Radish Paratha | Mooli Paratha | Paratha Recipe

Mooli Paratha, a delicious stuffed paratha made from radish & other spices. In north india, during winter, mooli/radish is the staple vegetable in their diet and have included them in various forms and this paratha is one among them. 

Growing up in south india, other than adding in the sambar, i didn't know much about using radish in other dishes and it was very rare that you can see radish in my kitchen. One day when walking through the fresh produce aisle in the store, bored with the regular veggies and thought of buying some new veggies and picked up radishes which were so large in size.

Later when back home, i had no idea what to make with it other than sambar, consequence of impulse buying. Though i had knew paratha can be made with radish, didn't know how to make it, then came the google savior, made some parathas, liked it so much  and it's been regular in our lunch menu since that day. That's how mooli paratha/Radish paratha entered our home :-) Other than paratha and sambar, I'm still looking for ways to use radish in my daily cooking.

Radish has some pungent smell and it offset my appetite a lot, so i have added a lot of mint & coriander leaves to balance that strong flavor. But if you like radish flavor, you don't need to add a lot of mint & coriander leaves. 

Next, once the stuffing is ready, make the parathas immediately, keeping the stuffing for a longer time will make the radish oozes out lot of liquid and it's really difficult to stuff and roll into parathas. Those are few things that you have to make sure of to make this delicious paratha. Now let's check out the recipe.

In recent times, i have received a lot of dms on instagram like "follow for follow" or "like for like". Seriously i don't understand the logic behind it, if i have really liked some page, i would have done that already. Same for the other end also, right?? 

Really like my page??, do follow, why do you need the compulsion of making sure that I also follow you ?? Also i'm here in social media to share my passion, not to get more followers or likes. If i get more likes or follows on the way, it means only one thing that i have done something really good and useful to others.

If not, no problem, still i'm gonna share what i love doing. That's my motto in social media and  don't believe in gaining numbers like these, it doesn't serve a purpose for either. Yesterday it was facebook, today is Instagram, tomorrow some other app will come, so please be true to yourself and don't get into the social media numbers trap. These thoughts run through my mind for a while, so let it out loud and clear., now it's time to check out the recipe.

Radish Paratha | Mooli Paratha

Preparation Time : 10 mins | Cooking Time : 20 minsServes : 1 to 2

Ingredients
Whole Wheat flour - 1 cup
Oil - 1 tsp
Water - as needed
Salt - to taste
For Stuffing
Radish - 1 cup(grated)
Ginger - 1 tbsp(grated)
Turmeric - a pinch
Red chili powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Mint & coriander leaves - a handful
Salt - to taste 

Procedure
Take the flour in a bowl, add salt & oil and mix it with flour well. Then add water to the flour.Mix it with your hand and gather it together as a single mass , now knead the dough well until the surface looks smooth.Cover it with lid and set aside for minimum 15 mins.
Peel the radish and grate it finely. Put it in a bowl, add salt, mix it well and let it sit covered for 20 mins.
Discard the water leave out from the radish and squeeze to remove any liquid and put it in the bowl again, add finely chopped mint & coriander leaves, turmeric, red chili & garam masala powder, mix it all well together. That's it, the stuffing is ready.
Take a lemon size ball from the dough, roll into thick disk  with rolling pin and add a tbsp of stuffing, gather the edges and seal the stuffing.
Keep the sealed edge down, dust the surface with flour & roll into paratha with rolling pin. 
Heat the tava, grease it with oil and place the paratha, drizzle some oil on top too and cook the paratha till the brown spots appears on both side.Remove from the tava and do the same for the remaining dough & stuffing.
Tasty Mooli/Radish Paratha is ready. Serve it with your favorite curry. We have it with veg makhani & pomegranate raita.

  • The dough should be pliable and smooth.
  • Make sure to drain the water from radish well.
  • Adjust the spices for the stuffing as per your liking, you can add cumin powder if you like that flavor.

