Pazham Pori | Ethakka Appam | Nendra Pazham Bajji

Pazham pori is a delicious banana fritters made with a special variety of banana know as Nendra pazham. Nendra pazham is a regional famous banana variety in the state of Kerala and it's known for its unique texture and taste.

Nendra pazham(both ripe and un ripen) is great for cooking and a lot of dishes can be prepared with it and this  Pazham pori is one of  dishes made with the well ripen nendra pazham.  

Nendra Pazham

As i said earlier, this fritters is only made with nendra pazham and you can't substitute other varieties of bananas for this recipe. In the states of Tamilnadu and Kerala, you can easily find this banana in most of the stores. Here (both in US and Canada), you can find them  in Indian Stores around the Onam festival time. 

Frying

I have used the Sunflower oil for frying but heard that coconut oil is used for this recipe for great flavor and taste. So you can try frying in coconut oil too if you want.

It's such an easy recipe and can be prepared in less than 20 mins. So it makes an idle chai time snack. Do give it a try and i'm sure that you will love it.

Pazham Pori, Ethakka Appam, Nendra Pazham Bajji,Indian Banana Fritters Pazham pori is a delicious banana fritters made with a special variety of banana know as Nendra pazham.
Ingredients
Nendra Pazham(ripen) - 1
All purpose flour - 1/2 cup
Sugar - 1 tbsp
Salt - 1/8 tsp
Turmeric powder - 1/8 tsp
Cardamom powder - 1/4 tsp
Baking soda - a pinch
Water - as needed
Oil - for frying

Procedure
First peel the skin of the nendra pazham and cut into thin slices in preferred length(as shown in below pic). Next in a bowl, add the all purpose flour, sugar, salt, turmeric powder and cardamom powder. Mix it all well together. 


Next add the water little by little and make a thick batter like the bajji batter. 
Heat the oil for frying. Once the oil is hot(check by add a drop of batter and it should come up in  3-4 secs) , take a slice of nendra pazham, dip it in the batter so that both the sides are well coated with the batter and then drop it in the oil gently. Do the same for the remaining.
Cook the pazham pori in the medium heat for 3-5 mins or until the outside layer is crispy. Once it's well cooked, remove it from the oil and place it on tissue paper.
Delicious Pazham Pori is ready. Enjoy it hot with a cup of chai !

Notes:
  • Don't add too much baking soda. Otherwise it will absorb a lot of oil.
  • Here i have used crushed cardamom seeds instead of cardamom powder.

Mango Fruit Custard | Eggless Mango Custard

Mango Fruit Custard, an easy to make delicious dessert with a lot of fruits and mango custard. In general, custard is a creamy dessert made with milk/cream, a sweetener and egg yolks or it's made with the readily available custard powder at the store. 

To prepare this mango custard, instead of using egg yolks or custard powder, i have used corn flour. It helps to thicken the milk and give the creamy consistency. 

This mango custard is so creamy and delicious. It can be prepared ahead of time and stored it in the refrigerator. When you are ready to serve, simply add the fresh fruits to the custard. Voila, scrumptious dessert is ready in minutes.


This mango fruit custard is one of the few desserts that can be easily prepared for large crowds. Perfect for summer get together and it's such a crowd pleaser ! 

Mango Vs Mango Puree
In today's recipe, i have used the store bought kesar mango pulp/puree. But you can also make the mango puree from the fresh mangoes. Scoop out the mango pulp, put it in the blender along with some sugar and blend into smooth puree. Tada, your mango puree is ready and use it in the recipe as instructed ! 

Sugar
As i mentioned, i have used the store bought mango puree which already has sugar in it. So to prepare the custard, it doesn't need a lot of sugar. 
But if you're using homemade mango puree , adjust the sugar according to the sweetness of the mango and your liking.  


Flavourings
Personally, i like this mango custard with a burst of mango flavour. Hence i haven't added any other flavourings. But cardamom and vanilla flavours really go well with the mango custard, so feel free to add more flavourings if you like. 

