Coconut Milk

For all kinds of pineapple drinks, popsicles and ice creams, coconut milk is extensively used for its tropical flavor. It's super refreshing and tastes delicious. So i highly recommend to use coconut milk in this recipe.
Besides you can't use any dairy milk in this popsicle. Because "Raw pineapple contains bromelain, an enzyme that breaks down the protein in dairy milk/milk product, making it bitter when keep it for a longer time".

Here in today's recipe, i have used the can coconut milk which tastes great. But in the past, i made this popsicle with fresh homemade coconut milk. So if you're interested in making this popsicle using fresh homemade coconut milk, go ahead and make sure to taste test for sweetness before freezing because fresh coconut milk usually has less sweet.

Ok, now let's check out on how to make this delicious pineapple popsicle.

Home made Rose milk Popsicle | Rose Milk Popsicle

Rose milk popsicle, a easy & flavorful popsicle made with milk and flavored with rose essence. In my childhood days, I was quite fond of rose milk and in those days, we didn't have rose essence in home at all, so we used to buy this from nearby sweet stalls. Yep, in sweet stalls, they sell rose milk & puffs on summer days.

Still i remember that it would be available around 11 am every day and i would be sold out before 11.30 itself. So we were literally waiting for time to tick 11 am and went there with thooku(silver utensil) to buy rose milk.  And this popsicle is just a frozen version of rose milk, so if you like rose milk, then surely you would love this.

Paal Ice | Milk Popsicle | Popsicle recipe

Paal Ice / Milk Ice, a creamy & delicious popsicle made from the milk. It's one of the popular popsicles around the 90s in Tamilnadu and almost all the ice cream carts would sell these popsicles at that time.

It's so easy to make with just a handful of basic ingredients at your pantry and the taste is simply amazing. So if you're looking for easy popsicles to make this summer, do give this recipe a try.

To be honest, i'm not a big fan of popsicles or ice creams. But occasionally  i do make these popsicles and enjoy it with family. When we were kids , we (me & my bro) both caught cold very easily and frequently too, so our parents strictly omitted popsicles and ice creams for us.

Still today, I'm a little bit worried about getting cold while having ice creams or popsicles and also I never even crave for it so far, so it's not like i missing out on something. Also I think we crave for the food which we grew up eating only.

But ST likes popsicles a lot, particularly this paal ice  and he keeps on talking about it that he had from the ice cream cart(thallu vandi) during his summer holidays. So i made this once or twice in the past. But now ( in 2024) i'm making this frequently at home because i wanna introduce all kinds of foods to my kid :-)

Milk

For the recipe, i have tried both 2% milk and whole milk. Both turned out delicious however using whole milk gives richness to the popsicle. So you can make this popsicle with whatever milk you have or you can use 50:50 of both the milk too.

Flavoring

I personally like the cardamom flavor in this popsicle. But you can make it with vanilla flavor too. If you're using fresh cardamom/crushed cardamom like me, it tends to settle on the bottom of the popsicle so strain the milk mixture once it cooled down before pouring into the mold. It will help to remove the tiny bits of cardamom seeds and make a super smooth popsicle.

Now let's check out on how to make these delicious Paal Ice.

Ingredients
Milk - 1 cup
Sugar - 3 to 4 tbsp
Cardamom(crushed) - 2
Corn flour - 2 tsp

Procedure
In a bowl, add the corn flour and 1 tbsp of milk and mix it well without lumps and set aside until use.
Heat the remaining milk in a large pan, let it comes to boil, keep the flame in simmer for 3 mins, then add the sugar, let the sugar melts completely.
Then add the cardamom and the corn flour mixture, mix it well, within a min, it becomes slightly thick. Switch off the flame and let it cool completely.
In a popsicle mold, pour the milk mixture till the top and close it with the lid.
Let it freeze for minimum 6 to 8 hrs and to remove the popsicle ,keep the popsicle mold under the running water for 2 mins, then remove it,it will easily come out.
That's it , Tasty & creamy Paal Ice is ready.
Notes:
  • Don't add more corn flour than the mentioned quantity, otherwise it will becomes too thick.
  • I have used 3 tbsp of sugar and it's perfect for us.
  • Use full fat milk for better taste.
  • If you don't have popsicle mold, then use any tall glass along with ice cream stick or even small too works.
  • If you don't have ice cream stick, just freeze it in tall glass/small bowl and demold it and serve it in a bowl with spoon.
  • Depends on the size of the mold, the above quantity yields 3 to 4 popsicles.
  • I freeze it overnight but freeze atleast for 6 hrs before serving.
  • Serve it immediately once it's out of freezer
  • You can skip the cardamom too if you want only milk flavor.