Carrot Cheese Paratha | Carrot Paratha | Paratha Recipe

Carrot Cheese Paratha, a delicious stuffed paratha that can be prepared in no time.  I have been thought of making this paratha for every long time, but ST is not fond of any meal with slight sweet in it. Also I was thinking that the paratha might have slight sweet in it,because of carrot. Finally keep the doubts aside and tried it last week, Yes it has mild sweet taste but not at all overpowering and with other spices and cheese, it tastes so good. Even ST had it without any complaints :- ). Ok, now let's check out how to make this super easy carrot paratha. 

Carrot Cheese Paratha

Preparation Time : 10 mins | Cooking Time : 20 minsServes :

Ingredients
For dough
Wheat flour - 1 cup
Oil - 1 tsp
Salt - to taste
Water - as needed
For Stuffing
Carrot - 2 
Cheese - 1/2 cup
Red chili powder - 1/4 tsp
Garam masala powder - 1/4 tsp
Salt - to taste


Procedure
Take the flour in a bowl, add salt & oil and mix it with flour well. Then add water to the flour.Mix it with your hand and gather it together as a single mass , now knead the dough well until the surface looks smooth.Cover it with lid and set aside for minimum 15 mins.Next grate the carrot finely and add into the bowl along with the other ingredients of the stuffing. Mix it well.Pinch medium lemon sized balls from the dough and roll it as smooth. Take the rolling pin and roll into small disc, place the stuffing in the center.Pleat the sides towards the center and seal it. Keep the sealed edge downside and roll into thick paratha(if needed add more flour for dusting).Heat the tava, grease it will oil and place the rolled paratha on it.Cook it on both side until the brown spots appears on both sides.Tada, Tasty Carrot Paratha is ready.

Notes:

  • You can add more or less cheese as per liking.
  • Here i have used Mozzarella cheese,but you can use any cheese you like.
  • Grate the carrot finely, it helps to roll the paratha evenly.

Broccoli Paratha | Broccoli Stuffed Paratha | Paratha Recipe

Broccoli Paratha, a delicious paratha stuffed with mildly spiced broccoli masala.Next to the broccoli soup, this is my favorite recipe with broccoli. It's one of the easiest stuffings to make for paratha and also it's so customizable to suit your taste. 

For this paratha, I have followed the same procedure as my cauliflower paratha without much change and it turned out so soft, with some curd, it would be awesome, no need to make any side dish at all.

While making this paratha, I ran out of atta flour and also we were in the process of moving to a new place, so i didn't want to buy atta just to make this and again i would pack the leftover for shipping. 

Instead I have used whole wheat flour bought at HEB, the texture of this flour is quite different and also it has a darker color than the regular atta flour. I was a bit skeptical how it would turn out, to my surprise, it turned out so good. Usually I use whole wheat flour for chapathi only and never used before for stuffed paratha. 

Glad i did, now i can use whole wheat flour for parathas too. You may think that both atta and wheat flour are the same, right?? I too had the same opinion before using it regularly, but now i'm sure that the whole wheat flour available here in US based stores is different in both texture and taste compared to the atta available in Indian stores.

Broccoli Paratha

Preparation Time : 20 mins | Cooking Time : 20 minsServes :

Broccoli Paratha, Broccoli Stuffed Paratha, Easy Paratha Recipe Broccoli Paratha, a delicious paratha stuffed with mildly spiced broccoli masala.
Ingredients
Whole Wheat flour - 1 cup
Oil - 1 tsp
Water - as needed
Salt - to taste
For Stuffing
Broccoli - 1 floret(small)
Oil - 1 tsp
Turmeric - a pinch
Red chili powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Salt - to taste 