Fruits
In today's recipe, i have used banana, apple, mango and grapes in the custard. But you can add whatever the fruits you like. I would recommend to avoid the watery fruits like watermelon because it makes the custard dilute and it doesn't taste good. 
Pomegranate and berries also taste good with this mango custard. In addition to fruits, you can also add chopped nuts !

Mango Fruit Custard | Eggless Mango Custard

Preparation Time : 1 hr | Cooking Time : 10 minsServes :

Mango Custard, Mango Fruit Custard, Eggless Mango Custard, Mango Custard without custard powder Mango Fruit Custard, an easy to make delicious dessert with a lot of fruits and mango custard.
Ingredients
Milk -1 cup + 2 tbsp
Corn flour - 2 tsp
Sugar - 2 tbsp
Mango Puree - 1/2 cup
Fruits - 1 to 1 & 1/2 cup

Procedure
First heat 1 cup of  milk in a sauce pan. In a small bowl add 2 tbsp of milk and corn flour, mix it without any lumps.

When the milk comes to boil, keep the flame in low & add the sugar.
Next add the milk & corn flour mixture. Mix it continuously until the mixture starts to coat the back of the spoon. Now the base custard is ready.
Transfer the custard into a bowl and then add the mango puree and mix it well.
Cover the custard with cling wrap and refrigerate it for 2-3 hrs or until it's chill.  Make sure that the cling wrap touches the custard. It helps to avoid forming the skin on the top of the custard. 
After the custard is chill down, cut the fruits into small cubes and keep it ready. Remove the cling wrap and add the fruits. Mix it well. 
Tasty Mango Fruit Custard is ready !

Notes:
  • Make sure to cook the milk on low flame and stir continuously after the corn flour slurry is added. Otherwise the bottom would get burnt easily as the milk starts to thicken.
  • Mango Custard taste best when served chilled.
  • Add more or less fruits as per your liking.

Oats Banana Pancakes | Healthy Pancakes

Oats Banana Pancakes, a healthy & delicious pancakes made from oats & banana. Who doesn't like pancakes for breakfast, right?? I love it totally and often make them for weekend breakfast !! So i have been looking for other option for just plain flour and these oats banana pancakes are my recent favorite.

These Oats Banana Pancakes are so good, fluffy and naturally sweetened and it's hard to believe that there is zero flour in it. More over these pancake batter can be made in blender within mins, no need to whisk !!!  What else you need for perfect pancake recipe??

Make sure to use well ripen bananas for these recipe. Don't throw away the bananas with lot of black spots on it, they are best for this pancakes. It gives such a natural sweetness to the pancakes and flavors are really amazing. Trust me, oats and banana flavors are too good together !!!

Oats Banana Pancakes

Oats Banana Pancakes, Oats Pancakes, Banana Pancakes,Breakfast Pancakes Oats Banana Pancakes are so healthy, delicious, fluffy & naturally sweetened and it's hard to believe that there is zero flour in it.
Ingredients
Rolled Oats - 1 cup
Egg -1
Banana -1
Milk -1/3 cup
Vanilla Extract - 1/2 tsp
Maple syrup -1 tbsp + more for serving. Salt - a pinch
Baking Soda - 1/4 tsp
Butter - for making pancakes

Procedure
Put all the ingredients in a blender and grind into smooth puree. Pour into a bowl, your pancake batter is ready.Heat the pan and add a tsp of butter and spread it evenly. Pour the pancake batter in the pan and spread it slightly for even roundness. Cook it for 1 or 2 mins in medium flame and flip into other and cook it till it's golden brown and remove from the pan. Serve it with maple syrup and some fruits.

Notes:
  • If the batter is not thick to pour, add couple of tbsp of milk and adjust the consistency.
  • Use well ripen banana for great taste and sweetness.
  • Instead of regular milk, you can use any plant based milk.
  • Here i have used the rolled oats, don't confuse this with the quicker oats available in the markets.

Peanut Butter Banana Sandwich | Easy Sandwich

Peanut Butter Banana Sandwich, delicious and easy to make healthy sandwich in minutes. It's one of my favorite sandwich to make for breakfast. Simple yet so fulfilling and scrumptious !!! This sandwich comes handy after your evening workout or later night hunger or even mid day snack. All you need is some bread, peanut butter and banana and your sandwich is literally ready in a min. Try to use natural peanut butter without any artificial sugar, the sweetness from the banana itself is enough to make this sandwich yummilicious !!!

