Avocado Chapati | Soft Avocado Roti

Avocado Chapati / Avocado Roti, a delicious, healthy and soft roti made from wheat flour and avocado. Making of this roti is as simple as the regular roti however it's so healthy, super soft and pairs great with any Indian curries or it can be used as wraps.

If you have too many ripened avocado at the same time and bored of eating as it as or as guacamole , then i highly recommend giving a try on these yummy roti.

Avocados are a great source of healthy fat and eating them makes you feel full for a longer time. Including them regularly  in the diets gives a lot of health benefits according to science. So i have been including avocado in our diets frequently in the forms of salad, smoothies and rotis. 

Before moving on to the recipe, let's check out FAQs.
Does the colour of the avocado roti change after cooking?
No ! So far, i have kept this roti at room temperature for about 6 hours and it doesn't change its color.

Does the dough change its color when you keep it for a longer time? 
Yes ! The dough color starts to change after around 20 mins. So i highly recommend to make this dough when you're ready to make roti. However, after cooking, it won't be in dark brown color.

Can i add any other spices to it ?

Yes, of course. You can add chili powder as per your spice level and some garam masala for the flavor. Or you can squeeze a little bit of sriracha sauce while making dough. 
If you add more spices, then you don't even need side dish, a simple raita /yogurt would be enough

Avocado Chapati | Soft Avocado Roti

Preparation Time : 10 mins | Cooking Time : 20 mins | Serves : 12

Avocado Chapati, Soft Avocado Roti, Healthy roti Avocado Chapati / Avocado Roti, a delicious, healthy and soft roti made from wheat flour and avocado.
Ingredients
Wheat flour/Atta - 2 cups
Avocado - 1 
Lemon Juice - 1/2 tsp 
Salt - to taste
Water - as needed
Oil - for cooking the roti

Procedure
First, take an avocado , cut into half, remove the pit and scoop out the flesh into a bowl.

Mash the avocado well with masher/fork, add the lemon juice and salt.
Mix it all well together. Then add the wheat flour and mix it with the avocado mixture.
Next add the needed water and make a soft pliable dough. Divide the dough into golf sized ball. 
Roll into thin disc with rolling pin(if needed using flour for dusting while rolling). Heat the pan, grease it with little oil and then add the rolled dough, cook it on both till brown spots appear.
Tada, healthy and soft avocado roti is ready.

Notes:
  • Dough colour tends to change after a while, so don't rest the dough for more than 15 mins.
  • The proportion of wheat flour to avocado is purely up to your preference. You can add more or less of avocado for the given quantity.
  • Instead of oil, butter or ghee can also be used for cooking the roti.

Avocado Mango & Pear Salad | Salad Recipe

Avocado Mango & Pear Salad, a healthy and quick to put together salad.Last year i had seen few salsa recipes for tortilla chips on pinterest using avocado & mango, i loved the idea of using avocado and mango together, both are my most favorite fruits and immediately tried it and fell in love with the combination. Later i thought instead of serving them as a salsa for chips, they themselves make a great salad.
To make them as salad, i kind of felt that it need some crunchy element in it. First i had tried it with apples, but didn't like the combination much, second, it tried it with some pears, OMG, it turned out so good, the flavors of fruits complement each other well and really love the combination. If you're making this as salsa for chips, no need to add pears, the chips itself gives enough crunchiness to the creamy salsa. But if you're planning to have them as salad like me, highly recommend to add the pears. Try out the combination and thank me later :-)

Avocado Mango & Pear Salad

Preparation Time : 5 mins | Cooking Time : 0 mins | Serves : 1 to 2

Ingredients
Avocado - 1
Pear - 1 
Mango - 1
Coriander leaves - few
Salt - a pinch
Pepper powder - as needed
Lemon juice - 2 tsp

Procedure
Take all the fruits and cut into small cubes and place it in the bowl.Squeeze the lemon juice into it and then add a pinch of salt and the needed pepper powder.Finally add the chopped coriander leaves and mix it all together.Healthy Avocado Salad is ready. Serve it immediately.
Notes:
  • Make sure that all the fruits have equal proportions.
  • Use well ripen yet firm mangoes for better taste.
  • If you're mangoes has more sourness, then reduce the amount of lemon juice.

Baked Avocado Rolls with Phyllo dough | Avocado Spring Rolls | Appetizers

Baked Avocado  rolls , a delicious snack with crispy outside and creamy avocado inside. It's a perfect appetizer for your meal or a snack to munch on along with your evening tea. It's one of the easiest snacks that you can make in minutes provided that you have phyllo sheets. 

When we visited BJ's restaurant for the first time a couple of months back, we ordered the avocado egg rolls for the appetizers and that's the first time that i had tasted avocado rolls and i loved it so much. Crispy outside and creamy avocado filling make it so good.It's been in my mind for a long time to try these crispy rolls and finally last week I tried this Avocado Rolls, instead of using egg wrapper as pastry, I used the phyllo dough that's sitting idle in my refrigerator for a week. Since I was using phyllo dough, I baked the rolls instead of deep frying, one more reason to indulge these rolls without any guilt 😀.

To be honest it was way too good than what i had expected.Because of phyllo sheets, the outside was so crispy and i'm sure that it would stayed crispy for longer time than the one made with egg wrappers.I won't say that it was like BJ's Avocado Egg rolls, but if you like that one, definitely you're gonna love this, so what are you waiting for, try this rolls and enjoy with your family.

