Cheesy Corn Capsicum Sandwich | Sweet Corn Capsicum Sandwich | Breakfast Recipe

Cheesy Corn Sandwich, a delicious and easy to make sandwich with corn and capsicum. If you have been a regular reader of my blog, by this time, you knew how much i like sandwiches. 

Usually i experiment with a lot of sandwich recipes and i post only the recipe which i love the most. Today's recipe is one among them, Cheesy Corn Capsicum Sandwich.

Here in this recipe, i have made the corn & capsicum masala in Indian style and top it with cheese. Trust me, the combination is so good.  Though i make this sandwich for breakfast, this would be a great evening snack for kids too. 

For this sandwich, you can prepare the masala ahead and prepare the sandwich when you need.Now let's check out on how to make cheesy corn sandwich

Cheesy Corn Sandwich

Cheesy Corn Sandwich,Corn Capsicum Sandwich, Indian Corn Sandwich Cheesy Corn Sandwich, a delicious and easy to make sandwich with corn and capsicum.
Ingredients
Bread Slices - 8
Sweet Corn Kernels - 1 cup(Cooked)
Capsicum - 1 (Small)
Onion - 1 (Small)
Tomato - 2 nos
Red Chili powder - 1/2 tsp
Salt - to taste
Turmeric - a pinch
Oil - 1/2 tsp
Grated Mozzarella Cheese - 1/2 cup



Procedure
Cut the onions, capsicum & tomato into small pieces. Remove the corn kernels from the stack and keep it ready.Heat a pan with oil, add the onions saute it till translucent. 
Add tomatoes and cook till it mushy, then add the spices(turmeric & chili powder) and salt.Mix it well ,add capsicum in to the masala.

Cook the capsicum as per your like , then add the cooked corn kernels, give a good mix and let it in the flame for few more mins and then switch off the flame. That's it, our stuffing for sandwich is ready.
Take a bread slice, spoon the corn masala in the bread, sprinkle generous amount of cheese on top and close it with another bread slice.
Heat the pan and grease it with butter, place the bread(make sure that the cheese  side should be on below while you place the bread ) on the pan and cook it(press it with spatula for even coloring) on both side till it turns golden brown and crispy.
Cut into desired shape and serve it with any fruits and drinks you like.

Notes:
  • I highly recommend to add the cheese. It helps to bind the masala together and also it tastes delicious.
  • If you want well cooked capsicum, add a few tbps of water in the masala and cook the capsicum , before adding the corn.
  • Even you can use any cheese slice that are available in the market.
  • You can skip Cheese too.

Sweet Corn Pulao/Pulav

Sweet Corn pulao/ Pulav is the quick, easy & tasty pulao. It's one pot meal & you can make it quickly in the morning for office goers / you can pack this as lunch for your kid. 

Last week , i bought this fresh sweet corns from the farmer's market. Usually i make sundal, this time, i want to try something different, so searched it on google & found this rice as interesting. But i hesitate to try this, I doubt that corn will make the rice as sweet. But yesterday, keep my doubts aside & give it a try, the result was amazing. To my surprise, the sweetness from the corn & hotness from  the chili & pepper powder compliments very well. Ghee & pepper powder gives great flavor to this rice.
  

Ingredients

Basmati Rice - 1 cup
Sweet Corn - 1/2 cup
Onion - 1 small
Green chili - 2
Ginger Garlic paste - 1 tsp
Pepper powder - 1 tsp
Coriander leaves - few
Water - 2 cup
Salt - as needed (1/2 tsp approx)

To Temper

Ghee - 1 tsp
Cinnamon - 1/4 inch piece
Cloves - 4 
Cardamom - 1
Bay leaves -1




Procedure

First soak the rice for 15 mins. In the mean time, cut the onion into thin slices, slit the green chili and keep everything ready


In a pressure cooker, heat the ghee, temper the ingredients listed under "To Temper" & then add onion & green chili & saute them well.


Once onions are translucent, add the ginger garlic paste & pepper powder , saute it well. Then add corns and give a quick stir and add water.


Once the water comes to boil, add the rice, coriander leaves & close the lid & put on weight. Cook it for 3 whistle.


Once pressure released , fluff it with fork & serve it with your favorite curry.


Note:


  • Adjust the spicy level according to your taste.
  • Recommend to use ghee instead of oil. It gives great flavor
  • Even you can drizzle few drops of ghee while serving.
  • Any north indian curries goes well with this rice.

Sweet Corn Sundal

When i searched for some sweet corn recipe in indian style, i landed in raks kitchen for this recipe.I made some changes suites to our taste and it turns out yummy.


Ingredients

Sweet corn -  1 cup
Onion - 1/2 of small one
Grated carrot - 2 tbsp
Grated coconut - 2 tbsp
Dry Mango powder(Amchur) - 1/4 tsp
Salt - to taste

To Temper
Oil - 1 tsp
Mustard & urad dal - 1/2 tsp


Procedure

Remove the corn kernels from the cob. Bring the water into boil and add the corn along with salt and let it cook for 5 mins. Then strain the water and keep aside.Slice the onions into small pieces.




Heat the oil in a pan, add the tempering listed under "To Temper". After that add the onion and carrot , saute it well.  Then add corn along with amchur powder. Check the seasoning now and add salt if necessary.


Mix it well and then finally add the coconut and saute it well for 2 mins and switch off the flame.


Delicious Sweet corn sundal is ready. 


Note: 

  • Adding amchur powder gives unique taste to the sundal, so dont skip it.
  • You can  plus or minus all the ingredients suites to your taste.