Here in today's recipe, i have used sour dough bread for this sandwich, but in general, sandwich bread is used for this recipe. For all kind of gooey filling inside the sandwich, my go to bread is sour dough bread. That's just my personal preference. If you haven't tried this sandwich before, do give it a try, it's just awesome !!!

Take all your ingredients, add 1 tbsp of butter on each slice of bread and spread it evenly, then slice the banana thinly and place it evenly on one side of the bread.Sandwich the bread and toast it in the pan or grill until the bread is golden brown or it has grill marks. Tasty Peanut Butter Sandwich bread is ready to serve.Serve it with some more bananas or any other fruits of your choice and juice.
Notes:
  • As per your liking, you can add more of peanut butter and banana.
  • Instead of peanut butter, almond butter can also be used.
  • Here i have used sour dough bread. But regular sandwich bread also works fine.
  • I have used smooth and creamy peanut butter without any sugar here.

Wheat Flour Banana Muffins | Banana Muffins | Breakfast Muffins

Banana Muffins, a soft, spongy and delicious breakfast muffins. As i had mentioned before in my chocolate banana bread recipe , bananas are great for baking. It gives great flavor and softness to the baking products. 

Since we love banana flavors a lot, i have been using them in baking a lot lately and these banana muffins are our recent favorite, they are great for breakfast or as mid time snacks. If you do like banana flavor, give this muffins a try!!! 
Here in today's recipe, i have used combination of wheat flour and all purpose flour. Previously, i had baked them with only wheat flour and it turned out tasty but little dense, the light and airy texture was missing!  

So in the next time, i have reduced the wheat flour and added a little all purpose flour, the texture and taste was so amazing. Ever since  i have been baking these muffins with combination of both flours. It's also healthy compared to use all purpose flour alone.  

Coming to food blogging, recently i have started sharing videos on my youtube channel, so far, i like the process of video making. I have heard from many food bloggers( who make videos regularly) that editing video is the most annoying thing to do in the video making process. 

But to be honest, i like the editing process more than the shooting process, obviously it takes lot of time since i'm so new into this, but creating something on your own from the start to end gives such a immense satisfaction, right??

Wheat Flour Banana Muffins

Preparation Time : 10 mins | Cooking Time : 60 minsServes :

Banana Muffins,Breakfast Muffins, Wheat flour banana Muffins, Wheat flour muffins Banana Muffins, a soft, spongy and delicious breakfast muffins.
Ingredients
Wheat flour - 3/4 cup
All purpose flour - 1/4 cup
Banana - 1 
Light Brown Sugar - 1/2 cup
Cinnamon powder - 1/2 tsp
Baking Soda - 3/4 tsp
Salt - 1/4 tsp
Egg -1 
Milk - 1/3 cup
Oil - 1 tbsp
Vanilla Extract - 1/2 tsp
Pecans - as needed(optional)

Procedure
Preheat the oven @ 350 F
Peel the banana and add in into the bowl and mash the banana with fork. Then add the sugar into the mashed bananas.
Crack open a egg in to the bowl and then add the vanilla extract & milk. 
Next add the oil and whisk it until all mix together well. To the wet ingredients shift the dry ingredients(wheat flour, all purpose flour, cinnamon powder,baking soda & salt.)
Mix the dry ingredients with wet ingredients without any lumps.
Pour into the cupcake mould and topped it with few nuts(purely optional). Bake it in the preheated oven for 30-35 mins or until the tooth pick inserted in the center comes out clean.
Tasty & Spongy Banana Muffins are ready. Let it cool a bit and it's ready to serve.

Chocolate Banana Bread | Wheat Flour Chocolate Bread

Chocolate Banana Bread, a delicious and easy to make bread with wonderful banana & chocolate flavor. This bread is mildly sweet, so soft and tastes best with a cup of coffee or tea and it can also be served as breakfast.

