed, falooda sev and nuts. Though I have heard about falooda drinks a lot and how delicious it is, I never had a chance to try this at any restaurant or sweet shops in India.

So all the falooda drinks that i have tasted so far are only homemade by me :-), So can't compare this with the store bought, but i can assure you that it's one of the delicious drinks i have tasted so far. 
As sabja seed is a natural coolant, having it during summer really helps to cool your body. so there are a lot of drinks prepared using these seeds during summer in North India. As a South Indian, I don't know much about this seeds' benefits for a very long time.Thanks to the blog world, I got introduced to these wonderful seeds and now I'm using it in my drinks especially during summer.

Now coming to today's falooda recipe, it looks like a lot of steps to make this delicious drink, but you can prepare all the ingredients ahead and put it in refrigerator, so it will be easy to put together everything when you need.If you're a adherent fan of mangoes like me, then you must try this falooda on this summer or when mangoes are in season.
 

Mango Falooda

Preparation Time : 30 mins | Cooking Time : 20 minsServes :

Mango Falooda, Falooda Drink,Mango Drink,Summer Drink Mango Falooda,a delicious and layered summer dessert prepared from mango puree, mango icecream,sweetned milk, sabja seed ,sev and nuts.
Ingredients
Mango - 1 
Sabja Seed - 1 tsp
Vermicelli - 2 tbsp
Sugar - 3 to 4 tsp
Milk - 1 cup
Mango Ice cream - 1 scoop
Dried Nuts

Procedure
Take the sabja seed in a bowl,add water and let it aside for 20 mins or until it's all bloomed.
Heat water(just enough to cook the vermicelli)in a sauce pan,add the vermicelli and cook till it soft, drain and keep it aside.
Next, heat milk in a sauce pan, add 2 tsp of sugar and bring into boil then keep the flame in medium and let it reduces to 3/4 cup.Remove from heat and let it cool completely.\Peel the skin of the mango and cut into small chunks, put into blender along with the remaining sugar.
Grind into smooth paste and pour into the bowl. Now place all the ingredients and the glass you're gonna serve the falooda into the refrigerator for 30 mins.\In the mean time, chop the nuts into thin slices and few mango pieces for serving. Take out all the ingredients from the refrigerator.
Now it's time to assemble, take the tall glass, add few mango pieces followed by sabja seed.
Next add the mango puree & vermicelli, then pour the milk gently.
Repeat the steps one more time or until you reach the top of the glass, finally add a scoop of mango ice cream and top it with few mango pieces and nuts.
Tada, Mango falooda is ready. 
Notes:
  • Depends on the sweetness of mango, you can add more or less of sugar in mango puree.
  • As i don't have falooda sev, i have used vermicelli, if you have falooda sev, then use it.
  • I have used pistachios here for garnishing, but you can use any nuts or cheery for garnishing.
  • Taste best when serve chilled, so keep all the ingredients in the refrigerator for minimum 30 mins  before serving.
  • As per your liking and preference, you can add more or less of all ingredients and also you can assemble the glass as per your order.
