Methi Paratha | Methi Roti

Methi Paratha/ Methi Roti, a delicious Indian flatbread made from wheat flour and fresh fenugreek leaves. With simple curry and/or raita, it makes a healthy balanced meal.

As summer has started here, i have started to grow fenugreek leaves and often make this paratha at home for our lunch. It's one of our favorites and making them using home grown fenugreek leaves is even special. 

Adding fenugreek leaves gives a great flavor to the paratha. To avoid the bitterness from the fenugreek leaves, always use fresh and young leaves which have very mild bitterness.

Tips for beginners 
  • Make sure to wash the methi leaves well and dry it on a paper towel for a few mins before adding it into the flour.
  • Roughly chop the fenugreek leaves for even distribution of leaves on the paratha.
  • I have used oil for cooking the paratha, but butter and ghee are also great for cooking the paratha.

Methi Paratha, Methi Roti, Indian Flatbread Methi Paratha/ Methi Roti, a delicious Indian flatbread made from the wheat flour and fresh fenugreek leaves.
Ingredients
Wheat flour - 2 cups
Fenugreek leaves / Methi leaves - 1 cup
Red chili powder - 1/2 tsp
Turmeric powder - a pinch
Salt - to taste
Water - as needed

Procedure
Take the wheat flour in a bowl and then add the roughly chopped fenugreek leaves, turmeric powder, red chili powder and salt.

Mix it all together well. Next add the water and make a soft dough.
Rest the dough for 10 mins and then pinch a small amount of dough and roll into a smooth balls. 
Roll each dough balls into thin discs by using rolling pin , if needed use flour for dusting. Heat the dosa tava and cook the roti till both sides have brown spots. It hardly takes 1 to 1 & 1/2 mins on each sides.
That's it, Delicious and healthy Methi Paratha / Roti is ready.  Serve it with your favorite curry

Notes:
  • Always cook roti on high flame for a few mins to get the soft texture.
  • More time on the tava makes the roti harder.
  • For more flavor, you can add 1/2 tsp of garam masala too.
  • Adjust the red chili powder as per your preference. The given quantity is for very mild spice.

Green Onion Paratha | Spring Onion Paratha

Green Onion Paratha, a quick to make delicious and healthy Indian style paratha. It's one of my favorite parathas and I really love the green onion flavor in the paratha. While shopping for fresh produce, green onion is one of the must buys because I often make fried rice and Indo Chinese style side dishes. This paratha is my recent discovery from some pinterest scroll and making them regularly ever since. If you like green onion flavors, then this parathas are definitely for you. Before moving to the recipe, you can use spring onions and scallion also in this recipe. If you're wondering how to differentiate between those read the below paragraph 
Scallions vs Green Onions Vs  Spring onions 
Scallions, green onions and spring onions are all the same and it's known by different names based on the time they grow before being harvested. Scallions have the thinnest stem and there is no visible bulb at the end. On the other hand, spring onions have thick stems and have big white bulbs at the end. Green onions are somewhere in between scallions and spring onions and have very little bulb.

Green Onion Paratha

Green Onion Paratha, Spring Onion Paratha, Indian Paratha, Scallions Paratha, Green Onion Paratha, a quick to make delicious and healthy Indian style paratha. If you like green onion flavors, then this parathas are definitely for you.
Ingredients
Wheat flour - 2 cups
Green Onions - 4
Turmeric powder - a pinch
Chili powder - 1/2 tsp
Salt - 1/2 tsp
Cumin seed - 1/2 tsp
Water - 3/4 cup(approx)
Oil - 1 tbsp(for cooking the parathas)


Procedure
First trim the edges of the green onions and cut into thin slices. In a bowl, add the wheat flour, chopped green onions, turmeric powder, chili powder, salt and cumin. Mix it all together first and then add the water as needed & make it as soft dough and let it rest for 20 mins.Pinch a small amount of dough and make it as golf sized ball. Dust the floor & dough ball with flour and then roll it as thin sheets. Heat the tava, grease it with oil and then place the rolled dough, cook till the bubble starts to appear and then flip on to the other side and cook till the brown spots appears. Remove on to the plate and repeat the same for next dough ball.
Tasty and healthy Green Onion Paratha is ready. Serve it with your favorite curry. We have it with restaurant style kadai vegetable curry

Notes:
  • Mix the green onions with flour well, the moisture from the green onions makes the flour slightly wet and then add needed water to make soft dough. 
  • Adjust the spices as per your liking.
  • Cumin is optional in this paratha. You can totally skip it.

