Guacamole | Home made Guacamole | Avocado Dip

Guacamole/Avocada Dip is the famous mexican dip served along with some tortilla chips.During our initial days in US, i had brought the avocado especially to try the guacamole,but i didnt like the homemade guacamole and it was not at all taste like restaurant ones. Later i realized that i don't know how to choose the ripe avocado and i got this tip from one of cooking tv shows,i.e you have to choose the firm and slightly green avocado from the store and let it sit in kitchen counter for 2- 3 days,by the time it turns into completely dark color.That's the right stage to use the avocado for guacamole.If avocado is new to your cooking like me,this tip will definitely help.

Home made Guacamole

Preparation Time : 10 mins | Cooking Time : 0 minsServes :

Ingredients
Avocado(ripe) - 2
Onion(chopped) - 2 tbsp
Coriander leaves(chopped) - 2 tbsp
Jalapeno - 1
Lemon - 1
Salt - to taste  

Procedure
First finely chop the onions,coriander leaves & jalapeno into small pieces and keep it ready.Cut the avocado into two, remove the seed and scoop out the flesh into the bowl.Mash the avocado into smooth paste with fork,immediately squeeze the lemon juice into it.Then add the onions,coriander leaves & jalapeno into the avocado along with required salt and give a good mix.That's it, Tasty Avocado Dip/Guacamole is ready to serve.
Notes:
  • You can use any types of onions you like,here i used red onions.
  • If you like, you can add some chopped tomatoes.
  • Depends on the spice you want, adjust the jalapeno.
  • Once you mashed the avocado,immediately squeeze the lemon juice and mix it thoroughly,it prevents the color change of avocado.

Mexican Beans Burrito | Bean Wrap | Kidney Bean Wrap

Today's Breakfast recipe is Burrito from Mexico.Burrito is a wheat flour tortilla wrapped into cylindrical shape with  the fillings inside.In mexico, mostly meat & refried beans used in the burrito.Here i'm using the kidney beans as filling, it's very healthy & fulling dish to have on breakfast. When i made this, it had been raining & no power in our area, but somehow i could able to get few decent pictures, i think. Now,Over to the recipe.

Mexican Bean Burrito

Preparation Time : 8 hrs for soaking | Cooking Time : 25 minsServes :

Ingredients
For Tortilla
All purpose flour - 1/2 cup
Wheat flour - 1/2 cup
Olive oil - 1 1/2 tsp
Salt - to taste
Water to kneed
For filling
Red Kidney bean - 1/2 cup
Onion - 1 
Tomato - 2 nos
Capsicum - 1 (small)
Chili Powder - 1/2 tsp
Cumin Powder - 1/2 tsp
Salt - to taste

Fresh Tortilla
Procedure
Take the flour in a bowl,add salt & olive oil , mix it well. Add enough water to form a pliable dough.Keep it aside for  30 mins.Soak the red kidney bean overnight & cook it in pressure cooker for 5 whistle or until it's mushy.Cut onion, capsicum & tomato into small pieces. Heat the oil in a pan, add the onions , till it translucent.Add capsicum & tomatoes and give a quick stir.Then add the cooked beans & all the spices(chili powder, cumin powder) & salt, mix well and add 1/2 cup of water. Cook  it until the raw smell of masala goes off and it blends well.Now the filling is ready.Time to make tortilla. Make equal size ball from the dough, dust the working surface and roll into thin sheets with rolling pin.Heat the tava and grease with some oil , put the rolled sheets on it and cook it on both sides until the brown spots appears.Take the tortilla, place the filling just near to the center, add the fresh veggies you like (like onion/tomato/ cabbage i used cabbage only) & some coriander leaves. Roll into wrap,refer below pic.Tasty & healthy Bean Burittos is ready to serve.  
Notes:
  • If you have leftover tortilla, but it in ziplock bag and refrigerate, tava it while using.
  • It's great dish to pack on.

Mexican Salsa | Pica De Gallo| Salsa Fresca

Salsa Fresca or Pica De Gallo  is  a fresh uncooked salad from Mexico, served as condiment for  tortilla chips ,grilled shrimp or steak.It's a very refreshing condiment and it tastes awesome & juicy.
This recipe is adjusted to anyone preference.so feel free to make changes as you like.Let take a look at this procedure.


Mexican Salsa

Preparation Time : 10 mins | Cooking Time : 0 minsServes :

Ingredients
Onion - 1
Garlic Cloves -1 
Lemon Juice - 1 tbsp
Salt - 1/2 tsp
Jalapeno - 1 tbsp
Capsicum - 2 tbsp(Optional)
Tomato - 2 nos
Coriander leaves - a handful
Procedure
Chop all the veggies (Onion, Garlic,Tomato, Jalapeno & Coriander leaves ) into small pieces.Take them in a bowl, add salt & lemon juice. Mix it well & serve with Tortilla chips.
Notes:
  • Mix all of it, once you are ready to serve.
  • Use very ripe Bangalore tomato, dont use country variety.
  • I used regular onions, but in the original recipe, white onion is used
