Cilantro Pesto Vegetable Pizza | Coriander Pesto Pizza

Cilantro Pesto Vegetable Pizza, an easy, delicious & flavorful pizza that would be ready in minutes given that you have pizza dough in hand. Cilantro/ Coriander pesto sauce requires just handful of ingredients and the sauce will be ready in a jiffy. If you like cilantro flavor then you must give this sauce and pizza a try, i'm sure that you would be amazed by its flavor and taste.

Back in days, when we were in Houston, we love the pizza from  "MOD pizza", our favorite pizza outlet. It provides various option for base sauces, toppings & finish sauce. That's where i got introduced to the idea of using pesto and white sauce over pizza and ST love their finishing sauce especially siracha on top of the pizza. It adds nice kick to the pizza. 

If you're so used to spicy Indian food and find pizza as bland, then you must add siracha or any hot sauce over the pizza and try. It's a totally game changer for all spicy lovers!!!

First for the dough, i have used my pizza dough recipe as base and made the dough with a little twist. Instead of using all purpose flour as whole, in today's recipe i have used half of whole wheat flour. Whenever i'm making thin crust pizza, i prefer to add equal amount of all purpose flour and wheat flour for dough. It gives such a crispy crust. But you can follow the same dough recipe without any change also, it also works fine,i have done that so many times.

Next for pesto sauce, since i'm not a big fan of pesto sauce made from basil and it's kind of over powering flavor to me, i prefer to make pesto from my favorite herb, cilantro/coriander leaves. It's absolutely lip smacking and good on anything like sandwich, pizza or pastaI would rather prefer pesto sauce over the regular tomato sauce on my pizza whether it's from pizza outlet or home made. 

Finally for the toppings, I would recommend vegetables like onion, tomato, capsicum/bellpepper, sweet corn, spinach, mushroom, pineapple. With just any one of the  toppings or combination of any veggies that i have listed above would taste good on this pizza.

In addition to the above vegetables, we would like to add finely chopped ginger to this pizza for additional flavor and kick. I knew that the ginger is not the standard topping on the pizza, but when it comes to home cooking, there is no rule book !!! you can add whatever your heart and tummy desires, right??

Ingredients
Pizza dough - 1 
Coriander Pesto Sauce - 1/4 cup
Mix Vegetables - 1/2 cup(sliced)
Mozzarella cheese - 1/2 cup(grated)
Ginger - 1 tbsp(finely chopped)
Parmigiano-Reggiano - 1 tbsp



Procedure
Preheat the oven @ 425 F 
Keep the dough, sauce and vegetables ready.

How to make Pizza Dough from the Scratch 

Roll the dough thinly and place it on the baking tray.Add the sauce and spread it evenly on the crust.Add the veggies one by one and last add the ginger.Finally add the cheeses and bake it the oven for 15 - 18 mins.Tasty Cilantro Pesto Pizza is ready. Add some siracha sauce on top.

Notes:
  • Add more or less veggie as per your liking.
  • Cut all the veggies into thin slices for even cooking.
  • Just like veggie, you can add more or less sauce and cheese, it's really up to your choice.
  • Keep an eye on oven after 15 mins since every oven is little different.

Coriander Pesto Sauce | Cilantro Pesto Sauce | Pesto Sauce

Coriander/Cilantro Pesto Sauce, a delicious sauce made from the coriander leaves. It can be used in pasta, pizza or as spread in sandwiches or even you can serve this as dipping sauce. If you have been following me here in blog or in any social media, you might be knew by now, how much i like coriander pesto sauce. 

Pesto is a sauce originated from Italy and it's usually made with basil leaves.To me, the basil flavor is quite strong and can't really enjoy the basil pesto sauce much, for occasionally it's ok, so i have been making the pesto sauce with coriander/cilantro leaves for a long time now. 

   
More than marinara sauce, i prefer to have the coriander pesto sauce on my pizza. So whenever i make pizza at home, it would be cilantro pesto pizza. When i had shared the coriander pesto pizza in my instagram page a month ago, few asked about the sauce. At that time, i redirected them to the coriander pesto pasta post for the recipe.

Procedure
In a mixie/blender jar, add the nuts,garlic & green chili and grind into coarse mixture.Next add the coriander leaves, cheese & salt.Finally add salt & olive oil and grind into smooth paste. Delicious coriander pesto sauce is ready to use!!

:

  • Coriander pesto stays well in refrigerator for 3 days.
  • Instead of walnuts, you can use cashew nuts or combination of walnuts and cashew nuts.

Coriander Pesto Pasta | Cilantro Pesto Pasta

Coriander/ Cilantro Pesto Pasta , a delicious pasta made from coriander leaves pesto. Pesto is a sauce originated from Italy and it's usually made with basil leaves. In today's recipe, i have used the same concept but instead of basil leaves, i used my favorite coriander/cilantro leaves. 

