Korean Vegetable Pancake | Vegetable Pancake

Korean Vegetable Pancake, a delicious and easy to make pancake with lots of veggies. It's one of our family favorites so i used to make this often and we love to have it as breakfast or as snacks in the evenings.

Toddler in our house is a huge fan of this pancake. That's main reason for frequent making of this pancakes.

These pancakes are so good on their own and don't need any side dish. However, for adults, any  spicy sauces(like sriracha ) would be a great dip for these pancakes.

Vegetables

For this pancake, i highly recommend to use cabbage, mushrooms, capsicum, sweet potatoes and spring onions without fail.

Cabbage is the key for this pancakes. For the total 3 cups of vegetables, i use 1 to 1 & 1/4 cups of cabbage alone. It gives a nice texture to the pancakes.

Sweet potato gives mild sweetness that makes these pancakes so delicious.

Capsicum and spring onions are mainly for the flavor. Without these, the pancakes would be less flavorful and taste so different.

Mushrooms are for umami flavor . My favorite is brown mushrooms compared to white mushrooms because of its intense flavor.

Flour

For this recipe, you can use mix of all purpose and atta flour and it tastes equally good as made with the all purpose flour alone. However, don't increase the amount of flour. The whole purpose of using flour in this recipe is to hold the vegetables together. So add as needed only.

Ok, now let's check out how to make these delicious Korean style vegetable pancakes.

Sometimes, i like to sprinkle a tsp of white sesame seed on top of the pancakes. It really enhances the flavor. If you like the sesame flavor, you can do that!

Notes:
  • Be a little generous with oil for crispy pancakes.
  • You can make this as small pancakes or as one big pancakes like pizza and then cut into desired shape before serving.
It tastes good even when it cools down completely. So i always make some extra when i make it for breakfast and have it as snacks for that evening.

Strawberry Pancake with Strawberry Sauce | Strawberry Pancakes

Strawberry Pancakes with strawberry sauce is my recent favorite pancakes. One month back, while browsing through pinterest, this pancake recipe caught my attention,as strawberries has been in season for a while, immediately i tried this with little modification in the recipe as suit to our taste and we loved it.The original recipe uses egg, but we both cannot stand egg smell in pancakes, so i used my  eggless buttermilk pancakes  as guidance and make it as eggless, still it's so fluffy and spongy.
This pancakes taste best with strawberry sauce, pour the sauce over the pancakes and let it sit for few mins and allow the pancakes to soak with syrup and then have it. Really yummy on every mouthful. As the sauce has enough sweetness, i have used very less sugar in the pancake batter, but you can add more if you wanted. Ok, now, let's see the recipe.

Strawberry Pancakes

Preparation Time : 10 mins | Cooking Time : 15 minsMakes : 8 or 9
Recipe Category: Breakfast | Recipe Cuisine: American
Ingredients
Strawberry - 1/2 lb
Wheat flour - 1 cup
Butter milk - 1 cup
Milk - 1/2 cup
Baking soda - 1/4 tsp
Baking powder - 1/2 tsp
Salt - 1/8 tsp
Melted butter - 2 tbsp + extra for grease the pan
Sugar - 1 tbsp
Honey -1/4 cup
Water - 2 tbsp

Procedure
First let's make the sauce, in a pan, add roughly chopped strawberries(reserve few tbsp for batter),honey and water and mix it well. Turn on the heat and let it comes to boil, then simmer the sauce for 5-7 mins in medium flame. Switch off the flame. That's it, your strawberry sauce is ready. Now for the batter, add flour, baking soda, baking powder, salt & sugar, give a good mix with whisk, add the butter. Then add the buttermilk & milk and mix it well until the batter is smooth. Add the remaining strawberries and mix well. Heat the pan, grease with butter, pour the batter on the pan, cook on both sides on medium flame or until it becomes golden brown.Stack the pancakes, pour the sauce over it and it's ready to serve.
Notes:
  • I have used whole milk here, but you can used reduced fat milk too.
  • Buttermilk helps to get fluffy pancakes.
  • For additional flavor, you can use cinnamon or vanilla flavor in the batter. But i want strawberries flavor predominantly, so leave as it is.
  • Depends on the flour quality, you can need more or less liquid.

French Crepes | Basic Breakfast Crepes | Breakfast recipe

French Crepes, a thin french styled pancakes made from the flour & egg mixture. The recipe is super simple and also it's the easiest batter making process for the pancakes that i have tried so far.

But making thin pancakes is a bit tricky for the first one or two pancakes. Once you get the knack of pouring and swirling the batter fast, then it's like icing on the cake !!!
And i love this pancake versatility, the crepes can be stuffed with egg & cheese or topped with powdered sugar or drizzle some breakfast syrup on top.

Here in the recipe, i have served the french crepes with simple sugar and breakfast syrup. Without further delay, let's checkout the procedure, before that if you like to know what i have shared on the past 4 days under International Breakfast
Day 1 - Mysore Masala Dosa from India
Day 2 - Mani pittu from Srilanka
Day 3 - Mofo Gasy from Madagascar
Day 4 - Baozi from China
