Oats Banana Pancakes | Healthy Pancakes

Oats Banana Pancakes, a healthy & delicious pancakes made from oats & banana. Who doesn't like pancakes for breakfast, right?? I love it totally and often make them for weekend breakfast !! So i have been looking for other option for just plain flour and these oats banana pancakes are my recent favorite.

These Oats Banana Pancakes are so good, fluffy and naturally sweetened and it's hard to believe that there is zero flour in it. More over these pancake batter can be made in blender within mins, no need to whisk !!!  What else you need for perfect pancake recipe??

Make sure to use well ripen bananas for these recipe. Don't throw away the bananas with lot of black spots on it, they are best for this pancakes. It gives such a natural sweetness to the pancakes and flavors are really amazing. Trust me, oats and banana flavors are too good together !!!

Oats Banana Pancakes

Preparation Time : 5 mins | Cooking Time : 15 minsServes :

Oats Banana Pancakes, Oats Pancakes, Banana Pancakes,Breakfast Pancakes Oats Banana Pancakes are so healthy, delicious, fluffy & naturally sweetened and it's hard to believe that there is zero flour in it.
Ingredients
Rolled Oats - 1 cup
Egg -1
Banana -1
Milk -1/3 cup
Vanilla Extract - 1/2 tsp
Maple syrup -1 tbsp + more for serving. Salt - a pinch
Baking Soda - 1/4 tsp
Butter - for making pancakes

Procedure
Put all the ingredients in a blender and grind into smooth puree. Pour into a bowl, your pancake batter is ready.Heat the pan and add a tsp of butter and spread it evenly. Pour the pancake batter in the pan and spread it slightly for even roundness. Cook it for 1 or 2 mins in medium flame and flip into other and cook it till it's golden brown and remove from the pan. Serve it with maple syrup and some fruits.

Notes:
  • If the batter is not thick to pour, add couple of tbsp of milk and adjust the consistency.
  • Use well ripen banana for great taste and sweetness.
  • Instead of regular milk, you can use any plant based milk.
  • Here i have used the rolled oats, don't confuse this with the quicker oats available in the markets.

Eggless Banana Pancake | Banana Pancake | Breakfast Recipe

Eggless Banana Pancake, an easy to make pancake recipe with bananas. We love to have pancakes as breakfast ,hence often make them and also i have tried quite few types of pancakes so far and you can see them here . For very long time, i had made only the butter milk pancakes. It was so fluffy & soft and we absolutely loved it. Later when i thought of including fruits in the pancakes and searched for some fruit based pancakes. That's when i came to know about this banana pancakes and the strawberry pancakes. Both are my favorites and both taste good in its own way. Addition of fruits in the pancakes actually reduces the amount of added sugar in it, that's a big plus for me to try out this kind of fruit pancakes. 
So if you're like me, looking for eggless pancakes that has less added sugar without compromising in the taste and texture, then this pancakes is for you.Adding banana gives nice aroma and softness to the pancake. This banana pancake is been in our breakfast menu for a while, whenever i have over ripen banana, without much thinking, either i make this pancake or banana bread,both are my favorite. With maple syrup on top, it tastes absolutely delicious and wanting to eat more and more.
This post is been in my drafts for over a year and somehow i'm too lazy to edit the old posts, today i keep myself motivated to edit the post, so here it is, soft and fluffy  Eggless Banana Pancakes !!!

Eggless Banana Pancake

Preparation Time : 1 hr | Cooking Time : 20 minsServes :

Ingredients
Banana - 1 
All purpose flour - 1 cup
Sugar - 2 tbsp
Milk - 3/4 cup
Butter - 1 tsp
Baking powder - 1 tsp
Cinnamon powder - 1/2 tsp
Salt - a pinch

Procedure
Keep all the ingredients for the pancake be ready. Peel the banana and mash it well with a fork.
Add sugar,salt and the melted butter, mix it well.Next add milk, baking powder and cinnamon powder into it.Mix it well and then add flour & whisk it with the wet ingredients.Now the batter is ready. Heat the pan and add the needed butter for cooking the pancake.Take a ladleful of batter and pour into the pan. Cook for a min in medium flame and then gently flip it on other side and cook till it changes its color. Remove it from the heat and it's ready to serve.

Serve it with breakfast syrup/maple syrup. 
Notes:

  • If you're using small banana, you can use 2 bananas for the given measurement.
  • Depends on the sweetness of the banana, you can add more or less of sugar.
  • Serve hot for better taste.

Mofo Gasy | Malagasy Bread | Madagascar Breakfast

Mofo Gasy means "Malagasy bread" , is a traditional breakfast from Madagascar ,the large island off the southeast coast of Africa. It's also a common street food served as breakfast along with coffee/tea. 