If you have followed by blog or in Instagram for a while, you might knew by now that how much i like coriander leaves. At least once in a week, i make coriander chutney as side dish for my idli or dosa or whenever i make pizza at home, it would be mostly coriander pesto pizza, so why not pasta with coriander pesto? I must say it's so delicious, if you like me who are crazy about coriander/cilantro flavor, you must try this recipe.
When i had shared coriander pesto pizza on instagram, got few dms about the recipe. Though i make coriander pesto frequently, it would be for dinner mostly, so i didn't take any pictures to share the recipe here instantly, so send the recipe as private dms to those who asked. Last week when ST went to team lunch with his office mates, i prepared this coriander pesto pasta as lunch for myself. Luckily it was sunny, so took the step by step pictures too.

Here in today's recipe, i have added some broccoli along with the pasta to make a complete meal, but you can make this without any veggies too. That's it for this year, friends. Over all, it's been a very low year for blogging, compared to last five years, this year has only half the number of posts.But i'm glad that i can post atleast this much regardless of how hard it was!!! Coriander Pesto Pasta | Cilantro Pesto Pasta

Coriander pesto, Cilantro Pesto, Pesto Pasta, Coriander/ Cilantro Pesto Pasta , a delicious pasta made from coriander leaves pesto. Pesto is a sauce originated from Italy and it's usually made with basil leaves.
Ingredients
Pasta - 1/2 cup
Olive oil - 1 tsp
Broccoli - 1/2 cup
For Pesto
Cilantro/Coriander leaves - 1/2 bunch
Cashew nuts - 1 tsp
Walnut - 1 tsp
Garlic - 1 cloves
Green chili - 1 
Parmesan - 2 tbsp
Olive oil - 1 tbsp
Salt - to taste

Procedure
First let's prepare pesto, clean the coriander leaves and keep it ready. In a mixie/blender jar, add the nuts,garlic & green chili and grind into coarse mixture.
Next add the coriander leaves, cheese & salt.
Finally add the olive oil and grind into smooth paste. That's it, coriander pesto is ready.Now for the pasta, bring the pot of water into boil.
Add the pasta & salt and cook as per the packet instructions and drain it.
In a kadai, add a tsp of olive oil, add the broccoli & saute until it's tender and develop slight color.
Keep the flame in low, then add the cooked pasta & pesto. Mix it all well together.
Remove from the flame and if needed add more cheese on top. Cilantro/Coriander Pesto Pasta is ready to serve. 


Notes:
  • You can make this pesto ahead of time and use as whenever needed.
  • Ideal to pack for lunch boxes. 
  • Coriander pesto stays well in refrigerator for 3 days.
  • I personally like to make fresh pesto.
  • You can used this pesto as sauce for your pizza, my another favorite way of using coriander pesto.

Coriander Pesto Panini Sandwich | Veg Panini recipe

Panini Sandwich is nothing but a grilled sandwich made from the bread that has light chewy texture like baguette, ciabatta, and michetta. When i had panini sandwich for the first time in the restaurant "Panera bread" along with tomato soup, immediately i fell in love with this sandwich and the combo. I really loved the chewy texture of this sandwich and with soup as sides, it was delicious.

Ever since, whenever i have prepared this sandwich at home, tomato soup also would be there.There are different varieties of panini sandwich based on the stuffing inside, but today i'm sharing my most favorite and simple but delicious panini sandwich "Tomato & mozzarella Panini Sandwich with Coriander pesto". 

Coriander Pesto Panini Sandwich | Veg Panini recipe

Preparation Time : 10 mins | Cooking Time : 10 minsServes :

Ingredients
Ciabatta bread roll - 1 
Tomato - 2(thinly sliced) 
Mozzarella cheese - as needed
Coriander leaves - 1 bunch
Walnut - 3 tbsp
Olive oil - 1 tbsp
Lemon juice - 1 tbsp
Garlic - 1 pod
Green chili - 1
Salt - needed
Coriander Pesto Panini Sandwich, Panini Sandwich Panini Sandwich is nothing but a grilled sandwich made from the bread that has light chewy texture like baguette, ciabatta, and michetta.

Procedure
First let's make the coriander pesto, take walnut, garlic and green chili in a blender and grind into coarse mixture.
Then add the coriander leaves, olive oil, lemon juice & salt  into the blender.
Grind them into smooth paste and transfer into a bowl. Cut the bread into slices.
Take a slice, generously add the coriander pesto and apply it all over, then add the thinly sliced tomato and mozzarella slices.
Cover it with other slices and place it in the panini maker and cook it's nicely brown.
Tasty Veg Panini with Coriander Pesto is ready.

Notes:

  • Ciabatta bread give nice chewy texture to this sandwich, but you can use any kind of bread,but make sure that it has nice chewy texture.
  • If you don't have panini maker, use the normal pan to toast the sandwich.
  • Add more or less of pesto as per your liking.