Red Radish Paratha | Pink Radish Paratha

Red Radish Paratha, a delicious and healthy paratha made from wheat flour & grated red/pink radish. Though i already have had the mooli paratha/radish paratha recipe here, today's recipe is quite different from the one that i had shared previously. In today's recipe, the grated radish is mixed with the dough instead of making it as stuffed paratha, so it's super easy to make and even beginners in cooking can try this without any difficulties. 

Usually i buy small red radish to make stir fry and it tastes great with South Indian meals. The idea of making red radish paratha was in mind for a while, so I gave it a try a few months ago and it turned out so pretty and tasted delicious. Even since i have been using small red radish for this paratha but regular red/white radish can also be used in the same way. 

It's been more than 10 days since i have posted a recipe here, though i had the photos for quite a few recipes in hand, somehow i didn't find any motivation to write the recipe and post here. It's easy to succumb to your misery/sadness and being idle without doing anything. 

But it doesn't make anything better, so choose happiness and try to see at least one good thing in the bad situation and move on. So when i woke up today, i was determined to set aside my excuses and post this recipe. Hurray !!!  Finally here it is !! Ok, thank you for reading my rant. Now let's check out how to make this healthy radish paratha.






Red Radish Paratha

Preparation Time : 20 mins | Cooking Time : 20 minsMakes : 10

Red Radish Paratha,Paratha,Radish Paratha, Easy Paratha Red Radish Paratha, a delicious and healthy paratha made from wheat flour & grated red radish.
Ingredients
Wheat Flour - 2 cups
Red Radish - 10 to 12(small)
Cumin seed - 1 tsp
Coriander leaves - few
Salt - to taste
Water - as needed

Procedure
First trim the edges of the radish and grate them finely. Next add wheat flour, radish, finely chopped coriander leaves, cumin seed & salt. Mix it well.
Then add the water and make a soft dough. Let it aside for 10 mins. Next make golf sized balls. Dust the flour with flour and roll into thin disc with the help of rolling pin.
Heat the tava, grease with oil and add the rolled dough. When you start seeing small bubbles on the top, flip it over and cook till brown spots appear on both sides. 
Tasty and healthy Red radish parathas are ready. Serve it with your favorite curry, we had it with chana masala.

Notes:
  • Grate the radish finely so it blends well with the dough.
  • If radish leaves lot of water after grating, squeeze the excess water and add into the flour.
  • Mix the radish with flour well and then add water little by little to make soft dough.
  • Don't keep the dough for longer hours, it starts to become soggy because of radish nature.
  • I haven't added any spices in this roti, but if you want add 1/2 tsp of red chili powder.

Radish Paratha | Mooli Paratha | Paratha Recipe

Mooli Paratha, a delicious stuffed paratha made from radish & other spices. In north india, during winter, mooli/radish is the staple vegetable in their diet and have included them in various forms and this paratha is one among them. 

Growing up in south india, other than adding in the sambar, i didn't know much about using radish in other dishes and it was very rare that you can see radish in my kitchen. One day when walking through the fresh produce aisle in the store, bored with the regular veggies and thought of buying some new veggies and picked up radishes which were so large in size.

Later when back home, i had no idea what to make with it other than sambar, consequence of impulse buying. Though i had knew paratha can be made with radish, didn't know how to make it, then came the google savior, made some parathas, liked it so much  and it's been regular in our lunch menu since that day. That's how mooli paratha/Radish paratha entered our home :-) Other than paratha and sambar, I'm still looking for ways to use radish in my daily cooking.