Procedure
Take the flour in a bowl, add salt & oil and mix it with flour well. Then add water to the flour.Mix it with your hand and gather it together as a single mass , now knead the dough well until the surface looks smooth.Cover it with lid and set aside for minimum 15 mins.
Cut the broccoli into the small florets, wash it in running water and drain it completely.
Put the florets into mixie jar and pulse it twice or thrice until it's fine. Heat the pan with olive oil.
Add the broccoli and saute it in the oil for 2 mins, then add all the spices(turmeric ,red chili & garam masala powder) and salt.
Mix it well with the broccoli and then cover the pan with lid and let the broccoli cooks well. Switch off the flame and the stuffing is ready.
Pinch medium lemon sized balls from the dough and roll it as smooth. Take the rolling pin and roll into small disc, place the stuffing in the center.
Pleat the sides towards the center and seal it. Keep the sealed edge downside and roll into thick paratha(if needed add more flour for dusting).
Do the same for all the dough. Heat the tava, grease it will oil and place the rolled paratha on it.
Cook it on both side until the brown spots appears on both sides. Remove it from the tava and place it on the plate. 
Tada, Healthy Broccoli Paratha is ready.Serve it with curd and pickle.

  • Adjust the spices for the stuffing as per your liking, you can add cumin powder if you like that flavor. 
  • You can use atta flour also.

Paneer Paratha | Cottage Cheese Paratha | Paratha Recipe

Paneer Paratha, a delicious stuffed paratha made from Indian Cottage Cheese. Unlike other stuffed paratha(aloo paratha , gobi paratha or mix veg ), this doesn't require any cooking to make the stuffing, so it consumes very less time to prepare this delicious paratha. 
Those who are reading my blog regularly might wonder why there is hardly any paneer recipe here, the reason is simple, i was not eating paneer while growing up, so like many other international cuisine, this is also so new to me and initially i didn't like the bland taste of paneer., so very rarely i cook them at home. But nowadays, after experimenting various dishes with paneer, i'm quite confident on how to season  the paneer well to avoid the bland taste. And this paneer paratha is one of my favorite paneer dishes that i had tried on my own. Like i said before, there is no cooking involved in making this paneer stuffing. If you have the dough ready, within few mins you can make this delicious paneer paratha. I strongly recommend to serve them as hot, it tastes best when it's hot.Now let's check out the procedure for this delicious paratha.

Paneer Paratha

Preparation Time : 30 mins | Cooking Time : 15 minsMakes : 4 or 5

Ingredients
For dough
Wheat flour - 1 cup*
Oil - 1 tsp
Salt - to taste
Water - as needed
For Filling
Paneer - 1 & 1/2 cup (grated)
Cumin seed - 1 tsp
Green chili - 1 (finely chopped)
Coriander leaves - 1 tbsp (chopped)
Salt - as needed
*Here i have used more than a cup of flour, since i need the extra dough for plain paratha, but the stuffing quantity here would be enough for 1 cup of flour. 

Procedure
For the dough
Take the flour, salt and oil in a bowl, mix it well and then add the water and make a soft pliable dough. Cover with lid and let it aside for 30 mins.For Filling,
Now take all the ingredients for the filling in a plate and mix it well together with your hands and make 4 equal size balls.Divide the dough into 4 equal balls. Take a ball of dough and roll into thick disc with the sides thinner than the center, place the filling in the center.Gently gather the dough around the filling and seal it. Press the dough into thick disc with your hand.Then roll into paratha with rolling pin. Do the same for the remaining dough and filling.Heat the tava and place the rolled paratha on it.Cook on both sides until the brown spot appears on the top. Remove it on the place and gently apply butter on it.Serve hot with your favorite curry, pickle and curd.
Notes:
  • Paneer paratha taste best when it's hot.
  • Instead of cumin seed , you can use ajwain seed for flavoring too.
  • Instead of green chili, if you thought of using red chili powder, then heat a tsp of oil, switch off the flame and then add the red chili powder in the hot oil, let it sit for 2 mins, then use it in paneer. This helps to avoid the raw smell of chili powder in the paratha.
  • If the paneer is too dry and it can't hold the shape, then add the tsp of curd into filling.
