Baked Avocado Rolls with Phyllo dough | Avocado Spring Rolls | Appetizers

Baked Avocado  rolls , a delicious snack with crispy outside and creamy avocado inside. It's a perfect appetizer for your meal or a snack to munch on along with your evening tea. It's one of the easiest snacks that you can make in minutes provided that you have phyllo sheets. 

When we visited BJ's restaurant for the first time a couple of months back, we ordered the avocado egg rolls for the appetizers and that's the first time that i had tasted avocado rolls and i loved it so much. Crispy outside and creamy avocado filling make it so good.It's been in my mind for a long time to try these crispy rolls and finally last week I tried this Avocado Rolls, instead of using egg wrapper as pastry, I used the phyllo dough that's sitting idle in my refrigerator for a week. Since I was using phyllo dough, I baked the rolls instead of deep frying, one more reason to indulge these rolls without any guilt 😀.

To be honest it was way too good than what i had expected.Because of phyllo sheets, the outside was so crispy and i'm sure that it would stayed crispy for longer time than the one made with egg wrappers.I won't say that it was like BJ's Avocado Egg rolls, but if you like that one, definitely you're gonna love this, so what are you waiting for, try this rolls and enjoy with your family.

Baked Avocado Rolls

Avocado Roll, Baked Avocado Roll, Avocado Spring Rolls Baked Avocado rolls , a delicious snack with crispy outside and creamy avocado inside.
Ingredients
Avocado(ripe) - 2
Onion(chopped) - 2 tbsp
Coriander leaves(chopped) - 2 tbsp
Jalapeno - 1
Lemon - 1
Salt - to taste 
Phyllo Sheets - 7
Oil - for brushing

Procedure
Preheat the oven at 350F
Finely chop the onions,coriander leaves & jalapeno into small pieces and keep it ready.Cut the avocado into two, remove the seed and scoop out the flesh into the bowl
Mash the avocado into smooth paste with fork,immediately squeeze the lemon juice into it.
Then add the onions,coriander leaves & jalapeno into the avocado along with required salt and give a good mix.That's it stuffing is ready.
Take the phyllo sheets and thaw as per the instructions and then take one sheet at a time on the working board,brush it with oil on all over the sheets.
Now take a spoonful of avocado filling and place it on top center of the sheets, fold the sides and then start rolling the sheets till the end.
Place the rolled sheets into the baking tray, similar do the remaining sheets and brush the top with oil and bake it in the preheated oven at 350F for 22-25 mins.
Tasty & crispy spring rolls are ready.
Notes:
  • Cover the phyllo sheets with damp kitchen towel until use, it has the tendency to easily became dry.
  • I brought phyllo sheets from walmart in the frozen section and I think it will be available in all major grocery stores. 
  • Instead of oil for brushing, you can use the butter for richness.
  • Taste best when it's warm.

Avocado Sandwich | Guacamole Sandwich | Sandwich Recipe

Avocado Sandwich ,another easy yet super creamy & delicious sandwich.I have tried this sandwich so many times for breakfast and it's finger licking delicious each time. The best thing about this sandwich is  the creamy stuffing inside the butter toasted bread,when you bite together it's so yummy.So I suggest you to serve this sandwich as soon as prepared,otherwise the bread becomes soggy.

Avocado Sandwich

Ingredients
Bread - 8 slices
Avocado(ripe) - 2
Onion(chopped) - 2 tbsp
Coriander leaves(chopped) - 2 tbsp
Jalapeno - 1
Lemon - 1
Salt - to taste
Mozzarella cheese - 2 to 3 tbsp
Butter - to toast  

Procedure
First finely chop the onions,coriander leaves & jalapeno into small pieces and keep it ready.Cut the avocado into two, remove the seed and scoop out the flesh into the bowl.Mash the avocado into smooth paste with fork,immediately squeeze the lemon juice. into it.Then add the onions,coriander leaves & jalapeno into the avocado along with required salt and give a good mix.Take a slice of bread and apply the avocado mixture on one side of the bread and sprinkle cheese on the top.Cover it with another bread, heat the tawa and grease it with butter generously and the place the sandwich and cook till both sides become crispy.
That's Tasty & Healthy Avocado Sandwich is ready.
Notes:
  • You can use any types of onions you like,here i used red onions.
  • If you like, you can add some chopped tomatoes.
  • Depends on the spice you want, adjust the jalapeno.
  • Once you mashed the avocado,immediately squeeze the lemon juice and mix it thoroughly,it prevents the color change of avocado.
  • Mash the avocado as per your liking either smoothly or chunky.
  • I used brown bread here, but you can use any type of bread you prefer.

Guacamole | Home made Guacamole | Avocado Dip

Guacamole/Avocada Dip is the famous mexican dip served along with some tortilla chips.During our initial days in US, i had brought the avocado especially to try the guacamole,but i didnt like the homemade guacamole and it was not at all taste like restaurant ones. Later i realized that i don't know how to choose the ripe avocado and i got this tip from one of cooking tv shows,i.e you have to choose the firm and slightly green avocado from the store and let it sit in kitchen counter for 2- 3 days,by the time it turns into completely dark color.That's the right stage to use the avocado for guacamole.If avocado is new to your cooking like me,this tip will definitely help.