Radish has some pungent smell and it offset my appetite a lot, so i have added a lot of mint & coriander leaves to balance that strong flavor. But if you like radish flavor, you don't need to add a lot of mint & coriander leaves. 

Next, once the stuffing is ready, make the parathas immediately, keeping the stuffing for a longer time will make the radish oozes out lot of liquid and it's really difficult to stuff and roll into parathas. Those are few things that you have to make sure of to make this delicious paratha. Now let's check out the recipe.

In recent times, i have received a lot of dms on instagram like "follow for follow" or "like for like". Seriously i don't understand the logic behind it, if i have really liked some page, i would have done that already. Same for the other end also, right?? 

Really like my page??, do follow, why do you need the compulsion of making sure that I also follow you ?? Also i'm here in social media to share my passion, not to get more followers or likes. If i get more likes or follows on the way, it means only one thing that i have done something really good and useful to others.

If not, no problem, still i'm gonna share what i love doing. That's my motto in social media and  don't believe in gaining numbers like these, it doesn't serve a purpose for either. Yesterday it was facebook, today is Instagram, tomorrow some other app will come, so please be true to yourself and don't get into the social media numbers trap. These thoughts run through my mind for a while, so let it out loud and clear., now it's time to check out the recipe.

Radish Paratha | Mooli Paratha

Preparation Time : 10 mins | Cooking Time : 20 minsServes : 1 to 2

Mooli Paratha,Paratha,Radish Paratha,Stuffed Paratha Mooli Paratha, a delicious stuffed paratha made from radish & other spices.
Ingredients
Whole Wheat flour - 1 cup
Oil - 1 tsp
Water - as needed
Salt - to taste
For Stuffing
Radish - 1 cup(grated)
Ginger - 1 tbsp(grated)
Turmeric - a pinch
Red chili powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Mint & coriander leaves - a handful
Salt - to taste 

Procedure
Take the flour in a bowl, add salt & oil and mix it with flour well. Then add water to the flour.Mix it with your hand and gather it together as a single mass , now knead the dough well until the surface looks smooth.Cover it with lid and set aside for minimum 15 mins.
Peel the radish and grate it finely. Put it in a bowl, add salt, mix it well and let it sit covered for 20 mins.
Discard the water leave out from the radish and squeeze to remove any liquid and put it in the bowl again, add finely chopped mint & coriander leaves, turmeric, red chili & garam masala powder, mix it all well together. That's it, the stuffing is ready.
Take a lemon size ball from the dough, roll into thick disk  with rolling pin and add a tbsp of stuffing, gather the edges and seal the stuffing.
Keep the sealed edge down, dust the surface with flour & roll into paratha with rolling pin. 
Heat the tava, grease it with oil and place the paratha, drizzle some oil on top too and cook the paratha till the brown spots appears on both side.Remove from the tava and do the same for the remaining dough & stuffing.
Tasty Mooli/Radish Paratha is ready. Serve it with your favorite curry. We have it with veg makhani & pomegranate raita.

Carrot Cheese Paratha | Carrot Paratha | Paratha Recipe

Carrot Cheese Paratha, a delicious stuffed paratha that can be prepared in no time.  I have been thought of making this paratha for every long time, but ST is not fond of any meal with slight sweet in it. Also I was thinking that the paratha might have slight sweet in it,because of carrot. Finally keep the doubts aside and tried it last week, Yes it has mild sweet taste but not at all overpowering and with other spices and cheese, it tastes so good. Even ST had it without any complaints :- ). Ok, now let's check out how to make this super easy carrot paratha. 