Lightly sweetened yeasted batter is poured into circular molds(like our paniyaram pan) and cooked on medium flame until it becomes crispy on both sides.It has quite different variations in the making across the Madagascar region based on the usage of coconut milk & flavoring agents.
Actually while going through the recipe ingredients, it reminded me of rava paniyaram that we used to make them as snacks and i was expecting the same taste, but i was totally wrong, adding yeast changes its texture and taste totally. 

The outer surface is slightly crispy when it's hot and on the inside it's chewy and soft. Overall it's so delicious with the cup of black coffee/tea. Here in the recipe i have used my paniyaram pan to fry the mofo gasy and it's quite delicate to turn on the other side while cooking, so i couldn't get the perfect round shape, but i'm quite satisfied with both taste and texture for the first timer :-)

Mofo Gasy

Preparation Time : 3 hrs | Cooking Time : 20 minsServes :

Mofo Gasy, Malagasy Bread, Madagascar Breakfast Mofo Gasy means "Malagasy bread" , is a traditional breakfast from Madagascar ,the large island off the southeast coast of Africa.
Ingredients
All purpose flour - 1/2 cup
Semolina - 1/3 cup
Sugar - 2 tbsp
Condensed Milk - 3 tbsp
Luke warm water - 1/2 cup +1 tbsp
Instant Yeast - 1/4 tsp
Salt - a pinch
Cooking oil - for greasing the pan

Procedure
Take the flour, semolina, sugar,salt & yeast in a bowl, mix it well and then add the lukewarm water.
Mix it all well together. Cover the bowl with the cling wrap and let it rest for 3-4 hrs. After 4 hrs, the batter should have bubbles all over and risen a bit.
Now remove the cling wrap and mix the batter with the ladle, add the condensed milk. 
Mix it all well together. Heat the paniyaram pan, add few drop of oil in each hole and let it heat, then pour the batter into each hole. Let it cook for 2-3 mins in medium flame.
Gently flip them with the wooden stick and cook on the other side also for 2-3 mins and then remove it from the pan.
Mofo Gasy/ Malagsasy Bread is ready. Serve it with coffee or tea.
Notes:
  • The batter is so soft, so  it's really tricky to flip the pancake on to the other side. Highly recommend to use non sticky pan and grease it generously.
  • This Pancake is mildly sweetened and it's taste great with a cup of black coffee/tea
  • Instead of condensed milk, you can use whole sugar itself, it may need  5 tbsp of sugar.
  • Condensed milk gives richness to the dish.
  • I haven't used any flavoring agent, but if you want add 1/2 tsp of vanilla extract.
  • Cook in low flame, otherwise it would get darken very quickly.
  • If you don't have enough time in the morning,make the batter on previous night and keep it in the refrigerator for overnight, so the batter will be all fermented and ready for morning breakfast.

Whole Wheat Pancakes | Atta Pancakes | Wheat Flour Pancakes

Whole Wheat Pancakes, easy to make yet so delicious pancakes made from wheat flour. We love pancakes and i would like to try different types of pancake whenever possible. I have already tried buttermilk pancakes and it's one of our favorite pancakes. So when i had come across this pancake recipe with buttermilk and wheat flour from pinchofyum, immediately i bookmarked it and the very next day itself , i tried it and as expected it turned out so delicious. These pancakes are so fluffy  and soft even though we used wheat flour instead of APF. 

For this time, i have made this pancake without any toppings, but you can add whatever toppings like chocolate chips or any of your favorite fruits. 

Whole Wheat Pancakes

Preparation Time : 10 mins | Cooking Time : 15 minsServes :

Ingredients
Wheat flour/Atta - 1 cup
Egg - 1
Buttermilk - 3/4 cup
Oil - 2 tbsp
Baking powder - 1 & 1/2 tsp
Brown Sugar - 2 tbsp
Vanilla Extract - 1 tsp
Salt - a pinch
Water - as needed

Procedure
Crack open a egg in a bowl, add vanilla extract and sugar into it and whip it slightly until it becomes frothy. Then add the buttermilk into it.Add oil and mix it well together. Take all the dry ingredients like flour, baking powder and salt.Sieve all the dry ingredients into the egg mixture and mix well. Add enough water and make it as pouring consistency batter.Heat the pan and grease it with butter, pour a laddle full of batter into pan and cook on medium flame for 30 -40 secs, then gently flip the pancake and cook on other sides too.Do the same for the remaining batter. Tada, your wheat flour pancake is ready.Serve it with your favorite breakfast syrup and cofee/juice.
Notes:
  • If you don't have butter milk, take 3/4 cup of milk and add 2 tsp of lemon juice, leave it aside for 2 mins and use it.
  • Batter should be free flowing without any lumps. Depends on the flour you use, you may need more or less liquid, adjust accordingly.
  • Sieve all the dry ingredients to make sure they all mix together well.