Baked Avocado Rolls

Preparation Time : 15 mins | Cooking Time : 25 mins | Serves : 3

Avocado Roll, Baked Avocado Roll, Avocado Spring Rolls Baked Avocado rolls , a delicious snack with crispy outside and creamy avocado inside.
Ingredients
Avocado(ripe) - 2
Onion(chopped) - 2 tbsp
Coriander leaves(chopped) - 2 tbsp
Jalapeno - 1
Lemon - 1
Salt - to taste 
Phyllo Sheets - 7
Oil - for brushing

Procedure
Preheat the oven at 350F
Finely chop the onions,coriander leaves & jalapeno into small pieces and keep it ready.Cut the avocado into two, remove the seed and scoop out the flesh into the bowl
Mash the avocado into smooth paste with fork,immediately squeeze the lemon juice into it.
Then add the onions,coriander leaves & jalapeno into the avocado along with required salt and give a good mix.That's it stuffing is ready.
Take the phyllo sheets and thaw as per the instructions and then take one sheet at a time on the working board,brush it with oil on all over the sheets.
Now take a spoonful of avocado filling and place it on top center of the sheets, fold the sides and then start rolling the sheets till the end.
Place the rolled sheets into the baking tray, similar do the remaining sheets and brush the top with oil and bake it in the preheated oven at 350F for 22-25 mins.
Tasty & crispy spring rolls are ready.
Notes:
  • Cover the phyllo sheets with damp kitchen towel until use, it has the tendency to easily became dry.
  • I brought phyllo sheets from walmart in the frozen section and I think it will be available in all major grocery stores. 
  • Instead of oil for brushing, you can use the butter for richness.
  • Taste best when it's warm.

Avocado Quesadilla with left over chapathi | Quesadilla Recipe

Avocado Quesadilla, a tasty, healthy & easy to make quesadilla recipe with mashed avocado. Quesadilla is a Mexican dish prepared from two tortillas with the stuffing in between them, usually the stuffings are cheese, beans or any meat. 

I love avocados like anything hence always looking for the possibility to incorporate in day to day dishes and this avocado quesadilla is one of  my favorite recipes to make for dinner, brunch or even for breakfast with the leftover chapati from the previous night. 

For this quesadilla, I had used the leftover chapati/roti instead of tortillas and it turned out so delicious every SINGLE time. So you no need to worry about buying/making tortillas to make this quesadilla. 

When it comes to cooking, there are no hard and fast rules, all you need is a tasty and healthy dish at the end, right ?, so use whatever you like either it's tortillas or chapati. If you like avocado, then definitely give it a try . I'm sure that you won't be disappointed for sure.

Avocado Quesadilla

Preparation Time : 10 mins | Cooking Time : 15 mins | Serves : 2

Avocado Quesadilla, Grilled Avocado Quesadilla Avocado Quesadilla, a tasty, healthy & easy to make quesadilla recipe with mashed avocado.
Ingredients
Tortilla/Chapati - 4 
Avocado(ripe) - 2
Onion(chopped) - 2 tbsp
Coriander leaves(chopped) - 2 tbsp
Jalapeno - 1
Lemon - 1
Salt - to taste
Mozzarella cheese - 2 to 3 tbsp
Capsicum(chopped) - 2 tbsp(optional)
Tomato(chopped) - 2 tbsp (optional)
Butter - to toast  

Procedure
First finely chop the onions,coriander leaves & jalapeno into small pieces and keep it ready.Cut the avocado into two, remove the seed and scoop out the flesh into the bowl.
Mash the avocado into smooth paste with fork,immediately squeeze the lemon juice. into it.
Then add the onions,coriander leaves & jalapeno into the avocado along with required salt and give a good mix.
Chop the capsicum & tomato into small pieces.Take a tortilla & apply the avocado mixture on one side.
Add some capsicum, tomato & cheese on the top of avocado mixture.
Fold into half and place it on buttered grill/regular tava and cook on both sides.
Slice it half and it's ready to serve. We had it with siracha sauce on top.

Notes:
  • Add more or less  tomato & capsicum as per your liking.
  • Instead of grilling, you can cook it on tawa also.
  • I have used flour tortillas, but you can corn tortillas too.
  • You can make this with leftover chapathis/rotis too.

Avocado Sandwich | Guacamole Sandwich | Sandwich Recipe

Avocado Sandwich ,another easy yet super creamy & delicious sandwich.I have tried this sandwich so many times for breakfast and it's finger licking delicious each time. The best thing about this sandwich is  the creamy stuffing inside the butter toasted bread,when you bite together it's so yummy.So I suggest you to serve this sandwich as soon as prepared,otherwise the bread becomes soggy.

Avocado Sandwich

Preparation Time : 10 mins | Cooking Time : 10 mins | Serves : 2

Ingredients
Bread - 8 slices
Avocado(ripe) - 2
Onion(chopped) - 2 tbsp
Coriander leaves(chopped) - 2 tbsp
Jalapeno - 1
Lemon - 1
Salt - to taste
Mozzarella cheese - 2 to 3 tbsp
Butter - to toast  

Procedure
First finely chop the onions,coriander leaves & jalapeno into small pieces and keep it ready.Cut the avocado into two, remove the seed and scoop out the flesh into the bowl.Mash the avocado into smooth paste with fork,immediately squeeze the lemon juice. into it.Then add the onions,coriander leaves & jalapeno into the avocado along with required salt and give a good mix.Take a slice of bread and apply the avocado mixture on one side of the bread and sprinkle cheese on the top.Cover it with another bread, heat the tawa and grease it with butter generously and the place the sandwich and cook till both sides become crispy.
That's Tasty & Healthy Avocado Sandwich is ready.
Notes:
  • You can use any types of onions you like,here i used red onions.
  • If you like, you can add some chopped tomatoes.
  • Depends on the spice you want, adjust the jalapeno.
  • Once you mashed the avocado,immediately squeeze the lemon juice and mix it thoroughly,it prevents the color change of avocado.
  • Mash the avocado as per your liking either smoothly or chunky.
  • I used brown bread here, but you can use any type of bread you prefer.