Carrot Cheese Paratha

Preparation Time : 10 mins | Cooking Time : 20 minsServes :

Ingredients
For dough
Wheat flour - 1 cup
Oil - 1 tsp
Salt - to taste
Water - as needed
For Stuffing
Carrot - 2 
Cheese - 1/2 cup
Red chili powder - 1/4 tsp
Garam masala powder - 1/4 tsp
Salt - to taste


Procedure
Take the flour in a bowl, add salt & oil and mix it with flour well. Then add water to the flour.Mix it with your hand and gather it together as a single mass , now knead the dough well until the surface looks smooth.Cover it with lid and set aside for minimum 15 mins.Next grate the carrot finely and add into the bowl along with the other ingredients of the stuffing. Mix it well.Pinch medium lemon sized balls from the dough and roll it as smooth. Take the rolling pin and roll into small disc, place the stuffing in the center.Pleat the sides towards the center and seal it. Keep the sealed edge downside and roll into thick paratha(if needed add more flour for dusting).Heat the tava, grease it will oil and place the rolled paratha on it.Cook it on both side until the brown spots appears on both sides.Tada, Tasty Carrot Paratha is ready.

Notes:

  • You can add more or less cheese as per liking.
  • Here i have used Mozzarella cheese,but you can use any cheese you like.
  • Grate the carrot finely, it helps to roll the paratha evenly.

Broccoli Paratha | Broccoli Stuffed Paratha | Paratha Recipe

Broccoli Paratha, a delicious paratha stuffed with mildly spiced broccoli masala.Next to the broccoli soup, this is my favorite recipe with broccoli. It's one of the easiest stuffings to make for paratha and also it's so customizable to suit your taste. 

For this paratha, I have followed the same procedure as my cauliflower paratha without much change and it turned out so soft, with some curd, it would be awesome, no need to make any side dish at all.

While making this paratha, I ran out of atta flour and also we were in the process of moving to a new place, so i didn't want to buy atta just to make this and again i would pack the leftover for shipping. 

Instead I have used whole wheat flour bought at HEB, the texture of this flour is quite different and also it has a darker color than the regular atta flour. I was a bit skeptical how it would turn out, to my surprise, it turned out so good. Usually I use whole wheat flour for chapathi only and never used before for stuffed paratha. 

Glad i did, now i can use whole wheat flour for parathas too. You may think that both atta and wheat flour are the same, right?? I too had the same opinion before using it regularly, but now i'm sure that the whole wheat flour available here in US based stores is different in both texture and taste compared to the atta available in Indian stores. 

Ok, let's check out on how to make these healthy broccoli paratha!



Broccoli Paratha

Preparation Time : 20 mins | Cooking Time : 20 minsServes :

Broccoli Paratha, Broccoli Stuffed Paratha, Easy Paratha Recipe Broccoli Paratha, a delicious paratha stuffed with mildly spiced broccoli masala.
Ingredients
Whole Wheat flour - 1 cup
Oil - 1 tsp
Water - as needed
Salt - to taste
For Stuffing
Broccoli - 1 floret(small)
Oil - 1 tsp
Turmeric - a pinch
Red chili powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Salt - to taste 

Procedure
Take the flour in a bowl, add salt & oil and mix it with flour well. Then add water to the flour.Mix it with your hand and gather it together as a single mass , now knead the dough well until the surface looks smooth.Cover it with lid and set aside for minimum 15 mins.
Cut the broccoli into the small florets, wash it in running water and drain it completely.
Put the florets into mixie jar and pulse it twice or thrice until it's fine. Heat the pan with olive oil.
Add the broccoli and saute it in the oil for 2 mins, then add all the spices(turmeric ,red chili & garam masala powder) and salt.
Mix it well with the broccoli and then cover the pan with lid and let the broccoli cooks well. Switch off the flame and the stuffing is ready.
Pinch medium lemon sized balls from the dough and roll it as smooth. Take the rolling pin and roll into small disc, place the stuffing in the center.
Pleat the sides towards the center and seal it. Keep the sealed edge downside and roll into thick paratha(if needed add more flour for dusting).
Do the same for all the dough. Heat the tava, grease it will oil and place the rolled paratha on it.
Cook it on both side until the brown spots appears on both sides. Remove it from the tava and place it on the plate. 
Tada, Healthy Broccoli Paratha is ready.Serve it with curd and pickle.