Strawberry Pancake with Strawberry Sauce | Strawberry Pancakes

Strawberry Pancakes with strawberry sauce is my recent favorite pancakes. One month back, while browsing through pinterest, this pancake recipe caught my attention,as strawberries has been in season for a while, immediately i tried this with little modification in the recipe as suit to our taste and we loved it.The original recipe uses egg, but we both cannot stand egg smell in pancakes, so i used my  eggless buttermilk pancakes  as guidance and make it as eggless, still it's so fluffy and spongy.
This pancakes taste best with strawberry sauce, pour the sauce over the pancakes and let it sit for few mins and allow the pancakes to soak with syrup and then have it. Really yummy on every mouthful. As the sauce has enough sweetness, i have used very less sugar in the pancake batter,but you can add more if you wanted. Ok, now, let's see the recipe. 

Strawberry Pancakes

Preparation Time : 10 mins | Cooking Time : 15 minsMakes : 8 or 9 
Recipe Category: Breakfast | Recipe Cuisine: American
Ingredients
Strawberry - 1/2 lb
Wheat flour - 1 cup
Butter milk - 1 cup
Milk - 1/2 cup
Baking soda - 1/4 tsp
Baking powder - 1/2 tsp
Salt - 1/8 tsp
Melted butter - 2 tbsp + extra for grease the pan
Sugar - 1 tbsp
Honey -1/4 cup
Water - 2 tbsp

Procedure
First let's make the sauce, in a pan, add roughly chopped strawberries(reserve few tbsp for batter),honey and water and mix it well. Turn on the heat and let it comes to boil, then simmer the sauce for 5-7 mins in medium flame. Switch off the flame. That's it, your strawberry sauce is ready.Now for the batter, add flour,baking soda, baking powder, salt & sugar, give a good mix with whisk, add the butter.Then add the buttermilk & milk and mix it well until the batter is smooth. Add the remaining strawberries and mix well. Heat the pan, grease with butter, pour the batter on the pan, cook on both sides on medium flame or until it becomes golden brown.Stack the pancakes, pour the sauce over it and it's ready to serve.
Notes:
  • I have used whole milk here, but you can used reduced fat milk too.
  • Buttermilk helps to get fluffy pancakes.
  • For additional flavor, you can use cinnamon or vanilla flavor in the batter. But i want strawberries flavor predominantly, so leave as it is.
  • Depends on the flour quality, you can need more or less liquid.

Buttermilk Pancake | Eggless Pancake | Breakfast Recipe

I have tried pancakes couple of times before and it didn't turns out well.Once i tried with eggs and i couldn't bear the smell of egg in the pancakes and everything ended up in trash, then other time, i tried eggless version and it turned out very dense.After that, i stop making the pancakes.
Last week, after churned the butter, i had left with lot of buttermilk. So i browse through my bookmarks and notes for buttermilk recipe and i found this recipe in my phone notes, may be noted down from some tv shows i guess.By seeing the ingredients, it looks very easy, nothing fancy ingredients is needed. So thought of give it a try,but i didn't keep my hopes high because of my past pancake experience and to my surprise it turned out super spongy and the light sourness in the buttermilk gives great taste and airy texture.

To post it here, again i tried this today.Wow,every time,it came out so good,it's gonna be a keeper recipe and i'm sure i will make this often in future. So try this awesome pancake for this weekend and enjoy with your family.


ButterMilk Pancake

Preparation Time : 5 mins | Cooking Time : 20 minsMakes : 7 or 8 
Recipe Category: Breakfast | Recipe Cuisine: English
Ingredients
All purpose flour/Maida - 1 cup
Buttermilk - 1 cup
Sugar - 1/4 cup
Butter - 2 tbsp
Vanilla extract - 1 tsp
Baking soda -1/2 tsp

Procedure
In a large bowl,add the flour, sugar and baking soda.Whisk well,take the butter and melt it(i microwaved it for 1 min to melt.)Measure the buttermilk and add it in melted butter along with vanilla extract.Pour the buttermilk mixture into the flour , whisk it well until all are incorporated and make sure that there is no lumps.The batter should be pouring consistency as shown below.Heat the tava and grease it with butter lightly, pour the batter(approx 1/4 cup) in the middle,no need to spread the batter.Keep the flame in medium.When the bubble begins to forms in the pancake,flip it carefully.Cook on other side too and remove it on plate.Fluffy and tasty Buttermilk pancakes are ready.Serve it with any of your favorite breakfast syrup.
Notes:
  • Keep the flame in medium always, otherwise it becomes too dark at the bottom.
  • Depends on the flour, you may need extra 1 or 2 tbsp of buttermilk.
  • They are so spongy even after 2 hrs of making.