I have been baking banana bread for years now and it's our absolute favorite bread and the recipe here is a fool proof one, whenever I had some over ripe banana sitting at the counter, i would have made them without a second thought. 

A few months back, for a change I wanted to try something different, so I tried this chocolate banana bread, i had kept that basic banana bread recipe as the base for this recipe, to my surprise it turned out so good on my first attempt itself. 
Right from childhood, in our family, we have the habit of eating bananas after dinner. Yeah, so contrary to the western world where bananas are mostly eaten for breakfast, hence we always have bananas at our home. 

Unlike in India, here we don't have the luxury of going out everyday to buy fresh produce on a daily basis, so we buy the needed bananas for a week and therefore if we don't consume it daily,  there would be a  lot of over ripe bananas. 

Two weeks back, we both were little under the weather and couldn't eat any fruits, so baked this chocolate banana bread & some banana muffin and relished it for the next few days. 

Between bananas are so great in baking, it gives wonder texture and flavor to the baked goods. It also helps to reduce the oil/butter quantity in the baked goods without affecting the taste and softness.

When I served these bread slices along with some tea for our guests who had visited us over the holidays, they liked it very much and said it's so moist and delicious like the store bought ones.Do i need to say more about this bread ?? If you're a chocolate lover, do give this bread a try, I'm sure that you would be amazed by its texture and taste.


Coming to today's recipe, even with the wheat flour, the texture of the bread is so amazing and you can't even tell that it's made with wheat flour, all credits to those wonderful bananas. 

Next, i have added some dark chocolate chunks because i like that little bit of  bitterness from dark chocolate, but if you don't like it or bake it for kids, you can use the semi dark chocolate or milk chocolate chunks or chips. 

Also adding nuts in this bread is totally optional, i have added some on top mostly in the sense of decoration, but again if you like it, you can add more or even mix it with the batter also.

Chocolate Banana Bread | Chocolate Bread

Preparation Time : 10 mins | Cooking Time : 40 minsServes : 2 mini loaf

Ingredients
Wheat flour/Aata - 3/4 cup*
All purpose flour - 1/4 cup
Cocoa powder - 2 tbsp
Banana - 1 (big)
Light Brown Sugar - 1/2 cup
Sugar - 1/4 cup
Cinnamon powder - 1/2 tsp
Baking Soda - 3/4 tsp
Salt - 1/4 tsp
Egg -1 
Milk - 1/3 cup
Oil - 1 tbsp
Vanilla Extract - 1/2 tsp
Dark Chocolate - 1/4 cup 
Pecans - as needed(optional)
* Instead of wheat flour, you can use all purpose flour too 

Procedure
Preheat the oven @ 350 F

Peel the banana and add in into the bowl and mash the banana with fork. Then add the brown sugar into the mashed bananas.
Next add the white sugar & crack open a egg(for eggless version, add 1/4 cup of yogurt) in to the bowl  & add the vanilla extract.
Next add the oil and milk whisk it until all mix together well.
To the wet ingredients shift the dry ingredients(wheat flour, all purpose flour, cocoa powder cinnamon powder,baking soda & salt.) Mix the dry ingredients with wet ingredients without any lumps and then add the roughly chopped dark chocolate. Mix it gently.
Pour the batter into the buttered & floured loaf pan(5.75 x 3 inch) and topped it with few nuts(purely optional). Bake it in the preheated oven for 40-45 mins or until the tooth pick inserted in the center comes out clean.
Keep the pan in the wire rack for few mins, gently flip the pan,the bread will come out of the pan easily, keep the bread on wire rack until it's completely cooled.
Tasty & Soft Banana Chocolate Bread is ready. Slice and serve.

Notes:
  • Instead of wheat flour / atta flour, you can use the regular all purpose flour also.
  • Adding nuts on the top is purely optional, you can skip that.
  • Stay well for 1-3 days in room temperature or put it in ziplock pack or air tight container and store in refrigerator for up to a week.
  • Instead of dark chocolate, you can used milk chocolate, semi sweet chocolate or chocolate chips too.
  • I have used my mini loaf pan. The dimension is  5.75 x 3 inch
  • You can use up to 1/2 cup of white sugar for sweet bread.
